Tips for success
To achieve an exceptionally shiny and deeply golden crust, you can substitute the olive oil brush with an egg wash made from one egg beaten with a tablespoon of water. This creates a beautiful bakery-style sheen on the finished bread.
Additionally, always make sure to dry any excess moisture from your deli meats by patting them gently with a paper towel before layering them onto the dough, which helps keep the interior flaky.
For an extra layer of flavor, consider spreading a very thin layer of basil pesto or a sprinkle of Italian seasoning directly onto the dough before adding the cheese and meats.
However, avoid using pizza sauce or marinara inside the roll itself, as the high moisture content will prevent the dough from baking properly. Instead, always serve the warm dipping sauce on the side for the perfect contrast.
Variations
- Three-Cheese Vegetarian: Swap the meats for a mixture of provolone, mozzarella, and parmesan cheese, layered with sautéed spinach and roasted red peppers.
- Spicy Italian: Use spicy capicola, hot salami, and pepper jack cheese, adding a few sliced banana peppers for an extra kick of heat.
- Chicken Bacon Ranch: Replace the Italian cold cuts with cooked shredded chicken, crispy crumbled bacon, mozzarella, and a light drizzle of ranch dressing.
Storage and make-ahead
- Fridge
- Store wrapped leftovers in an airtight container in the refrigerator for up to 4 days.
- Freezer
- Freeze fully baked and cooled slices wrapped in foil and placed in a freezer bag for up to 3 months.
- Reheat
- Reheat slices on a baking sheet in a 350°F (175°C) oven for 10 to 12 minutes until the crust is crisp and the cheese is melted.
Let the leftover stromboli cool completely at room temperature for no more than two hours to ensure food safety. Wrap the cooled roll tightly in aluminum foil or plastic wrap, or place the individual slices in an airtight container. Store the wrapped leftovers in the refrigerator to keep them fresh and prevent the crust from absorbing excess ambient moisture.
You can assemble the stromboli up to twenty-four hours in advance. Roll, fill, and wrap the unbaked log tightly in plastic wrap, then store it in the refrigerator. When ready to bake, let the roll sit at room temperature for about twenty minutes, brush with olive oil, score the top, and bake as directed, adding five extra minutes to the baking time if needed.
Serving ideas
Serve the sliced stromboli warm on a large wooden cutting board to showcase the beautiful spiral layers of melted cheese and savory meats.
Accompany the dish with a bowl of warm marinara sauce or garlic butter for dipping, which complements the rich flavors of the Italian cold cuts perfectly. A simple green salad with a bright vinaigrette makes an excellent side dish to balance the richness.
This dish is highly versatile and works wonderfully as a casual appetizer or a hearty main course. For parties, slice the stromboli into thinner, bite-sized rounds and arrange them around a central dipping bowl.
Keep the slices warm by serving them on a heated platter, ensuring the cheese remains soft and stretchy for your guests to enjoy throughout the gathering.

Crispy Homemade Italian Stromboli with Molten Mozzarella

Ingredients
- 1 lb store-bought pizza dough, at room temperature
- 2 tbsp all-purpose flour, for dusting
- 2 cups shredded low-moisture mozzarella cheese
- 4 oz sliced Genoa salami
- 4 oz sliced pepperoni
- 4 oz sliced deli ham
- 1 tbsp olive oil
- 1/2 tsp dried oregano
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper. Dust a clean work surface with the all-purpose flour. Use a rolling pin to roll the room-temperature pizza dough into a large rectangle, measuring approximately 10 by 14 inches, keeping the thickness as even as possible.
- Spread half of the shredded mozzarella cheese evenly over the rolled dough, leaving a 1-inch border along all sides. Layer the sliced Genoa salami, sliced pepperoni, and sliced deli ham over the cheese in overlapping layers. Sprinkle the remaining mozzarella cheese evenly over the top of the meat layers.
- Starting from one of the long sides, carefully roll the dough tightly into a log, pinching the seam firmly at the end to seal it. Fold the short ends underneath the roll and pinch them closed to prevent any cheese from leaking out. Carefully transfer the rolled log, seam-side down, onto the prepared baking sheet.
- Use a pastry brush to coat the entire surface of the rolled dough with olive oil. Sprinkle the dried oregano evenly over the top. Using a sharp serrated knife, cut three or four diagonal slits across the top of the dough to allow steam to escape during the baking process.
- Bake in the preheated oven at 400°F (200°C) for 20 to 25 minutes. Watch for the crust to turn a deep golden-brown color and check that the cheese is bubbling slightly through the cut slits. Remove the baking sheet from the oven and transfer the stromboli to a wire rack.
- Let the baked stromboli rest on the wire rack for 10 minutes before slicing. Use a sharp serrated knife to cut the roll into 1-inch thick slices. Serve warm while the cheese is beautifully melted and stretchy, revealing the savory layers of meat inside.
