Before you start

Before starting, ensure the puff pastry is thawed but still cold. If using frozen pastry, transfer it to the refrigerator the night before. Set out the sucuk, peppers, and cheese so they are ready to assemble.

Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper. Have a paring knife, pastry brush, and rolling pin on hand. Work quickly to keep the pastry cold.

Ingredients at a glance (5)
  • 1 package (17.3 oz) thawed puff pastry (2 sheets)
  • 4 oz sucuk sausage, thinly sliced
  • 1/2 cup sweet peppers, thinly sliced (about 2 small peppers)
  • 1 cup shredded mozzarella cheese
  • 1 large egg yolk, beaten

Instructions

Assemble the Flowers

  1. Prepare the Pastry
On a lightly floured surface, unfold the thawed puff pastry sheets. Using a paring knife, cut short slits into the four corners of each square, cutting toward the center but leaving the middle intact. The cuts should be about 1 1/2 inches long, creating a cross shape in the center.
Look for The pastry should have a cross-shaped cut in the center with intact corners.
Tip Keep the pastry cold while working; if it gets too soft, chill it for 10 minutes before filling.
  2. Fill the Center
Place a few slices of sucuk in the center of each pastry square, then top with sweet peppers and a generous sprinkle of shredded mozzarella. Be careful not to overfill; leave the cut corners free so they can be folded over.
Look for The center should be piled with filling, but the corners should be free.
Tip Cut the sucuk slices into small pieces if they are large, so they fit neatly in the center.
  3. Fold the Petals
Fold each corner of the pastry toward the center, overlapping slightly to create a flower shape. Press the edges gently to seal. The filling should be visible in the center, surrounded by the folded pastry petals.
Look for The pastry should look like a flower with four petals overlapping in the center.
Tip If the pastry is too cold to fold easily, let it sit at room temperature for a few minutes.

The pastry squares should be cut with slits in each corner, and the centers filled with sucuk, peppers, and cheese.

The corners are folded over to create a flower shape. The pastry should still be cold and firm, and the filling should be contained within the petals.

Bake to Golden Perfection

  1. Brush with Egg Wash
Arrange the filled pastry flowers on a baking sheet lined with parchment paper. Brush the tops and visible pastry with the beaten egg yolk, being careful not to let it drip onto the baking sheet.
Look for The pastry should be evenly coated with a shiny golden egg wash.
Tip Use a light hand; too much egg wash can pool and prevent browning.
  2. Bake the Flowers
Bake in a preheated 400°F (200°C) oven for 20 minutes, until the pastry is puffed, deeply golden, and shatteringly crisp. The cheese should be melted and bubbly, and the sucuk should be cooked through.
Look for The pastry should be deep golden brown and sound crisp when tapped.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Rotate the baking sheet halfway through for even browning.

The flowers should be puffed and deeply golden, with the pastry layers visibly crisp and flaky. The cheese should be melted and the sucuk cooked. The aroma should be buttery and savory, and the tops should be glossy from the egg wash.

Serve Warm and Crisp

  1. Cool and Serve
Remove the pizza flowers from the oven and let them cool on the baking sheet for 2 to 3 minutes. Serve warm, while the pastry is still crisp and the cheese is molten.
Look for The flowers should be crisp and golden with melted cheese visible in the center.
Tip Serve immediately for the best crunch; they soften as they cool.

The flowers should be cool enough to handle but still warm, with the pastry crisp and the cheese molten. When you break one open, the layers should shatter, and the filling should be hot and flavorful.

Common mistakes

One common mistake is overfilling the pastry, which can cause the filling to spill out and prevent the petals from sealing. Keep the filling modest and leave the corners free.

Another mistake is underbaking; the pastry needs a full 20 minutes to become deeply golden and crisp. If the pastry browns too quickly, loosely tent with foil. Finally, do not skip the egg wash—it gives the pastry a beautiful shine and helps it brown.

How to tell it’s done

The pizza flowers are done when the pastry is puffed, deeply golden, and shatteringly crisp. The cheese should be melted and bubbly, and the sucuk should be cooked through.

To check, insert an instant-read thermometer into the center of a flower; it should register at least 160°F (71°C). The pastry should sound hollow when tapped and easily flake apart.

  • Ground meat: 160°F (71°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
