Tips for success
For the crispiest crust, make sure the oil is at the correct temperature before adding the skewers. If the oil is not hot enough, the panko will absorb oil and become soggy.
Use a thermometer to maintain 365°F (185°C) and adjust the heat between batches. Also, let the coated skewers rest for 5 minutes before frying—this helps the coating adhere better and prevents it from falling off in the oil.
When threading the gnocchi balls onto the rosemary, push them gently but firmly so they stay in place during frying. If the rosemary stems are too long, trim them to about 8 inches for easy handling.
To keep the cheese from leaking, make sure the dough is sealed completely around the mozzarella. If you have leftover panko, store it in an airtight container for up to a month.
Variations
- Spicy Honey Dip: Swap the arrabbiata for a spicy honey dip: mix 1/4 cup honey with 1 tablespoon hot sauce and a pinch of red pepper flakes. The sweet-heat combo is amazing with the salty Parmesan crust.
- Herb-Infused Oil: Add a few sprigs of fresh thyme or sage to the oil while frying for an extra layer of herbal flavor. Remove the herbs before adding the skewers to avoid burning.
- Baked Version: For a lighter alternative, bake the skewers at 425°F (220°C) for 12-15 minutes, turning once, until golden and crisp. Brush with olive oil before baking to help them brown.
- Smoky Paprika Coating: Mix 1 teaspoon smoked paprika into the garlic-parmesan panko for a smoky, slightly sweet flavor. This pairs well with a cooling ranch or blue cheese dip.
Storage and make-ahead
- Fridge
- Store leftover fried skewers in an airtight container in the refrigerator for up to 2 days. Reheat in a 350°F (175°C) oven for 5-7 minutes to restore crispness.
- Freezer
- Freeze uncooked skewers on a baking sheet until solid, then transfer to a freezer bag for up to 1 month.
- Reheat
- Reheat fried skewers in a 350°F (175°C) oven for 5-7 minutes until hot and crisp. Avoid microwaving, which makes them soggy.
Leftover fried skewers can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, place them on a baking sheet in a 350°F (175°C) oven for 5-7 minutes, or until heated through and crisp. Avoid microwaving, as it will make the coating soggy.
You can assemble the skewers up to 4 hours ahead and keep them covered in the refrigerator. When ready to serve, heat the oil and fry as directed. The coating may darken slightly, but the flavor will be just as good. If making ahead, let the skewers come to room temperature for 15 minutes before frying to ensure even cooking.
Serving ideas
Serve the skewers hot from the skillet, arranged on a platter with small bowls of warm arrabbiata sauce and basil pesto for dipping. The contrast between the spicy tomato sauce and the creamy pesto is perfect with the crispy, cheesy gnocchi.
Garnish with a few fresh rosemary sprigs for a rustic touch, and provide plenty of napkins—these are meant to be eaten with your hands.
These skewers are ideal for parties, game days, or any gathering where finger food is welcome. They're also great as a fun appetizer before a pasta dinner.
For a more substantial serving, you can double the recipe and fry in batches. The skewers are best enjoyed immediately, while the crust is shatteringly crisp and the cheese is still molten.

Crispy Fried Gnocchi Mozzarella Skewers with Arrabbiata Dip

Ingredients
- 250 g fresh potato gnocchi dough
- 12 mini ciliegine mozzarella balls
- 4 woody rosemary stems, stripped of leaves
- 1 large egg, beaten
- 100 g garlic-parmesan panko
- Olive oil for frying, to taste
- Warm basil pesto, for dipping, to taste
- Spicy arrabbiata sauce, warmed, for dipping, to taste
Instructions
- Divide the gnocchi dough into 12 equal pieces. Flatten each piece into a small disk. Place a mini mozzarella ball in the center and wrap the dough around it, sealing the edges completely to form a ball. Repeat with the remaining dough and mozzarella.
- Thread 3 gnocchi balls onto each rosemary stem, pushing them gently but firmly. The rosemary acts as a flavor-infusing skewer and a natural handle.
- Dip each skewer into the beaten egg, turning to coat all sides. Then roll in the garlic-parmesan panko, pressing gently so the crumbs adhere. Set the coated skewers on a plate while you heat the oil.
- Pour olive oil into a large skillet to a depth of 2 cm (about 3/4 inch). Heat over medium-high until it reaches 365°F (185°C) on a kitchen thermometer.
- Carefully place 2 skewers in the hot oil. Fry for 2.5 minutes per side, turning once, until the coating is deeply blistered and golden brown. The internal temperature of the egg wash should reach 160°F (71°C) to ensure the egg is fully cooked.
- Use tongs to transfer the fried skewers to a paper-towel-lined plate to drain excess oil. Serve immediately with warm basil pesto and spicy arrabbiata sauce for dipping.
