Tips for success
For the crispiest tacos, brush the tortillas generously with oil on both sides. This helps them brown and crisp up evenly. If you have time, let the assembled tacos sit for 5 minutes before baking to allow the tortillas to slightly dry out, which enhances crispiness.
To keep the filling from making the tortillas soggy, make sure the chicken mixture is thick and not too saucy. If it seems runny, cook it a bit longer to evaporate excess moisture.
Also, avoid overfilling the tacos. A light hand with the filling ensures the tacos hold together and bake up perfectly crisp.
Variations
- Spicy Chorizo Tacos: Swap the chicken for 1 pound of fresh chorizo, cooked and crumbled. Omit the Cajun seasoning and reduce the smoked paprika to 1 teaspoon. Proceed with the rest of the recipe as written.
- Vegetarian Black Bean Tacos: Replace the chicken with 1 can (15 oz) of black beans, drained and rinsed. Sauté the beans with the spices and vegetables, then stir in the cream cheese. Bake as directed.
- Chipotle Chicken Tacos: Add 1-2 teaspoons of chipotle powder or adobo sauce to the chicken mixture for a smoky, spicy kick. Reduce the Cajun seasoning to 1 teaspoon to balance the heat.
- Breakfast Tacos: Use leftover cooked chicken and add scrambled eggs to the filling. Omit the crema and serve with salsa or hot sauce. Bake as directed for a hearty breakfast.
