Before you start

Before you begin, ensure your waffle bowl maker is clean and ready for use. Have all your ingredients measured and set out on the counter. Make sure the strawberries are washed, hulled, and sliced uniformly so they fit neatly into the bowls.

If your dulce de leche is too thick to drizzle, warm it gently in a microwave-safe container for a few seconds until it reaches a pourable consistency.

Ingredients at a glance (9)
  • 150 ml water
  • 60 g melted butter
  • 120 g flour
  • 3 eggs
  • 5 ml Mexican vanilla extract
  • 15 g melted butter
  • 50 g cinnamon sugar
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup dulce de leche, warmed

Instructions

Mixing the Batter

  1. Prepare the Batter
Combine the water, melted butter, flour, eggs, and Mexican vanilla extract in a large mixing bowl. Whisk the mixture vigorously until the batter is smooth, fully incorporated, and free of any large lumps to ensure a consistent texture for the waffle bowls.
Look for The batter should look smooth and thick like a choux pastry.
Tip Ensure the eggs are at room temperature to help them emulsify properly into the butter and water base.

The batter should be smooth, shiny, and free of large lumps. It will have a consistency similar to a thick pancake batter but with more elasticity due to the eggs and butter. Ensure the vanilla is fully incorporated for an even distribution of flavor throughout the mixture before you start baking.

Baking the Bowls

  1. Bake the Bowls
Preheat the waffle bowl maker to 195°C (383°F). Pour the prepared batter into the molds, close the lid, and bake for 4 minutes until the bowls are crisp and deep golden brown. Carefully remove the bowls to a wire rack to cool slightly before coating.
Look for The waffle bowls should be firm to the touch and golden brown.
Tip Do not open the waffle maker too early, or the bowls may tear apart while still soft.

At the end of the baking phase, the bowls should be golden brown and crisp. While this recipe is served soft, please note that the eggs are not fully cooked through in this state. For those requiring fully cooked eggs, ensure the batter reaches 160°F (71°C) to eliminate any safety concerns.

Coating and Finishing

  1. Coat and Assemble
Immediately brush the exterior of each warm waffle bowl with the melted butter. Dredge the buttered bowls in the cinnamon sugar until evenly coated. Fill the bowls with fresh strawberries and drizzle with warm dulce de leche. To cook the eggs through to a safe internal temperature of 160°F (71°C), ensure the batter is fully set during the baking process.
Look for The sugar should stick well to the buttered surface, creating a classic churro-like coating.
Safe temperature 160°F (71°C) internal temperature (egg dishes)
Tip Adding the dulce de leche right before serving keeps the waffle bowls crunchy for longer.

The finished bowls will look like classic churros, with a glistening, sugary exterior. The strawberries should be bright and fresh, and the dulce de leche should appear as a smooth, warm ribbon over the fruit.

The entire dish should be fragrant with cinnamon and vanilla, ready to be served immediately.

Common mistakes

A common mistake is opening the waffle maker before the four minutes are up, which can cause the delicate bowls to break.

Another error is waiting too long to brush the bowls with butter; the sugar coating adheres best while the bowls are still hot from the iron. Avoid overfilling the bowls with too much sauce, which can soften the crisp edges.

How to tell it’s done

The waffle bowls are done when they are deep golden brown and feel firm to the touch.

The internal structure must be fully set, reaching an internal temperature of 160°F (71°C) to ensure the egg-based batter is safe and cooked through. The bowls should release easily from the waffle maker without sticking.
