Tips for success
For the best texture, use a cast-iron or heavy-bottomed skillet—it holds heat evenly and helps achieve that deep sear on the chicken and a crispy toast on the wraps.
If you don’t have a cast-iron, any heavy pan will work, but avoid nonstick if possible, as it won’t get as hot for browning. Also, make sure the chicken is dry before marinating; pat it with paper towels if needed, so the marinade adheres better and the sear is more effective.
When toasting the wraps, press down gently with a spatula to ensure even browning. If you’re making a double batch, keep the cooked wraps warm in a 200°F (93°C) oven while you toast the rest.
The sauce can be made spicier by adding more adobo sauce or a pinch of cayenne. For a smoky twist, use chipotle powder instead of the peppers in adobo, but you’ll lose some of the tangy acidity—add a little extra lime juice to compensate.
Variations
- Add Black Beans: Mix 1 cup of canned black beans (rinsed and drained) into the cooked chicken before assembling. This adds fiber and makes the wraps more filling. You might need a slightly larger tortilla to hold the extra filling.
- Make It Spicier: Increase the chipotle peppers to 3 tablespoons and add 1 teaspoon of cayenne pepper to the marinade. For extra heat, drizzle with hot sauce before rolling. This version is for those who love a fiery kick.
- Vegetarian Version: Replace the chicken with 2 cups of roasted or sautéed portobello mushrooms, sliced. Marinate the mushrooms in the same chipotle mixture and cook until tender. The rest of the recipe stays the same.
- Cheese Swap: Substitute the mozzarella with pepper jack for a spicier, meltier cheese, or use a Mexican cheese blend for a more complex flavor. For a smoky twist, try smoked gouda.
Storage and make-ahead
- Fridge
- Store leftover wraps in an airtight container in the fridge for up to 3 days. Keep the sauce separate. Reheat in a skillet to restore crispness.
- Freezer
- Freeze assembled, untoasted wraps in plastic wrap and foil for up to 2 months. Thaw overnight in the fridge, then toast in a skillet until hot and crispy.
- Reheat
- Reheat leftover wraps in a dry skillet over medium heat for 2-3 minutes per side until crispy and heated through.
Store leftover wraps in an airtight container in the refrigerator for up to 3 days. To keep them from getting soggy, wrap each in foil or parchment paper before storing.
The sauce can be stored separately in a jar for up to 5 days. Reheat wraps in a skillet over medium heat to restore crispiness, or in a toaster oven. Avoid microwaving as it makes the tortilla soft and chewy.
The chicken can be marinated up to 2 hours ahead, and the sauce can be made up to 3 days in advance. You can also cook the chicken fully and refrigerate it for up to 2 days; then assemble and toast the wraps when ready to serve.
For the crispiest results, assemble and toast just before eating. If you need to prep even further, you can assemble the wraps (without toasting) and refrigerate them for up to 4 hours before toasting.
Serving ideas
Serve these wraps hot off the skillet, sliced diagonally to show off the gooey filling. The extra chipotle sauce on the side is a must for dipping—it adds a cool, creamy contrast to the crispy tortilla. Pair with a simple green salad, Mexican rice, or black beans for a complete meal. For a lighter option, serve with fresh pico de gallo or sliced avocado.
These wraps are also great for meal prep: make a batch and pack them for lunch. They’re portable and hold up well if wrapped tightly. For a party, cut them into smaller pinwheel slices and serve as appetizers. Adjust the spice level to your audience—offer extra sauce on the side for those who want more heat. Enjoy them warm, as the cheese is best when melted and stretchy.

Crispy Chipotle Chicken Wrap with Creamy Chipotle Sauce

Ingredients
- 2 lb boneless, skinless chicken breasts, diced
- 2 tbsp chipotle peppers in adobo sauce, minced
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1 tsp salt
- 2 tbsp lime juice
- 1/2 cup sour cream
- 1/4 cup mayonnaise
- 2 tbsp chipotle adobo sauce
- 1 garlic clove, minced
- 1 tbsp lime juice
- 4 large flour tortillas
- 2 cups shredded mozzarella cheese
- 2 tbsp butter
Instructions
- In a medium bowl, combine the diced chicken with the minced chipotle peppers, olive oil, garlic powder, onion powder, cumin, smoked paprika, salt, and lime juice. Stir until every piece is well coated. Cover and refrigerate for at least 15 minutes, or up to 2 hours, to let the flavors meld.
- In a small bowl, whisk together the sour cream, mayonnaise, chipotle adobo sauce, minced garlic, and lime juice until smooth and well combined. Set aside at room temperature while you cook the chicken.
- Heat a large skillet over medium-high heat until smoking hot. Add the marinated chicken in a single layer and let it sear undisturbed for 3-4 minutes until deeply browned on one side. Flip and cook for another 3-4 minutes, stirring occasionally, until the chicken is cooked through and juices run clear.
- Transfer the cooked chicken to a plate and let it rest for 5 minutes. This allows the juices to redistribute, keeping the meat moist and flavorful. While the chicken rests, wipe the skillet clean for toasting the wraps.
- Lay a flour tortilla on a clean work surface. Spread a generous spoonful of the creamy chipotle sauce down the center. Top with a quarter of the cooked chicken, then sprinkle with a quarter of the shredded mozzarella. Fold in the sides and roll tightly into a burrito shape, tucking the filling as you go.
- Melt half the butter in the same skillet over medium heat. Place two wraps seam-side down in the skillet and cook for 2-3 minutes per side, until golden brown and crispy. Repeat with the remaining butter and wraps.
- Slice each wrap in half diagonally and serve immediately with the remaining creamy chipotle sauce on the side for dipping. Enjoy while the wraps are hot and crispy.
