Tips for success
For the crispiest crust, let the coated tenders rest on a wire rack for 5 to 10 minutes before frying. This allows the flour to hydrate slightly and adhere better.
Also, fry in small batches and return the oil to 350°F (175°C) between batches. Use tongs to turn the tenders gently, avoiding tearing the coating.
The sauce can be customized: add a pinch of cayenne for heat, a splash of hot sauce for tang, or a teaspoon of pickle juice for extra brightness.
If the sauce thickens after chilling, stir in a teaspoon of water or buttermilk to loosen it. The sauce keeps well in the refrigerator for up to a week.
Variations
- Spicy Version: Add 1 teaspoon cayenne pepper to the flour coating and 1/2 teaspoon to the marinade for a fiery kick. Serve with a cooling ranch or blue cheese dressing.
- Gluten-Free: Substitute the all-purpose flour with a 1:1 gluten-free flour blend and use gluten-free Worcestershire sauce. Ensure the cornstarch is certified gluten-free if needed.
- Air Fryer Method: After dredging, spray the tenders with oil and air fry at 400°F (200°C) for 12-15 minutes, flipping halfway, until golden and cooked through.
- Honey Mustard Twist: Swap the Cane's sauce for a honey mustard made with 1/2 cup mayonnaise, 2 tablespoons honey, 2 tablespoons Dijon mustard, and a splash of vinegar.
Storage and make-ahead
- Fridge
- Store leftover fried chicken in the refrigerator for up to 3 days. Keep the sauce separate. Reheat in a 400°F oven for 5-7 minutes to restore crispness.
- Freezer
- Freeze fried chicken fingers in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat leftover chicken fingers in a 400°F (200°C) oven on a wire rack for 5-7 minutes until hot and crisp. Avoid microwaving, as it makes the coating soggy.
Store leftover chicken fingers in an airtight container in the refrigerator for up to 3 days. To keep the coating crisp, place a paper towel in the container to absorb moisture. The sauce can be stored separately in a jar for up to a week.
The chicken can be marinated up to 8 hours ahead. The dry coating and sauce can also be prepared a day in advance. For best results, fry the chicken just before serving. If making ahead for a party, fry the tenders, let them cool completely, and reheat in a 400°F (200°C) oven for 5-7 minutes.
Serving ideas
Serve these chicken fingers hot with the copycat Cane's sauce for dipping. They pair perfectly with crinkle-cut fries, coleslaw, and Texas toast.
For a lighter meal, serve over a green salad or with roasted vegetables. The sauce is also great on burgers, sandwiches, or as a dip for fries.
For a fun family dinner, set up a dipping station with the Cane's sauce, honey mustard, and barbecue sauce.
These tenders are also excellent sliced on top of a Caesar salad or wrapped in a tortilla with lettuce and tomato. The crispy coating stays crunchy even when sliced, making them versatile for leftovers.

- 2 cups buttermilk
- 2 tbsp garlic powder
- 1 tbsp black pepper
- 1 tbsp smoked paprika

- 2 cups all-purpose flour
- 3 tbsp cornstarch
- 1 tbsp garlic powder
- 1 tbsp paprika
- 1 cup mayonnaise
- 4 tbsp ketchup
- 2 tsp Worcestershire sauce
- 1/2 tsp black pepper
Instructions
- In a large bowl, whisk together the buttermilk, garlic powder, black pepper, smoked paprika, and salt. Add the chicken tenders and turn to coat completely. Cover and refrigerate for at least 2 hours, or up to 8 hours.
- In a shallow dish, whisk together the flour, cornstarch, garlic powder, and paprika. Set aside.
- In a small bowl, combine the mayonnaise, ketchup, Worcestershire sauce, and black pepper. Whisk until smooth. Cover and refrigerate until serving.
- Pour 2 inches of vegetable oil into a heavy-bottomed pot and heat over medium-high until a deep-fry thermometer reads 350°F (175°C).
- Working with a few pieces at a time, lift a tender from the marinade, letting excess drip off. Dredge in the flour mixture, pressing firmly to coat all sides. Shake off excess and place on a wire rack.
- Carefully place a few coated tenders into the hot oil without crowding. Fry for 8 minutes, turning occasionally, until deep golden brown and cooked through. The internal temperature should reach 165°F (74°C).
- Remove the fried tenders with tongs and drain on paper towels. Let rest for 2 minutes before serving.
- Arrange the hot chicken fingers on a platter with the chilled Cane's sauce on the side for dipping.
