Tips for success
For an extra layer of flavor, consider adding a pinch of smoked paprika to the potato mixture. This enhances the smoky notes of the bacon and roasted jalapenos. If you prefer a spicier bite, leave the seeds and membranes in the jalapenos when dicing them, but be aware that this significantly increases the heat level of the final appetizer.
If you find that the edges of the potato nests are browning too quickly during the first bake, you can loosely tent the muffin tin with aluminum foil.
This allows the centers to cook through and the structure to set without risking the delicate edges burning. Always remove the foil for the final few minutes of baking to ensure the crust remains perfectly crisp and golden.
Variations
- Vegetarian Version: Omit the bacon entirely and replace it with finely diced roasted bell peppers or sun-dried tomatoes. This adds a sweet, savory depth that complements the sharp cheddar and spicy jalapenos without the need for meat.
- Extra Spicy Nests: Add a teaspoon of cayenne pepper or hot sauce into the cream cheese filling. You can also increase the number of roasted jalapenos to four for a more intense heat that persists through the cheesy center.
Storage and make-ahead
- Fridge
- Keep leftovers in an airtight container for up to 3 days in the refrigerator.
- Freezer
- Freezing is not recommended as the potato texture will become soft and lose its crispness upon thawing.
- Reheat
- Reheat in a 350°F oven for 8-10 minutes until crisp and heated through.
Store any leftover nests in an airtight container in the refrigerator for up to three days. To maintain the best texture, separate layers with parchment paper to prevent them from becoming soft.
Avoid storing them in a plastic bag, as this will trap moisture and cause the crispy potato shell to become limp. It is best to consume them within the first twenty-four hours for the optimal crunch.
You can prepare the potato nests and the cheese filling separately up to one day in advance. Store the grated, squeezed potatoes in a bowl covered with a damp paper towel in the fridge, and keep the cheese mixture in a sealed container.
Assemble and bake the nests fresh when needed, as the potatoes will lose their crispness if baked too far in advance and reheated multiple times.
Serving ideas
Serve these nests warm, ideally within minutes of coming out of the oven. The contrast between the hot, molten cheese and the crispy potato crust is the highlight of this dish. Arrange them on a platter with the pickled jalapeno and fresh cilantro already applied so they are ready for guests to pick up and enjoy immediately.
These nests work exceptionally well alongside other finger foods. Because they are rich and savory, pairing them with a light, acidic side, such as a fresh radish salad or a simple cucumber slaw, can help balance the intensity of the jalapeno popper flavors.
Ensure you have plenty of napkins available, as the cheesy filling can be quite decadent when taken in a single bite.

Crispy Jalapeno Popper Stuffed Hashbrown Nests

Ingredients
- 500 g Russet potatoes, grated and squeezed dry
- 1 egg
- 30 g melted butter
- 1 tsp garlic powder
- 150 g cream cheese, softened
- 100 g sharp cheddar cheese, shredded
- 2 roasted jalapenos, diced
- 60 g cooked bacon, diced
- 1/4 cup pickled jalapeno and cilantro, for serving
Instructions
- Preheat the oven to 425°F (220°C). Grate the potatoes using a box grater and squeeze them thoroughly with a kitchen towel to remove all excess moisture. In a mixing bowl, toss the grated potatoes with the egg, melted butter, and garlic powder until well combined. Grease a 12-cup muffin tin and press the potato mixture firmly into the bottom and up the sides of each cup to create a nest shape.
- Place the muffin tin in the oven and bake the potato nests for 20 minutes until they are golden-brown and rigid. While the nests are baking, whip the cream cheese in a bowl until smooth. Fold in the shredded cheddar, diced roasted jalapenos, and cooked bacon until the mixture is uniform. Remove the muffin tin from the oven and carefully spoon the jalapeno-cream cheese filling into each hot potato nest.
- Return the filled potato nests to the oven and bake for an additional 8 minutes, or until the cheese filling is hot and bubbling. Ensure the internal temperature of the egg-containing potato mixture reaches 160°F (71°C) to ensure it is cooked through. Remove from the oven and carefully pop the nests out of the tin. Top each nest with a slice of pickled jalapeno and fresh cilantro before serving immediately while hot and crispy.
