Tips for success
To achieve the ultimate flaky texture, handle the puff pastry dough as little as possible. The heat from your hands can quickly warm up the butter inside the dough, which ruins the rising process.
Work efficiently, and if you find yourself interrupted, always return the pastry to the refrigerator. Using a very sharp knife or pastry wheel to cut the dough is also crucial, as a dull blade can pinch the edges together and prevent the layers from separating.
If you want an extra glossy and deep golden finish, you can lightly brush the exposed pastry dough with a simple egg wash made from one egg beaten with a tablespoon of water before adding the cheese topping.
While not strictly necessary, this step enhances the visual appeal of the final product, giving the turnovers a professional, bakery-like sheen that makes them look even more appetizing on the serving platter.
Variations
- Dijon Mustard Twist: Spread a thin layer of Dijon mustard onto the pastry dough before adding the ham and cheese for a sharp, tangy kick.
- Sweet Honey Glaze: Drizzle a tiny amount of honey over the ham before folding the pastry to add a subtle, sweet contrast to the salty cheese.
Storage and make-ahead
- Fridge
- Keep leftovers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze unbaked or baked turnovers in a single layer, then store in a freezer bag for up to 2 months.
- Reheat
- Reheat in a 350°F (175°C) oven for 8 to 10 minutes until the pastry is crisp and the cheese is hot.
Store any leftover turnovers in an airtight container in the refrigerator for up to three days. To maintain the crispy texture of the puff pastry, place a sheet of paper towel at the bottom of the container to absorb any excess moisture that might soften the crust.
These turnovers can be fully assembled on the baking sheet, covered tightly with plastic wrap, and stored in the refrigerator for up to 24 hours before baking.
Alternatively, freeze the unbaked assembled turnovers on a tray, then transfer them to a freezer bag; bake directly from frozen, adding an extra five minutes to the baking time.
Serving ideas
Serve these warm turnovers alongside a simple, crisp green salad tossed with a light vinaigrette to balance the richness of the buttery pastry and melted cheese. They make an exceptional addition to a weekend brunch spread, paired with fresh fruit and hot coffee, or served as a comforting afternoon snack on a chilly day.
For a complete meal, pair the pastries with a warm bowl of creamy tomato soup or a classic French onion soup, which complements the Gruyère cheese beautifully.
Arrange them on a wooden serving board garnished with extra fresh parsley sprigs to create an inviting, rustic presentation that encourages guests to dig in immediately.

Crispy Ham and Cheese Puff Pastry Turnovers

Ingredients
- 1 sheet puff pastry dough, thawed but cold (store-bought or made ahead)
- 8 slices sliced ham
- 1 1/2 cups Gruyère cheese, shredded
- 1 tbsp fresh parsley, finely chopped
Instructions
- Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper. Gently roll out the thawed but cold puff pastry dough on a lightly floured surface into a large square, then use a sharp knife to cut it evenly into four smaller, equal squares.
- Place two slices of sliced ham diagonally across the center of each pastry square. Divide one cup of the shredded Gruyère cheese evenly among the squares, piling it generously on top of the ham layers, leaving the corners of the dough exposed.
- Fold two opposite corners of each pastry square over the ham and cheese filling, pressing gently where they overlap to seal them together. Transfer the assembled turnovers onto the prepared baking sheet, then sprinkle the remaining half cup of shredded Gruyère cheese directly over the tops of the pastries.
- Bake the turnovers in the preheated oven for 18 to 20 minutes, or until the pastry is puffed and golden brown, and the cheese on top is melted, bubbly, and beautifully browned. Remove from the oven, let cool for 5 minutes, then garnish with the finely chopped fresh parsley before serving.
