Tips for success

For the crispiest crust, use freshly shredded Parmesan and avoid pre-shredded bags that contain anti-caking agents. Spread the Parmesan in an even, thin layer, leaving small gaps so it becomes lacy.

Let the cheese melt and bubble for a few seconds before placing the tortilla on top. Press gently with a spatula to ensure full contact.

If the quesadilla browns too quickly, lower the heat slightly. The goal is a deep golden crust, not a burnt one.

Letting the quesadilla rest for a minute after cooking helps the cheese set and makes slicing cleaner. Use a serrated knife for the best cut through the crisp crust.

Variations

  • Vegetarian version: Omit the chorizo and add sautéed bell peppers, onions, and black beans. Use the same cheese and avocado for a hearty, meatless breakfast quesadilla.
  • Spicy kick: Add sliced jalapeños or a drizzle of hot sauce to the filling. Use pepper jack cheese instead of Oaxaca for extra heat.
  • Breakfast burrito style: Roll the filled tortilla into a burrito shape before crisping. Cook seam-side down first, then roll to crisp all sides.
  • Use corn tortillas: Swap flour tortillas for corn tortillas. They will be smaller and crispier, but handle them gently to avoid breaking. Adjust the filling amount accordingly.

The chorizo eggs can be scrambled ahead and refrigerated for up to 2 days. Shred the cheeses and slice the avocado just before assembling.

The quesadillas are best cooked fresh, but you can assemble them and refrigerate for a few hours before cooking.

Serving ideas

Serve the quesadilla wedges hot with smoky salsa verde for dipping. The salsa adds a bright, tangy contrast to the rich cheese and eggs. A side of fresh fruit or a simple green salad rounds out the meal.

For a heartier breakfast, serve with refried beans or a dollop of sour cream.

The quesadilla also works well for brunch, cut into smaller wedges as an appetizer. Pair with a cold glass of orange juice or a spicy Bloody Mary.

Frequently asked questions

Can this quesadilla be made ahead and reheated?
Yes, the quesadilla can be assembled and refrigerated for a few hours before cooking. Cooked quesadillas can be stored in the refrigerator for up to 3 days and reheated in a skillet to restore crispness. Avoid microwaving, as it makes the crust soggy.
What is the best cheese for the crispy crust?
Parmesan is the best choice for the crust because it crisps and browns well. Other hard cheeses like Pecorino Romano can also work. Avoid using soft cheeses like mozzarella for the crust, as they will not become crispy.
Can this recipe be made without chorizo?
Yes, omit the chorizo or substitute with cooked bacon, ham, or sautéed vegetables. The eggs and cheese will still make a delicious quesadilla. Adjust the amount of filling to your preference.
Why does the Parmesan crust sometimes stick to the pan?
The Parmesan may stick if the pan is not hot enough or if the cheese is not fully melted before flipping. Ensure the skillet is heated to medium and let the cheese bubble for a few seconds before placing the tortilla. Use a spatula to gently loosen the edges before flipping.
Can this recipe be made gluten-free?
Use gluten-free flour tortillas or corn tortillas to make the quesadilla gluten-free. Check that the chorizo and salsa verde are gluten-free as well. The rest of the ingredients are naturally gluten-free.

Crispy Cheese Chorizo Breakfast Quesadilla

Prep 10 minCook 12 minTotal 22 minServes 2
A crispy, golden-brown Parmesan-crusted quesadilla being pulled apart to reveal a gooey, cheesy interior.

Ingredients

  • 2 large eggs
  • 60 g cooked spicy pork chorizo
  • 45 g shredded Parmesan cheese
  • 2 flour tortillas (8-inch)
  • 50 g Oaxaca cheese, shredded
  • 1 avocado, sliced
  • Smoky salsa verde, for serving

Instructions

  1. Crack the eggs into a bowl and whisk until the yolks and whites are fully blended. Heat a small nonstick skillet over medium-low heat and add the cooked chorizo. Warm the chorizo for 1 minute, then pour in the eggs. Stir gently with a spatula, pushing the curds as they form, until the eggs are softly set but still moist and creamy. Remove from heat immediately.
  2. Shred the Oaxaca cheese if not already shredded. Slice the avocado into thin wedges. Set both aside near the stove so they are ready when assembling.
  3. Heat a large cast-iron skillet or comal over medium heat until a drop of water sizzles and evaporates. Sprinkle half of the shredded Parmesan evenly over the skillet in a thin, lacy layer about the size of a tortilla. Let it melt and bubble for about 30 seconds until golden at the edges.
  4. Place one flour tortilla directly over the sizzling Parmesan. Press gently with a spatula so the tortilla adheres to the melting cheese. Let it cook for about 30 seconds until the cheese sticks and starts to crisp.
  5. Spoon half of the chorizo eggs onto one half of the tortilla. Sprinkle with half of the Oaxaca cheese and lay avocado slices on top. Fold the other half of the tortilla over the filling, pressing gently.
  6. Cook the folded quesadilla for 2 minutes per side, pressing occasionally with the spatula. The Parmesan crust should turn deep golden and lacy. Flip carefully with a wide spatula to keep the filling inside.
  7. Cook the second side for 2 minutes, pressing gently, until the exterior is golden and crunchy. The cheese crust should be lacy and firm to the touch. Transfer to a cutting board and let rest for 1 minute.
  8. Repeat the process with the remaining Parmesan, tortilla, chorizo eggs, Oaxaca cheese, and avocado. Keep the first quesadilla warm on a baking sheet in a low oven if desired.
  9. Slice each quesadilla into wedges with a sharp knife. Serve immediately with smoky salsa verde on the side for dipping.
