Tips for success
For an even crispier crust, double-coat the skewers: dip in the batter, then in panko, then dip again in batter and panko a second time. This creates a thicker, more substantial crust that stays crunchy even after cooling.
Make sure the oil is at the correct temperature before frying; if it's too hot, the outside will burn before the inside cooks, and if it's too cool, the corn dogs will absorb oil and become greasy.
When rolling the corn dogs in sugar, use granulated sugar for a fine, even coating. You can also mix the sugar with a pinch of cinnamon for a different flavor profile.
Serve the corn dogs immediately after frying for the best texture. If you have leftovers, reheat them in an air fryer or oven to restore the crunch, rather than microwaving, which will make them soggy.
Variations
- Spicy Gochujang: Add a spoonful of gochujang (Korean chili paste) to the batter for a spicy kick. Or, drizzle the finished corn dogs with a mixture of gochujang, honey, and a little vinegar for a sweet-spicy glaze.
- Cheese-Only: Omit the hot dog and use a full block of mozzarella on each skewer for a vegetarian version. Increase the mozzarella to 8 blocks total, and adjust the frying time slightly to ensure the cheese is fully melted.
- Potato-Crusted: Instead of panko, coat the battered skewers in small cubes of potato (about 1/4 inch) for a crunchy, golden exterior. Fry as directed, but allow an extra minute or two for the potatoes to become tender and golden.
- Ramen-Crusted: Crush instant ramen noodles (uncooked) into coarse crumbs and use them in place of panko for a uniquely crunchy, savory crust. Discard the seasoning packet or use a pinch for extra flavor.
Storage and make-ahead

- Reheat
- Reheat cooked corn dogs in a 350°F (175°C) oven for 5-7 minutes, or in an air fryer at 375°F (190°C) for 3-4 minutes, until hot and crispy.
Store leftover corn dogs in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet and warm in a 350°F (175°C) oven for 5-7 minutes, or until heated through and crispy. Avoid microwaving as it will make the crust soft.
You can prepare the skewers and coat them with batter and panko up to a day in advance. Keep them in the refrigerator, covered, until ready to fry. The batter can also be made a few hours ahead and kept chilled. Allow the batter to come to room temperature before using.

Crispy Korean Corn Dogs with Mozzarella Pull and Sugar Crust

Ingredients
- 4 thick beef hot dogs, halved
- 4 blocks low-moisture whole mozzarella
- 4 wooden skewers
- 200 g all-purpose flour
- 30 g sugar
- 1 tsp active dry yeast
- 150 ml warm water
- 100 g panko breadcrumbs
- oil for frying, to taste
- granulated sugar for dusting, to taste
- yellow mustard, for serving
- ketchup, for serving
Instructions
- Cut the hot dogs in half crosswise. Cut the mozzarella into thick blocks, about the same length as the hot dog halves. Thread one piece of hot dog and one block of mozzarella onto each wooden skewer, pushing them together. In a mixing bowl, combine the flour, sugar, and yeast. Gradually whisk in the warm water until a thick, smooth batter forms. Let the batter rest for 5 minutes.
- Dip each skewer into the batter, turning to coat all sides evenly. Let any excess batter drip off. Roll the battered skewers in the panko breadcrumbs, pressing gently so the crumbs adhere all over. Place the coated skewers on a plate while coating the rest.
- Pour enough oil into a large pot or deep fryer to reach a depth of about 2 inches. Heat the oil to 350°F (175°C) over medium-high heat. Use a deep-fry thermometer to monitor the temperature.
- Carefully lower each coated skewer into the hot oil. Fry for about 4 minutes, turning occasionally, until deeply golden brown and crispy all over. Drain on a wire rack. The hot dog and mozzarella should be cooked through. Let it rest for 3 minutes before slicing.
- While the corn dogs are still hot, roll each one in a plate of granulated sugar, turning to coat the entire surface. The sugar will stick to the hot, crispy crust.
- Drizzle the sugar-coated corn dogs with yellow mustard and ketchup in a zigzag pattern. Serve hot, while the cheese is still melty and the crust is crisp.
