Before you start

Before beginning the assembly, ensure the puff pastry is properly thawed in the refrigerator, as this prevents it from becoming sticky or tearing. Prepare the baking sheet with parchment paper to avoid sticking.

Have all ingredients measured and ready, and preheat the oven to the required temperature to ensure the pastry rises correctly as soon as it hits the heat.

Ingredients at a glance (4)
  • 1 package store-bought puff pastry, thawed
  • 1 lb ground beef
  • 2 cups shredded cheddar and mozzarella cheese blend
  • fresh parsley, chopped, for serving

Instructions

Browning the meat

  1. Prepare the beef filling
Heat a skillet over medium-high heat. Add the ground beef and cook until fully browned and no longer pink. Ensure the beef reaches an internal temperature of 160°F (71°C). Drain any excess grease from the pan and set the meat aside to cool slightly before assembling.
Look for The beef should be browned and crumbly without any pink remaining.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Use a meat thermometer to verify the temperature for safety.

The ground beef should be fully browned, crumbly, and aromatic. All moisture from the meat should have evaporated, leaving a concentrated savory flavor. Ensure no pink remains in the center of the meat particles, and drain any excess fat to maintain the crispness of the final pastry shell.

Assembling the pockets

  1. Assemble the pastries
Preheat your oven to 400°F (200°C). Roll out the thawed puff pastry on a clean surface. Cut the dough into equal squares. Place a spoonful of the cooked ground beef in the center of each square, followed by a generous portion of the shredded cheese blend. Fold the dough over the filling to create a pocket and seal the edges tightly with a fork.
Look for The edges should be firmly crimped to prevent the filling from leaking.
Tip Keep the pastry cold until you are ready to bake for maximum puffiness.

Each pastry square should be neatly sealed with a fork, creating a robust pocket that holds the filling securely. The dough should look uniform, and the cheese should be evenly distributed on top of the beef. Check that the pastry has not become too soft or warm to the touch before moving to the oven.

Baking until golden

  1. Bake and garnish
Place the prepared pastries on a parchment-lined baking sheet. Bake in the preheated oven for 15 to 20 minutes, or until the pastries are golden brown and puffed. Remove from the oven and immediately sprinkle with fresh chopped parsley. Let the pastries rest for 5 minutes before serving to allow the cheese to set slightly.
Look for Pastries are done when they are deep golden brown and flaky.
Tip Serve warm to enjoy the best stretch of the melted cheese.

The pastries should be puffed and display a rich, golden-brown crust. They should sound hollow when gently tapped and feel firm.

The cheese inside should be fully melted, and the parsley garnish should look fresh and vibrant against the deep color of the baked pastry, indicating they are ready to be served.

Common mistakes

Avoid overfilling the pastry squares, as this can cause the dough to burst during baking and lead to leaks. Do not skip the resting time, as the filling will be extremely hot and the cheese needs a few minutes to stabilize for the best texture.

Finally, ensure the edges are crimped very securely with a fork, as an incomplete seal is the primary reason for filling leakage in the oven.

How to tell it’s done

The pastries are done when they exhibit a uniform, deep golden-brown color across the top and sides. The puff pastry should appear layered and crisp to the touch.

The internal temperature of the ground beef should reach 160°F (71°C) to ensure it is cooked through safely. The cheese should be bubbly and melted, providing a visible stretch when a pastry is pulled apart with a fork.

  • Ground meat: 160°F (71°C) in the thickest part
