Tips for success
For the crispiest results, serve the börek within 15 minutes of baking. If you need to hold them, keep them in a warm oven (around 200°F) for up to 30 minutes, but they are best fresh.
To reheat leftovers, place them on a baking sheet in a 350°F oven for 5-7 minutes to restore the crunch. Avoid microwaving, as it makes the layers soggy.
The hand-stretching technique takes a little practice, but the dough is forgiving. If a sheet tears, simply patch it with a piece of dough from another ball.
The butter-oil mixture is key — brush generously between layers and on top. You can also add a sprinkle of sesame seeds or nigella seeds on top before baking for extra flavor and texture.
Variations
- Spinach and Cheese: Add 1 cup of thawed and squeezed spinach to the cheese filling for a classic spinach-cheese börek. The spinach adds moisture and color, but make sure it is well-drained to avoid a soggy filling.
- Spicy Beef Filling: Brown 1/2 lb ground beef with onion and a pinch of chili flakes, then mix with the cheese. Cook the beef thoroughly to 160°F before filling. This makes a heartier version that can serve as a main dish.
- Herb and Garlic: Mix chopped fresh dill, parsley, and a minced garlic clove into the cheese filling. The herbs brighten the flavor and complement the buttery crust. Adjust the garlic to taste.
- Sweet Version: For a dessert börek, fill the stretched dough with a mixture of ricotta, sugar, and cinnamon, then bake as directed. Dust with confectioners' sugar after cooling. This is a lovely twist on the savory original.

Store leftover börek in an airtight container in the refrigerator for up to 3 days. To reheat, place on a baking sheet in a 350°F oven for 5-7 minutes until hot and crisp again. Avoid stacking them while hot, as the steam can soften the crust.
The dough can be made a day ahead and kept in the refrigerator, wrapped tightly. Bring it to room temperature before stretching. The filled börek can also be assembled, covered, and refrigerated for up to 8 hours before baking. Brush with extra butter-oil before baking if they look dry.
Serving ideas
Serve the börek warm as an appetizer or snack, alongside a bowl of plain yogurt or a simple tomato-cucumber salad.
They also make a satisfying breakfast or brunch dish, especially with a cup of strong Turkish tea. The crispy layers and melted cheese are best enjoyed immediately, but they hold up well for a short time.
For a party, cut the börek into smaller pieces before baking or serve them whole with toothpicks. They pair beautifully with a squeeze of lemon or a sprinkle of sumac for brightness.
If you have extra filling, use it in an omelet or as a topping for flatbreads. The börek are also delicious at room temperature, though the crunch softens slightly.

Crispy Turkish Cheese Börek with Hand-Stretched Layers

Ingredients
- 4 cups all-purpose flour
- 1 1/2 cups water
- 1 tbsp salt
- 80 g unsalted butter, melted
- 80 g vegetable oil
- 200 g feta cheese, crumbled
- 200 g kaşar cheese, grated
- 4 scallions, finely chopped
Instructions
- In a large bowl, combine the flour, water, and salt. Knead by hand for about 10 minutes until the dough is smooth, elastic, and no longer sticky. Cover with a damp towel and let rest for 15 minutes.
- Divide the dough into 12 equal balls. Flatten each ball into a small disk about the size of a plate. Brush each disk with the melted butter-oil mixture, stacking them on top of each other. Let the stacked disks rest for 15 minutes.
- Take one disk at a time and gently stretch it with your hands on a clean countertop. Pull from the center outward until the dough is paper-thin and translucent. Do not use a rolling pin; the hand-stretching creates the flaky layers.
- Place a portion of the feta, kaşar, and scallions along one edge of the stretched dough. Fold the dough over the filling like an envelope, tucking in the sides. Repeat with the remaining dough and filling.
- Place the filled börek packets seam-side down on a baking sheet lined with parchment paper. Brush the tops generously with the remaining butter-oil mixture.
- Heat the oven to 400°F (200°C). Bake the börek for 25 minutes, until puffed, deeply golden, and blistered in spots. The layers should be crisp and shatter when pressed.
- Remove the börek from the oven and let cool on the baking sheet for 5 minutes. Serve warm, while the layers are at their crispiest and the cheese is still molten.
