Before you start

Ensure the caramelized onions are at room temperature to avoid making the bread soggy before it even hits the oven.

Slice the Gruyère cheese into uniform pieces that fit easily into the gaps you have created in the bread. Having all components ready on a clean cutting board will make the assembly process seamless and quick.

Ingredients at a glance (4)
  • 1 loaf baguette
  • 1 1/2 cups caramelized onions in beef broth
  • 8 oz cave-aged Gruyère cheese, sliced
  • 4 tbsp thyme garlic butter

Instructions

Accordion Slicing

  1. Prepare the Baguette
Place the baguette on a cutting board. Using a sharp knife, make deep slices across the baguette at 1-inch intervals, ensuring the bottom crust remains intact so the loaf holds its shape like an accordion.
Look for Slices should be about 1 inch apart
Tip Place two chopsticks or wooden spoons on either side of the baguette to prevent cutting all the way through.

The baguette should have uniform, deep slices that remain attached at the base. Ensure the bread feels stable on the board and does not wobble, which helps in maintaining the integrity of the loaf throughout the stuffing process.

Layering Flavors

  1. Stuff the Bread
Spread the thyme garlic butter into every slot of the baguette. Carefully tuck a spoonful of caramelized onions and one or two slices of Gruyère cheese into each gap, ensuring the filling is packed tightly for maximum flavor.
Look for Slots should be filled evenly
Tip Use a butter knife to help push the onions and cheese deep into the slits.

Each slot should be generously coated with garlic butter and packed with a balanced amount of onions and cheese. Check that the filling is evenly distributed from one end of the loaf to the other to ensure every slice is delicious.

Crispy Finishing

  1. Bake and Serve
Preheat the oven to 375°F (190°C). Transfer the stuffed baguette to a parchment-lined baking sheet and bake for 14 minutes. The cheese should be bubbling and the edges of the bread crisp and golden.
Look for Cheese is melted and bubbling
Tip Let the bread rest for 5 minutes before pulling apart to serve.

The baguette should emerge from the oven with a fragrant, buttery aroma. The cheese must be molten and slightly browned, while the baguette edges should be firm and golden.

Allow the bread to sit briefly so the cheese sets slightly for easier pulling.

Common mistakes

The most common mistake is slicing through the entire baguette. If you cut all the way to the bottom, the bread will fall apart, making it difficult to stuff and serve.

Another error is overstuffing, which can cause the cheese to spill out onto the tray; try to keep the filling contained within the slots for a cleaner presentation and easier handling.

How to tell it’s done

The bread is finished when the crust is golden brown and crispy to the touch. The Gruyère cheese should be fully melted, bubbling, and beginning to brown slightly at the edges.

Since there are no raw proteins involved, the visual cues of bubbling cheese and toasted bread are the primary indicators that the dish is ready to be pulled from the oven.
