Tips for success

For the crispiest shrimp, keep the oil at a steady 350°F (175°C) and do not overcrowd the pan. Let the oil come back to temperature between batches.

Also, let the coated shrimp rest for a few minutes before frying—this helps the coating set and adhere better.

If you prefer a milder dip, remove the seeds and membranes from the habanero thoroughly, or use only a quarter of the pepper.

For a spicier version, leave a few seeds in. Taste the dip before serving and adjust with extra lime or honey to balance the heat.

Variations

  • Spicy Mango Dip: Add a pinch of cayenne or a whole habanero (with seeds) to the dip for extra heat. For a smoky twist, roast the habanero before blending.
  • Coconut-Lime Shrimp: Add the zest of one lime to the coconut-panko mixture for a brighter, citrusy flavor. Serve with a squeeze of fresh lime over the hot shrimp.
  • Oven-Baked Coconut Shrimp: For a lighter version, bake the coated shrimp on a rack over a baking sheet at 425°F (220°C) for 10-12 minutes, flipping halfway, until golden and cooked through.
  • Pineapple Habanero Dip: Replace the mango with an equal amount of fresh pineapple for a different tropical sweetness. The dip will be slightly more tart.

Storage and make-ahead

Fridge
Store leftover shrimp and dip separately in airtight containers in the fridge.
Freezer
Freeze cooked shrimp in a single layer on a baking sheet, then transfer to a freezer bag for up to 1 month.
Reheat
Reheat shrimp in a 400°F (200°C) oven for 5-7 minutes until hot and crisp. Do not microwave, as it will make the crust soggy.

Store leftover shrimp and dip separately in airtight containers in the refrigerator.

The shrimp will lose their crispness, but they can be reheated in a 400°F (200°C) oven for a few minutes to restore some crunch. The dip will keep for up to 2 days.

The mango habanero dip can be made up to 2 days ahead and stored in the refrigerator. The shrimp can be breaded a few hours in advance and kept on a baking sheet in the fridge, but they are best cooked just before serving.

Serving ideas

Serve the crispy coconut shrimp immediately after frying, arranged on a platter with the mango habanero dip in the center.

The contrast of hot, crunchy shrimp and cool, silky dip is irresistible. Garnish with lime wedges or fresh cilantro if desired, though the video does not show these.

This dish is perfect as an appetizer for a party, or as a main course with a side of rice and a simple green salad. The sweet-spicy dip also works well with grilled chicken or as a dressing for a tropical slaw.

Frequently asked questions

Can this recipe be made ahead of time?
The mango habanero dip can be made up to 2 days ahead and stored in the refrigerator. The shrimp can be breaded a few hours in advance and kept on a baking sheet in the fridge, but they are best cooked just before serving to maintain the crisp coating.
What is the best oil for frying coconut shrimp?
Use a neutral oil with a high smoke point, such as vegetable, canola, or peanut oil. These oils won't interfere with the flavor of the coconut and can handle the high heat needed for frying without burning.
How can you make the dip less spicy?
Remove the seeds and membranes from the habanero pepper thoroughly before blending, or use only a quarter of the pepper. You can also substitute a milder chili like jalapeño for a gentler heat.
Can you use frozen shrimp for this recipe?
Yes, frozen shrimp work well. Thaw them overnight in the refrigerator or under cold running water, then pat them dry thoroughly before breading. Make sure they are peeled and deveined with tails on.
Why did your coconut crust fall off during frying?
The crust may fall off if the shrimp are too wet before breading, or if the coating is not pressed on firmly. Pat the shrimp dry with paper towels, and press the coconut-panko mixture onto the shrimp so it adheres well.

Crispy coconut shrimp with mango habanero dip

Ingredients

  • 12 jumbo raw shrimp, peeled and deveined (tails on)
  • 60 g all-purpose flour
  • 2 large eggs, beaten
  • 80 g sweetened shredded coconut
  • 60 g panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • Oil for frying (such as vegetable or canola), to taste
  • 1 ripe mango, peeled and diced
  • 1/2 habanero pepper, seeded
  • 1 tbsp fresh lime juice
  • 1 tbsp honey

Instructions

  1. In a blender, combine the diced mango, seeded habanero pepper, lime juice, and honey. Blend until silky smooth, scraping down the sides as needed. Transfer to a serving bowl and set aside.
  2. In a shallow bowl, mix the flour with the garlic powder and paprika. Place the beaten eggs in a second bowl. In a third bowl, combine the shredded coconut and panko breadcrumbs.
  3. Pat the shrimp dry with paper towels. Dredge each shrimp in the flour mixture, then dip into the beaten eggs, letting any excess drip off. Press firmly into the coconut-panko mixture, ensuring an even coat on all sides.
  4. Pour about 2 inches of oil into a deep skillet or pot. Heat over medium-high until it reaches 350°F (175°C) on a cooking thermometer.
  5. Carefully place a few coated shrimp into the hot oil. Fry for about 3 minutes, turning occasionally, until the coconut is deep golden brown and the shrimp are cooked through. The internal temperature of the shrimp should reach 145°F (63°C).
  6. Remove the shrimp with a slotted spoon and drain on a paper towel-lined plate. Serve immediately with the mango habanero dip on the side.
