Tips for success
For the crispiest results, serve the pizza flowers within 10 minutes of baking. If you need to hold them, keep them in a warm oven (200°F / 95°C) for up to 30 minutes. Avoid covering them, as that traps steam and softens the pastry.
To make ahead, assemble the flowers and refrigerate them unbaked for up to 4 hours. Brush with egg wash just before baking.
You can also freeze the unbaked flowers for up to 2 months; bake from frozen, adding 5 to 7 minutes to the baking time.
Variations
- Vegetarian: Omit the sucuk and add sautéed mushrooms or spinach. Squeeze out excess moisture from the vegetables before filling to keep the pastry crisp.
- Spicy Pepperoni: Replace sucuk with pepperoni slices. For extra heat, add a pinch of red pepper flakes or a drizzle of hot honey before serving.
- Mediterranean: Use feta cheese, Kalamata olives, and sun-dried tomatoes instead of mozzarella and sucuk. Add a sprinkle of oregano for a Greek-inspired twist.
- Breakfast: Fill the pastry with cooked breakfast sausage, scrambled eggs, and cheddar cheese. Bake as directed and serve with maple syrup for dipping.

Crispy Puff Pastry Pizza Flowers with Sucuk and Peppers

Ingredients
- 1 package (17.3 oz) thawed puff pastry (2 sheets)
- 4 oz sucuk sausage, thinly sliced
- 1/2 cup sweet peppers, thinly sliced (about 2 small peppers)
- 1 cup shredded mozzarella cheese
- 1 large egg yolk, beaten
Instructions
- On a lightly floured surface, unfold the thawed puff pastry sheets. Using a paring knife, cut short slits into the four corners of each square, cutting toward the center but leaving the middle intact. The cuts should be about 1 1/2 inches long, creating a cross shape in the center.
- Place a few slices of sucuk in the center of each pastry square, then top with sweet peppers and a generous sprinkle of shredded mozzarella. Be careful not to overfill; leave the cut corners free so they can be folded over.
- Fold each corner of the pastry toward the center, overlapping slightly to create a flower shape. Press the edges gently to seal. The filling should be visible in the center, surrounded by the folded pastry petals.
- Arrange the filled pastry flowers on a baking sheet lined with parchment paper. Brush the tops and visible pastry with the beaten egg yolk, being careful not to let it drip onto the baking sheet.
- Bake in a preheated 400°F (200°C) oven for 20 minutes, until the pastry is puffed, deeply golden, and shatteringly crisp. The cheese should be melted and bubbly, and the sucuk should be cooked through.
- Remove the pizza flowers from the oven and let them cool on the baking sheet for 2 to 3 minutes. Serve warm, while the pastry is still crisp and the cheese is molten.
