Tips for success
For the crispiest wraps, use a heavy-bottomed skillet that distributes heat evenly. Cast iron works well. Press down gently with a spatula while toasting to ensure even browning.
If you're making multiple wraps, keep the finished ones warm in a 200°F (93°C) oven while you cook the rest. This prevents them from cooling and losing their crispness.
To get that perfect cheese pull, use freshly shredded mozzarella rather than pre-shredded, which often contains anti-caking agents that prevent smooth melting.
Let the cooked chicken cool for a few minutes before mixing with the cheese to avoid melting it too much prematurely. When slicing, use a serrated knife to cut through the crisp tortilla without squishing the filling.
Variations
- Spicy Buffalo: Add 2 tablespoons of buffalo sauce to the chicken mixture and reduce the chili flakes. Serve with blue cheese dressing instead of garlic mayo for a tangy kick.
- Veggie Loaded: Add sautéed bell peppers, onions, and mushrooms to the filling. Omit the chicken for a vegetarian version, or use plant-based chicken substitutes.
- BBQ Bacon: Mix in 4 slices of cooked, crumbled bacon and 1/2 cup of BBQ sauce with the chicken. Use cheddar instead of mozzarella for a smokier flavor.
- Mediterranean: Replace smoked paprika with dried oregano, add chopped sun-dried tomatoes and olives, and use feta instead of mozzarella. Serve with tzatziki sauce.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet or oven to restore crispness.
- Freezer
- Assembled wraps can be frozen for up to 2 months. Wrap tightly in plastic wrap and then foil. Thaw overnight in the fridge before toasting.
- Reheat
- Reheat frozen or refrigerated wraps in a 350°F (175°C) oven for 10-12 minutes, flipping halfway, until hot and crispy. Avoid microwave.
Leftover wraps can be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place them in a skillet over medium heat for 2-3 minutes per side, or in a 350°F (175°C) oven for 10 minutes, until heated through and crispy again. Avoid microwaving, as it will make the tortilla soggy.
The chicken filling can be prepared up to 2 days ahead and stored in the refrigerator. When ready to assemble, let it come to room temperature for about 20 minutes. You can also assemble the wraps completely, wrap them individually in plastic wrap, and refrigerate for up to 24 hours. Toast them just before serving.
Serving ideas
Serve the wraps hot, sliced diagonally, with a generous bowl of garlic mayonnaise for dipping. The creamy, garlicky sauce complements the crispy exterior and rich filling.
For a complete meal, add a simple green salad or some roasted vegetables on the side. These wraps are also great for lunchboxes — pack the dipping sauce separately to keep the wrap crisp.
For a more substantial dinner, serve the wraps with a side of crispy fries or a light coleslaw. You can also cut the wraps into smaller pieces for appetizers or game-day snacks.
The garlic mayo can be swapped for ranch dressing or a spicy sriracha mayo if you want a different kick. Adjust the chili flakes to control the heat level.
