Tips for success
For extra crispiness, you can add a little more butter to the skillet before toasting the second side.
Pressing down gently with a spatula helps the sandwich brown evenly and encourages the cheese to melt. If you prefer a spicier kick, add a pinch of red pepper flakes to the egg mixture.
To ensure the egg cooks through without burning the bread, keep the heat at medium and cover the skillet for the last minute of cooking.
This traps steam and helps melt the cheese. If you're making multiple sandwiches, keep the cooked ones warm in a low oven while you finish the rest.
Variations
- Vegetarian: Omit the ham and add sautéed mushrooms or bell peppers. Use a mix of cheeses like cheddar and mozzarella for extra flavor.
- Spicy: Add a few slices of jalapeño to the fillings and a dash of hot sauce to the egg mixture. Use pepper jack cheese instead of mozzarella.
- Herbed: Add fresh basil or chives to the egg mixture. Swap the ham for prosciutto and add a slice of tomato for extra freshness.
- Breakfast: Add cooked bacon or sausage instead of ham, and a slice of American cheese. Serve with maple syrup for a sweet-savory twist.
Storage and make-ahead
- Fridge
- Store leftover toastie in the refrigerator for up to 2 days. Reheat in a toaster oven or skillet to maintain crispiness.
- Freezer
- Wrap the cooled toastie tightly in plastic wrap and freeze for up to 1 month.
- Reheat
- Reheat in a toaster oven at 350°F (175°C) for 5-7 minutes, or in a skillet over medium heat until crispy and hot.
This toastie is best enjoyed fresh, but leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
To reheat, place it in a toaster oven or skillet over medium heat until heated through and crispy again. Avoid microwaving as it will make the bread soggy.
You can whisk the egg mixture and prepare the fillings a few hours ahead. Store the egg mixture in the refrigerator and assemble the sandwich just before cooking. This makes it a great option for a quick weekday breakfast.
Serving ideas
Serve the toastie hot, sliced in half to show the melted cheese. It pairs well with a simple green salad or a bowl of tomato soup. For breakfast, serve with fresh fruit or a side of roasted potatoes.
For brunch, this toastie is a star on its own. You can also cut it into smaller pieces for appetizers.
Garnish with extra chopped parsley for a pop of color. A drizzle of hot sauce or a dollop of sour cream would complement the flavors nicely.

Crispy Egg-Dipped Ham and Cheese Toastie

Ingredients
- 3 large eggs
- 1 tbsp chopped fresh parsley
- Salt to taste
- Black pepper to taste
- 1 tbsp butter
- 2 slices white sandwich bread
- 2 slices savory ham
- Fresh spinach, to taste
- Tomato slices, to taste
- 1/2 cup shredded mozzarella cheese
Instructions
- Crack the eggs into a shallow bowl. Add the chopped parsley, salt, and black pepper. Whisk until the yolks and whites are fully combined and slightly frothy.
- Place a medium skillet over medium heat. Add the butter and let it melt, tilting the pan to coat the bottom evenly. The butter should foam but not brown.
- Pour the whisked egg mixture into the center of the skillet. Let it spread naturally; do not stir. Allow it to cook undisturbed for about 30 seconds until the bottom begins to set.
- Take the two slices of bread and dip each one into the raw egg mixture, coating both sides. Place the dipped slices side by side on top of the setting omelet base in the skillet.
- Layer the ham, spinach, tomato slices, and shredded mozzarella on one slice of bread. Leave the other slice plain for now.
- Using a spatula, carefully fold the plain slice of bread over the fillings to form a sandwich. Press gently to seal.
- Cook the sandwich for 2-3 minutes per side, pressing down with the spatula occasionally, until the bread is golden brown and crispy and the cheese is melted. The internal temperature of the egg should reach 160°F (71°C).
- Transfer the toastie to a cutting board. Let it rest for 1 minute, then slice in half to show the melted cheese pull. Serve hot.
