Tips for success

To achieve the best results, keep your batter very cold. Using ice-cold water when mixing your tempura batter creates a greater temperature contrast with the hot oil, which leads to a lighter, crispier coating.

You can even place your bowl of batter inside a larger bowl filled with ice to keep it chilled while you work through batches of frying.

For those who enjoy extra flavor, consider adding a pinch of toasted sesame seeds or a dash of black pepper to the noodle filling. While the classic version is simple, these small additions can enhance the aromatic profile of the dish.

Remember to always serve the dipping sauce on the side rather than coating the rolls in advance, as this preserves the crunch of the tempura for as long as possible.

Variations

  • Vegetable Crunch: Add finely julienned carrots or spinach to the noodle filling for extra color and texture. Ensure the vegetables are sautéed until dry before mixing to maintain the integrity of the roll.
  • Spicy Kick: Incorporate a teaspoon of gochugaru or finely minced fresh chili into the noodle mixture for a subtle heat that permeates the roll from the inside out.

Storage and make-ahead

Fridge
Store in an airtight container for up to 2 days. Reheat to regain some crispness.
Freezer
Not recommended, as the texture of the glass noodles and the tempura coating will not hold up well.
Reheat
Reheat in an oven or air fryer at 350°F for 5-7 minutes until heated through and crisp.

If you have leftovers, allow them to cool completely on a wire rack before storing them. Place them in an airtight container in the refrigerator for up to two days. Note that the crispy texture will diminish over time as the moisture from the noodles migrates to the batter, so they are best enjoyed as soon as possible after cooking.

You can prepare the noodle filling and roll the seaweed sheets several hours in advance. Keep the prepared rolls covered in the refrigerator until you are ready to fry. However, do not dip them in the batter until the very last second before they hit the oil, as the batter will soften the nori if left to sit for too long.

Serving ideas

Serve these rolls as a hot appetizer, arranged neatly on a platter with the spicy tteokbokki sauce served in a small bowl on the side.

The contrast between the hot, crunchy roll and the spicy, savory sauce is the highlight of the dish. Providing kitchen shears for guests to cut their own rolls adds an authentic touch to the dining experience.

These rolls are versatile and can be served alongside other Korean side dishes like kimchi or pickled vegetables to create a balanced spread.

Because they are fried, they pair exceptionally well with refreshing drinks or a simple soup. Ensure that everyone has a small plate for dipping to avoid any mess, as the sauce is meant to be applied generously to every bite.

Frequently asked questions

Can the rolls be prepared in an air fryer?
Yes, you can air fry the rolls at 375°F for about 8 to 10 minutes, turning halfway through. While they may not achieve the exact same depth of flavor as deep-frying, they will still become quite crispy and are a great alternative for a less oily finish.
Why is the nori becoming soggy?
Soggy nori is usually caused by using noodles that are too warm or contain excess moisture. Ensure the noodles are completely drained and cooled to room temperature before rolling. Also, avoid dipping the rolls in the batter until the oil is fully heated and you are ready to fry immediately.
What if the batter slides off the roll?
If the batter is too thin, it will not adhere to the seaweed. Try dusting the rolls with a very light coating of dry rice flour before dipping them into the batter. This creates a dry surface that helps the batter grip the seaweed roll more effectively.

Ingredients

  • 200 g sweet potato glass noodles, boiled
  • 15 ml soy sauce
  • 10 ml sesame oil
  • 1 tbsp garlic chives, chopped
  • 6 sheets roasted nori sheets
  • 1 cup rice flour tempura batter
  • 4 cups frying oil
  • tteokbokki sauce, for serving

Instructions

  1. In a large mixing bowl, combine the boiled sweet potato glass noodles with the soy sauce, sesame oil, and chopped garlic chives. Toss everything together thoroughly until the noodles are evenly coated and well-seasoned.
  2. Place a portion of the seasoned glass noodles onto each roasted nori sheet. Roll the seaweed tightly around the noodles to create a secure, compact cylinder. Repeat this process until all noodle mixture is used.
  3. Heat the frying oil in a deep pot to 370°F. Carefully dip each seaweed roll into the rice flour tempura batter, ensuring it is lightly and evenly coated. Carefully place the rolls into the hot oil.
  4. Fry the rolls for 3 minutes until the exterior is perfectly blistered and golden-crisp. Remove the rolls from the oil using tongs and place them on a wire rack to drain excess oil. Cut with kitchen shears and serve with spicy tteokbokki sauce.
