Before you start

Before starting, gather all ingredients and measure them out. Bring the butter to room temperature if using unsalted butter, and have the vegetable oil ready. Make sure your work surface is clean and dry.

Line a baking sheet with parchment paper. Have a clean kitchen towel handy to cover the dough while it rests. If using kaşar, grate it fresh; crumble the feta and chop the scallions. Set the oven to 400°F (200°C) when you are ready to bake.

Ingredients at a glance (8)
  • 4 cups all-purpose flour
  • 1 1/2 cups water
  • 1 tbsp salt
  • 80 g unsalted butter, melted
  • 80 g vegetable oil
  • 200 g feta cheese, crumbled
  • 200 g kaşar cheese, grated
  • 4 scallions, finely chopped

Instructions

Prepare the Dough

  1. Make the Dough
In a large bowl, combine the flour, water, and salt. Knead by hand for about 10 minutes until the dough is smooth, elastic, and no longer sticky. Cover with a damp towel and let rest for 15 minutes.
Look for The dough should be silky and bounce back when pressed.
Tip If the dough feels too dry, add a teaspoon of water at a time.
  2. Divide and Rest the Dough
Divide the dough into 12 equal balls. Flatten each ball into a small disk about the size of a plate. Brush each disk with the melted butter-oil mixture, stacking them on top of each other. Let the stacked disks rest for 15 minutes.
Look for The disks should be evenly coated and not sticking together.
Tip Use a generous brush of the butter-oil between each layer.

At the end of this phase, you should have a smooth, elastic dough that has rested and been divided into 12 balls, each flattened and stacked with butter-oil between the layers.

The dough should feel supple and slightly cool to the touch. When you press a finger into it, the indent should spring back slowly. The stacked disks should be well-coated but not dripping with oil.

Stretch and Fill

  1. Stretch the Dough
Take one disk at a time and gently stretch it with your hands on a clean countertop. Pull from the center outward until the dough is paper-thin and translucent. Do not use a rolling pin; the hand-stretching creates the flaky layers.
Look for The dough should be so thin you can almost see through it.
Tip Work slowly and support the dough with your palms to avoid tearing.
  2. Fill and Fold the Börek
Place a portion of the feta, kaşar, and scallions along one edge of the stretched dough. Fold the dough over the filling like an envelope, tucking in the sides. Repeat with the remaining dough and filling.
Look for The packets should be neatly sealed with no filling escaping.
Tip Do not overfill; a generous tablespoon per packet is enough.
  3. Arrange on Baking Sheet
Place the filled börek packets seam-side down on a baking sheet lined with parchment paper. Brush the tops generously with the remaining butter-oil mixture.
Look for The tops should be evenly coated and shiny.
Tip Leave a little space between each börek so they crisp evenly.

The stretched dough should be so thin that you can see the counter through it, and it should be translucent but still strong enough to hold the filling. The filled packets should be neat, with the edges sealed and the filling centered. You should have 12 uniform börek packets ready on the baking sheet, brushed with the remaining butter-oil mixture.

Bake to Golden

  1. Bake the Börek
Heat the oven to 400°F (200°C). Bake the börek for 25 minutes, until puffed, deeply golden, and blistered in spots. The layers should be crisp and shatter when pressed.
Look for The börek should be golden brown and sound hollow when tapped.
Tip Rotate the baking sheet halfway through for even browning.
  2. Cool and Serve
Remove the börek from the oven and let cool on the baking sheet for 5 minutes. Serve warm, while the layers are at their crispiest and the cheese is still molten.
Look for The cheese should be melted and slightly stringy.
Tip Cooling briefly helps the layers set without becoming soggy.

The börek should be puffed, deeply golden, and blistered on the surface. The aroma of butter and toasted flour should fill the kitchen. When you press gently on the top, the layers should crackle. The cheese should be visibly melted and slightly browned at the edges. The börek should be crisp all over, with no soft or pale spots.

Common mistakes

The most common mistake is tearing the dough while stretching. To avoid this, make sure the dough is well-rested and work slowly, pulling from the center outward.

Another issue is overfilling the börek, which can cause the filling to leak during baking. Use a moderate amount of filling and seal the edges well. Finally, do not skimp on the butter-oil brushing; it is essential for crispness and flavor.

How to tell it’s done

The börek is done when the exterior is deeply golden brown and blistered in spots, and the layers feel crisp and brittle to the touch. Tap the top gently — it should sound hollow. The cheese inside should be fully melted and bubbling.

If you insert a knife into the center, it should come out hot and the cheese should be molten. Let the börek cool for a few minutes before serving to allow the layers to set, but serve warm for the best crunch.
