Tips for success
For the crispiest tacos, use a cast-iron griddle or skillet and preheat it thoroughly before adding the tortillas. The oil should shimmer but not smoke.
Press the tacos gently with a spatula to ensure even browning. Don't overcrowd the pan—cook in batches to maintain the temperature.
If you like extra heat, add a pinch of cayenne or a few dashes of hot sauce to the chicken filling. For a smoky twist, use smoked paprika instead of cumin.
The lime crema can be made a day ahead and stored in the fridge. Let it come to room temperature for 10 minutes before serving.
Variations
- Spicy Black Bean Tacos: Replace the chicken with a can of drained black beans mixed with the same chipotle sauce. Add a handful of corn for extra texture. Cook as directed.
- Beef Mini Tacos: Use ground beef cooked with the chipotle sauce instead of shredded chicken. Ensure the beef reaches 160°F (71°C) before filling the tortillas.
- Veggie & Cheese Tacos: Sauté bell peppers and onions, then mix with the chipotle sauce and cheese. Skip the chicken for a vegetarian version.
- Spicy Shrimp Tacos: Use cooked shrimp tossed with the chipotle sauce and lime juice. Cook the filled tacos just until the shrimp are heated through.
Storage and make-ahead

- Store leftover tacos and crema separately in airtight containers in the fridge for up to 3 days. Reheat tacos in a skillet to restore crispness.

- Reheat
- Reheat frozen or refrigerated tacos in a toaster oven or skillet over medium heat until hot and crisp. Avoid microwaving, as it makes them soggy.

Serving ideas
Serve the tacos warm, straight from the griddle, with the lime crema on the side for dipping. They're perfect as an appetizer for a party, or as a main course for a casual dinner. Pair them with a cold beer or a refreshing margarita for a complete experience.
For a fun presentation, arrange the tacos on a wooden board and garnish with fresh cilantro or lime wedges, if desired.
The contrast of the golden crispy shells and the vibrant green crema is visually appealing. Encourage guests to dip generously—the crema is the perfect cooling counterpart to the spicy chicken.

Crispy Chipotle Chicken Mini Tacos Recipe

Ingredients
- 2 cups shredded cooked chicken breast
- 2 tbsp minced chipotles in adobo sauce
- 1/2 cup tomato puree
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp lime juice
- 20 mini yellow corn tortillas
- 2 tbsp avocado oil
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1 tsp lime zest
- 1 tbsp lime juice
- 1/2 tsp salt
Instructions
- In a large skillet over medium heat, combine the shredded chicken, minced chipotles in adobo, tomato puree, cumin, garlic powder, onion powder, and lime juice. Stir to coat the chicken evenly. Cook, stirring occasionally, until the mixture thickens and the chicken is heated through, about 5 minutes. The sauce should cling to the chicken without being watery.
- In a small bowl, stir together the sour cream, lime zest, lime juice, and salt until smooth. Cover and refrigerate until ready to serve.
- Brush both sides of each mini corn tortilla lightly with avocado oil. Stack them on a plate, ready for the griddle.
- Place a griddle or large skillet over medium-high heat. Let it get hot for a few minutes until a drop of water sizzles and evaporates immediately.
- Lay a tortilla on a cutting board. Sprinkle about 1 tablespoon of shredded Monterey Jack cheese over one half, then spoon about 1 tablespoon of chipotle chicken on top of the cheese. Fold the other half over to form a half-moon.
- Place the folded tacos on the hot griddle in a single layer. Press down gently with a metal spatula or taco press. Cook for 3 minutes per side, until the tortilla is golden brown and crisp, and the cheese is melted and forms a browned, crispy edge on the outside.
- Transfer the cooked tacos to a wire rack or cutting board. Let them rest for 2 minutes so the cheese sets slightly and the filling cools a bit.
- Arrange the tacos on a serving board and serve with the lime crema on the side for dipping. Enjoy the crunch!
