Tips for success
For the crispiest crust, use a cast-iron skillet and preheat it over medium heat for a few minutes before adding the sandwiches. The butter should sizzle gently when the bread hits the pan.
If the butter starts to brown too quickly, reduce the heat slightly. Pressing the sandwich with a spatula a few times during cooking helps the bread make full contact with the pan, promoting even browning and a shatteringly crisp texture.
To get perfect melted cheese, place the cheese slices directly on the hot chicken salad so they melt into the filling. Avoid overloading the sandwich with too much cheese, as it can make the inside greasy.
If you want extra tang, spread a little of the dressing on the inside of the top slice of bread before closing the sandwich. This adds moisture and flavor without making the bread soggy.
Variations
- Spicy Pepper Jack: Swap Monterey Jack for pepper Jack cheese to add a spicy kick. You can also increase the chipotles in adobo or add a dash of hot sauce to the chicken salad for extra heat.
- BBQ Chicken Melt: Replace the tangy dressing with your favorite barbecue sauce, and add a little smoked paprika to the chicken salad. Use cheddar cheese instead of Monterey Jack for a smoky, sweet flavor.
- Avocado Chicken Melt: Add sliced avocado to the sandwich before topping with cheese. The creamy avocado pairs beautifully with the chipotle and lime flavors. Use a dairy-free cheese alternative if desired.
- Greek Yogurt Swap: Use plain Greek yogurt in place of sour cream in both the chicken salad and the dressing. This adds a tangy flavor and reduces the fat content slightly. You may need to add a little water or milk to thin the dressing.

Microwaving is not recommended as it will make the bread soggy. The filling can also be stored separately in the refrigerator for up to 3 days.
The chipotle chicken salad and the tangy dressing can both be made up to 2 days ahead and stored in separate airtight containers in the refrigerator. When ready to serve, assemble the sandwiches and griddle them fresh. This makes meal prep easy and ensures the bread stays crisp. The dressing can also be used as a dip or sauce for other dishes.
Serving ideas
Serve the crispy chipotle chicken sourdough melt hot, straight from the skillet, with extra tangy dressing on the side for dipping. The sandwich pairs well with a simple green salad, coleslaw, or pickles to cut through the richness.
For a heartier meal, serve with sweet potato fries or a bowl of tomato soup. The creamy, spicy filling and crunchy bread make this a satisfying main course for lunch or dinner.
For a fun twist, cut the sandwiches into smaller halves or quarters and serve as appetizers at a party. The contrast of textures and flavors will impress guests. If you’re serving a crowd, you can assemble the sandwiches ahead and griddle them in batches, keeping them warm in a low oven until ready to serve. This recipe is versatile and sure to become a favorite.

Crispy Chipotle Chicken Sourdough Melt

Ingredients
- 2 cups shredded roasted chicken
- 1/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tbsp chopped chipotles in adobo
- 1 tsp garlic powder
- 1/2 tsp ground cumin
- salt to taste
- 1/4 cup diced red onion
- 1/4 cup chopped cilantro
- 1/2 cup mayonnaise
- 1/3 cup sour cream
- 1 tbsp adobo chili paste
- 1 tsp paprika
- 1 tsp garlic powder
- 1 tbsp lime juice
- 4 slices sourdough bread
- 2 tbsp butter, softened
- 4 slices Monterey Jack cheese
Instructions
- In a large mixing bowl, combine the shredded roasted chicken, 1/4 cup mayonnaise, 1/4 cup sour cream, chopped chipotles in adobo, garlic powder, ground cumin, salt to taste, diced red onion, and chopped cilantro. Stir until well combined and creamy. Set aside.
- In a separate bowl, whisk together 1/2 cup mayonnaise, 1/3 cup sour cream, adobo chili paste, paprika, garlic powder, and lime juice until silky smooth. This dressing will add extra moisture and tang to the sandwich.
- Spread the butter on one side of each sourdough slice. Place two slices buttered-side down on a cutting board. Spread a generous amount of the chipotle chicken salad over each, then drizzle with some of the tangy dressing. Top each with two slices of Monterey Jack cheese, then cap with the remaining sourdough slices, buttered-side up.
- Heat a cast-iron skillet over medium heat. Place the sandwiches in the skillet, buttered-side down. Cook for 3 minutes per side, pressing gently with a spatula, until deeply golden and shatteringly crisp. The cheese should be fully melted and the chicken filling heated through.
- Transfer the sandwiches to a cutting board. Let them rest for 1 minute, then slice down the middle with a sharp knife to reveal the molten cheese. Serve hot, with extra tangy dressing on the side if desired.
