Tips for success
For the best texture, slice the vegetables as thinly as possible—about 3mm is ideal. If you don’t have a mandoline, use a very sharp chef’s knife and take your time.
Uniform slices ensure even cooking and a beautiful presentation. You can also use a food processor with a slicing disc to speed things up.
The caramelized onion-garlic confit can be made in advance and refrigerated for up to a week. If you’re short on time, use a high-quality store-bought version.
For extra flavor, add a pinch of red pepper flakes or a few fresh thyme sprigs to the confit before spreading it in the dish.
Variations
- Eggplant and Pepper Tian: Replace the yellow squash with sliced eggplant and add roasted red bell pepper strips between the layers. Use a Mediterranean seasoning blend with oregano and basil for a different flavor profile.
- Herbed Goat Cheese Tian: Crumble fresh goat cheese over the vegetables before adding the Gruyère-panko topping. Add a sprinkle of fresh thyme and rosemary for an earthy, tangy twist.
- Gluten-Free Tian: Use gluten-free panko breadcrumbs or crushed gluten-free crackers. Ensure the caramelized onion confit is gluten-free, and check the cheese for any additives. This version is safe for those with gluten sensitivity.
- Spicy Sausage Tian: Add cooked, crumbled spicy Italian sausage or chorizo over the onion confit before arranging the vegetables. This turns the tian into a hearty main dish with a kick of heat.

Leftover tian can be stored in an airtight container in the refrigerator for up to 4 days. Reheat in a 350°F (175°C) oven for 10-15 minutes to restore crispness.
The crust may soften slightly upon reheating, but the flavors will remain delicious. Avoid microwaving, as it will make the crust soggy.
Assemble the tian completely (without the basil garnish) up to 24 hours in advance and refrigerate. When ready to bake, add 5-10 minutes to the cooking time to account for the cold dish.
The Gruyère-panko topping can also be prepared ahead and stored in an airtight container for up to 3 days.
Serving ideas
Serve the tian as a vegetarian main course with a crisp green salad and crusty bread. It also works beautifully as a side dish alongside roasted chicken, grilled lamb, or seared fish. The crispy crust and tender vegetables make it a versatile addition to any meal.
For a more substantial meal, pair the tian with a bowl of soup or a grain salad. It can also be served at room temperature, making it a great option for picnics or potlucks. Garnish with additional fresh basil just before serving to keep the color vibrant.

Crispy Parmesan Vegetable Tian with Gruyère Panko Crust

Ingredients
- 150 g caramelized onion-garlic confit
- 1 large Yukon Gold potato, scrubbed
- 1 medium green zucchini
- 1 medium yellow squash
- 2 medium Roma tomatoes
- 80 g Gruyère-panko mixture (shredded Gruyère and panko breadcrumbs)
- 3 tbsp thyme-infused olive oil
- fresh basil leaves, ribboned, for garnish, to taste
Instructions
- Preheat the oven to 400°F (200°C). Spread the caramelized onion-garlic confit evenly over the bottom of a 9-inch round ceramic baking dish. Using a mandoline or a sharp knife, slice the Yukon Gold potato, green zucchini, yellow squash, and Roma tomatoes into very thin 3mm coins. Keep each vegetable separate.
- Starting at the outer edge of the dish, arrange the vegetable slices in an alternating pattern: potato, zucchini, yellow squash, tomato. Overlap the slices slightly and work in a tight spiral toward the center. Continue until the entire surface is covered.
- Sprinkle the Gruyère-panko mixture evenly over the vegetable spiral. Drizzle the thyme-infused olive oil over the top, making sure to reach the edges.
- Place the dish in the preheated oven and bake for 40 minutes, until the vegetable edges are caramelized and the Gruyère-panko topping is golden brown and blistered. Rotate the dish halfway through for even browning.
- Remove the tian from the oven and let it rest for 5 minutes. Sprinkle with fresh basil ribbons. Use a spatula to lift portions onto plates, making sure to include the crispy crust.
