Before you start

Before beginning, ensure all ingredients are measured and ready. Brown the ground beef completely in your skillet and drain any excess fat before adding the bacon and cheese.

If you are using a block of cheddar, take a moment to shred it by hand.

Prepare your baking sheet by lining it with parchment paper for easy cleanup and to prevent the rollups from sticking to the tray. Preheat your oven to 375°F (190°C) so it is ready for the rollups as soon as they are assembled.

Ingredients at a glance (6)
  • 1 lb ground beef
  • 6 slices bacon, cooked and crumbled
  • 1 1/2 cups cheddar cheese, shredded
  • 6 large flour tortillas
  • 3 tbsp butter, melted
  • 1 tsp garlic powder

Instructions

Filling preparation

  1. Prepare the filling
Brown the ground beef in a large skillet over medium-high heat until fully cooked. Drain any excess fat. Add the crumbled bacon and half of the cheddar cheese to the pan, stirring until the cheese just begins to soften and combine with the meat mixture.
Look for The beef should be browned and the cheese slightly melted throughout.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the beef is cooked through to 160°F (71°C) to ensure food safety.

The meat should be browned and crumbly, with the bacon and cheese incorporated. The mixture should smell savory and slightly smoky from the bacon, and the cheese should be just starting to soften throughout the pan.

Assembly of rollups

  1. Assemble the rollups
Lay out the flour tortillas on a clean surface. Spoon the beef and bacon mixture evenly onto each tortilla. Top with the remaining shredded cheddar cheese. Roll each tortilla tightly into a cylinder shape, ensuring the ends are tucked in to keep the filling secure.
Look for Rolls should be tight and secure to prevent filling from leaking during cooking.
Tip If the tortillas are cold, warm them slightly in the microwave for 10 seconds to make them more pliable.

The rollups should be tight cylinders with the ends tucked in. Check that the filling is evenly distributed across the six tortillas so each rollup is uniform in size, which helps them cook at the same rate.

Final bake

  1. Bake and finish
Whisk the melted butter and garlic powder together in a small bowl. Place the rollups on a baking sheet and brush the tops generously with the garlic butter. Bake at 375°F (190°C) for 10 to 12 minutes until the tortillas are golden brown and crispy.
Look for The rollups should be golden brown and the cheese inside should be stretchy and melted.
Tip Watch closely during the final minutes to prevent the edges of the tortillas from burning.

The final product should be golden brown and fragrant. The garlic butter should have created a crispy outer shell, and the cheese should be visibly melted when one is pulled apart with tongs.

Common mistakes

Avoid overstuffing the tortillas, as this makes them difficult to roll and can cause them to burst open in the oven. Another common mistake is using too much fat when cooking the beef; be sure to drain it well so the filling is not greasy.

Finally, ensure the oven is properly preheated; if the temperature is too low, the tortillas will become tough rather than crispy.

How to tell it’s done

The rollups are done when the tortillas are golden brown and crispy to the touch. The cheese inside should be fully melted and bubbly.

Ensure the ground beef filling has reached an internal temperature of 160°F (71°C) to ensure it is safe to consume. The garlic butter should have created a fragrant, golden crust on the exterior of the tortillas.

  • Ground meat: 160°F (71°C) in the thickest part
