Tips for success
For the crispiest wraps, make sure the pita is thin and pliable. If the pita is too thick, it will take longer to toast and may become chewy. Use a hot skillet and a little oil or butter to get an even golden crust.
Press down gently with a spatula while toasting to ensure the entire surface makes contact with the pan. The pomegranate molasses should be brushed on just before toasting—doing it too early can make the pita soggy.
To keep the fries crispy inside the wrap, add them just before rolling and do not overfill. The fries should be hot and freshly cooked; leftover fries may become soft. If using store-bought garlic sauce, check the consistency—it should be thick enough to spread without making the pita soggy.
For a more intense pomegranate flavor, drizzle a little extra molasses over the filling before rolling. Serve the wraps immediately after toasting, as they lose their crispness as they cool.
Variations
- Chicken Shawarma: Substitute boneless, skinless chicken thighs for the ribeye. Marinate and cook until the chicken reaches 165°F (74°C). The pomegranate glaze works beautifully with chicken, adding a sweet-tart finish.
- Spicy Harissa Version: Add 1-2 tablespoons of harissa paste to the marinade for a spicy kick. The heat pairs well with the sweet pomegranate molasses and creamy garlic sauce. Adjust the amount to taste.
- Vegetarian Wrap: Replace the beef with grilled halloumi or roasted eggplant slices. Marinate the vegetables in the same spice mixture and sear until charred. The rest of the assembly stays the same.
- Lamb Shawarma: Use thinly sliced leg of lamb instead of ribeye. Lamb pairs exceptionally well with pomegranate and sumac. Cook to 145°F (63°C) and let rest before slicing.
Storage and make-ahead
- Fridge
- Leftover wraps can be stored in an airtight container in the refrigerator for up to 2 days.
- Freezer
- Freeze fully assembled but untoasted wraps in plastic wrap for up to 1 month.
- Reheat
- Reheat leftover wraps in a skillet over medium heat for 2-3 minutes per side, or in a 350°F (175°C) oven for 5-7 minutes, until hot and crisp.
Store leftover wraps in an airtight container in the refrigerator for up to 2 days. The wraps will soften as they sit, so reheat them in a skillet or oven to restore some crispness. Keep the garlic sauce separate if possible, and add it fresh when serving. For best results, assemble and toast the wraps just before eating.
The beef can be marinated up to 24 hours in advance, making this a great make-ahead meal. The sumac onions and garlic sauce can also be prepared a day ahead and refrigerated.
On the day of serving, sear the beef, assemble the wraps, and toast them fresh. The pomegranate molasses glaze can be brushed on just before toasting. This recipe is perfect for meal prep, but the wraps are best enjoyed right after cooking.
Serving ideas
Serve the crispy beef ribeye shawarma wraps hot, straight from the skillet, with extra garlic sauce on the side for dipping. The contrast between the crunchy pita and the creamy sauce is best experienced immediately. Pair with a simple salad of cucumbers and tomatoes, or a bowl of lentil soup, for a complete meal. For a casual dinner, cut each wrap in half and serve with pickles and olives.
These wraps are also great for entertaining—arrange them on a platter with small bowls of extra garlic sauce, sumac onions, and additional pomegranate molasses for guests to customize.
The vibrant colors and glossy glaze make them visually appealing. For a heartier serving, add extra fries inside the wrap or on the side. The wraps are satisfying on their own, but a squeeze of lemon over the top brightens the flavors even more.
