Tips for success

For the crispiest tempura, use ice-cold water and keep the batter lumpy—overmixing is the enemy of crunch. Use a deep skillet and maintain the oil temperature at 350°F (175°C) with a thermometer.

Fry in small batches and avoid crowding. After frying, drain on a wire rack rather than paper towels to prevent steam from softening the crust.

When slicing the roll, use a very sharp knife and wet it with water before each cut. This prevents the rice from sticking and ensures clean, even pieces.

For a professional presentation, arrange the slices on a platter cut-side up to show off the colorful cross-section. Drizzle sauces in a zigzag pattern and finish with sesame seeds and tenkasu just before serving.

Variations

  • Spicy Tuna Tempura Roll: Swap the shrimp for sushi-grade tuna cut into strips. Lightly sear the tuna if desired, then roll with spicy mayo. The tuna adds a rich, buttery flavor that pairs well with the crispy tempura flakes.
  • Vegetable Tempura Roll: For a vegetarian version, use tempura-battered sweet potato, zucchini, or bell pepper strips instead of shrimp. Keep the avocado and cucumber, and drizzle with unagi sauce for sweetness.
  • Spicy Mayo with Sriracha: Make your own spicy mayo by combining regular mayonnaise with sriracha to taste. Adjust the heat level to your preference, and add a squeeze of lime for extra brightness.
  • Crunchy Roll with Extra Tenkasu: Double the amount of tenkasu and sprinkle some inside the roll along with the shrimp for an extra crunchy texture. You can also mix tenkasu into the spicy mayo for a crunchy sauce.

Storage and make-ahead

Fridge
Store leftover sushi rolls in the refrigerator for up to 24 hours. Cover tightly with plastic wrap or in an airtight container.
Freezer
Not recommended to freeze assembled rolls as the texture will degrade significantly.
Reheat
To reheat leftover rolls, place them in a 350°F (175°C) oven for 5-7 minutes until the tempura is crisp again.

Store leftover sushi rolls in an airtight container in the refrigerator for up to 24 hours. Place a sheet of plastic wrap directly on the surface to prevent drying. The tempura will lose its crispness over time, so it's best enjoyed fresh. If storing, keep the sauces separate and add them just before serving to avoid sogginess.

The tempura shrimp can be fried up to 2 hours ahead and kept at room temperature on a wire rack. Reheat in a 350°F (175°C) oven for 3-4 minutes to restore crispness before assembling the roll.

The sushi rice can be made a few hours in advance and kept covered at room temperature. The avocado should be sliced just before assembly to prevent browning.

Serving ideas

Serve the ebi tempura roll as a main course with a side of pickled ginger and wasabi. It pairs beautifully with a light miso soup or a simple cucumber salad.

For a complete sushi experience, offer soy sauce for dipping, though the roll is already flavorful with the spicy mayo and unagi sauce. The roll can be served as an appetizer for a dinner party, cut into smaller pieces if desired.

Present the roll on a platter with the cut sides facing up to showcase the beautiful layers. Garnish with extra sesame seeds and a sprinkle of tenkasu for added texture. Serve with chopsticks and small plates for each guest. This roll is best enjoyed immediately after slicing, while the tempura is still crisp and the avocado is fresh.

Frequently asked questions

Can this ebi tempura roll be made ahead of time?
The tempura shrimp can be fried up to 2 hours ahead and kept at room temperature on a wire rack. Reheat in a 350°F (175°C) oven for 3-4 minutes to restore crispness before assembling. The sushi rice can be made a few hours ahead and kept covered at room temperature. However, the assembled roll is best enjoyed within a few hours to maintain the crunch of the tempura and the freshness of the avocado.
What is the best way to slice the roll without it falling apart?
Use a very sharp yanagiba or chef's knife and wet it with water between each cut. Slice with a single, smooth stroke rather than a sawing motion. Cleaning the knife with a damp cloth after each cut prevents rice from sticking and keeps the slices neat. Also, ensure the roll is tightly rolled and the plastic wrap is removed just before slicing.
Can you use regular flour instead of tempura flour?
Yes, you can substitute tempura flour with a mixture of all-purpose flour and cornstarch in a ratio of about 4:1. This combination mimics the light, crispy texture of tempura batter. Keep the batter ice-cold and avoid overmixing. The result will be slightly different but still delicious.
What can you use instead of unagi eel sauce?
If you don't have unagi sauce, you can use a store-bought teriyaki glaze or make a quick homemade version by simmering soy sauce, mirin, and sugar until slightly thickened. The sauce should be sweet and savory, with a glossy consistency for drizzling.
How do you keep the tempura crispy after frying?
Drain the fried shrimp on a wire rack instead of paper towels to allow air circulation and prevent steam from softening the crust. Keep them in a single layer and avoid covering them. If they cool down, reheat in a 350°F (175°C) oven for a few minutes before assembling the roll.

Crispy Ebi Tempura Roll with Spicy Mayo & Eel Sauce

Prep 30 minCook 10 minTotal 40 minServes 4
Sliced ebi tempura roll topped with avocado, drizzled with spicy mayo and unagi sauce

Ingredients

  • 4 jumbo black tiger shrimp, peeled and deveined with tails on
  • 60 g tempura flour
  • 100 ml ice water
  • Neutral oil, for frying, to taste
  • 2 sheets nori seaweed
  • 250 g seasoned sushi rice
  • 1 avocado, sliced
  • 1 cucumber, julienned
  • Spicy Kewpie mayo, for drizzling, to taste
  • Unagi eel sauce, for drizzling, to taste
  • Toasted sesame seeds, for garnish, to taste
  • Crispy tempura flakes (tenkasu), for garnish, to taste

Instructions

  1. Score the shrimp deeply on the underside, then press them flat to stretch them straight. In a bowl, whisk the tempura flour with ice water until just combined—lumps are fine. Heat oil in a deep skillet to 350°F (175°C). Dip each shrimp into the batter, letting excess drip off, then carefully place into the hot oil. Fry for 2 minutes until pale golden and lacy crisp. Drain on a wire rack.
  2. If using store-bought spicy Kewpie mayo, no preparation is needed. If making from scratch, combine regular mayonnaise with sriracha or chili paste to taste. Set aside at room temperature for easy drizzling later.
  3. Place a sheet of nori shiny side down on a bamboo mat. Spread half of the sushi rice evenly over the nori, leaving a 1-inch border at the top. Flip the nori so the rice side faces down. Arrange two tempura shrimp with tails out, avocado slices, and cucumber julienne in a line across the center. Roll tightly using the mat, pressing firmly to seal.
  4. Slice the remaining avocado into thin, even tiles. Lay the avocado slices over the top of the roll, covering the surface. Place a piece of plastic wrap over the roll and press gently to adhere the avocado to the rice.
  5. Wet a sharp yanagiba or chef's knife with water. Slice the roll into 8 uniform pieces using a clean, single stroke for each cut. Wipe the knife clean with a damp cloth between cuts to keep the slices neat.
  6. Arrange the sliced rolls on a serving plate. Drizzle zigzag lines of spicy Kewpie mayo and unagi eel sauce over the top of the rolls.
  7. Sprinkle toasted sesame seeds and crispy tempura flakes (tenkasu) generously over the rolls. Serve immediately with chopsticks, lifting a piece to show the crunchy shrimp center.
