Tips for success
For the crispiest panko crust, make sure the griddle is hot enough before adding the tacos. A drop of water should sizzle and evaporate immediately.
Press down on the tacos with a spatula during the first minute of cooking to ensure even contact with the pan. Let the tacos cook undisturbed for the full 3 minutes to allow the crust to form properly.
If making a larger batch, keep cooked tacos warm in a 200°F oven while cooking the rest. But be aware that they may lose some crispness. For the best texture, serve immediately after assembling.
The Caesar salad can be prepared ahead and stored in the refrigerator, but toss it with the dressing just before serving to keep the lettuce crisp.
Variations
- Spicy Chipotle: Add 1 teaspoon of chipotle powder or a minced chipotle pepper in adobo to the ground chicken mixture. Top with a drizzle of chipotle crema and sliced jalapeños for extra heat.
- Buffalo Ranch: Toss the cooked chicken tacos in a mixture of melted butter and hot sauce. Replace the Caesar dressing with ranch dressing and add crumbled blue cheese on top.
- Avocado Bacon: Top each taco with sliced avocado, crispy bacon bits, and a squeeze of lime. Omit the parmesan and use a creamy avocado dressing instead of Caesar.
- Greek Style: Use ground lamb instead of chicken. Replace Caesar dressing with tzatziki sauce, and top with crumbled feta, sliced cucumbers, and fresh dill.
Storage and make-ahead
- Fridge
- Store leftover tacos in an airtight container in the fridge for up to 2 days. Keep the salad separate to prevent sogginess.
- Freezer
- Freeze uncooked assembled tacos on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat cooked tacos in a 350°F oven for 5-7 minutes until hot and crispy. Avoid microwaving as it makes the tortillas soggy.
Leftover tacos can be stored in an airtight container in the refrigerator for up to 2 days. To reheat, place them on a baking sheet and warm in a 350°F oven for 5-7 minutes, or until heated through and crispy.
The salad is best eaten fresh but can be stored separately and tossed again with a little extra dressing if needed.
The chicken mixture can be prepared up to a day ahead and kept in the refrigerator. Press the chicken onto the tortillas and coat with panko, then cover and refrigerate for up to 4 hours before cooking.
The Caesar salad can be washed and shredded a day ahead, stored in a sealed container with a paper towel. Toss with dressing just before serving.

Crispy Panko Chicken Caesar Smash Tacos

Ingredients
- 1 lb ground chicken
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1 cup panko breadcrumbs
- 8 mini flour tortillas (6-inch)
- 2 tbsp butter, softened
- 3 cups shredded romaine lettuce
- 1/2 cup Caesar dressing
- 1/2 cup shaved parmesan cheese
Instructions
- In a bowl, combine the ground chicken, salt, pepper, and garlic powder. Mix gently until just combined. Divide the mixture into 8 equal portions and roll each into a ball. Place the panko breadcrumbs in a shallow dish.
- Press each chicken ball onto a mini tortilla, flattening it into an even layer that covers the tortilla. Press the panko breadcrumbs into the exposed surface of the chicken, ensuring full coverage.
- Heat a large skillet or griddle over medium-high heat. Add the butter and let it melt, spreading it across the cooking surface.
- Place the tortillas chicken-side down onto the hot griddle. Cook for 3 minutes without moving, until the panko is deep golden brown and crispy. Use a spatula to press down gently during the first minute.
- Flip each taco so the tortilla side is down. Cook for 2-3 minutes until the tortilla is crisp and golden, and the chicken reaches an internal temperature of 165°F (74°C).
- In a large bowl, combine the shredded romaine, Caesar dressing, and half of the shaved parmesan. Toss until the lettuce is evenly coated.
- Pile the Caesar salad high onto each hot crispy taco. Sprinkle with the remaining shaved parmesan. Serve immediately.
