Tips for success
For the crispiest tacos, use a cast-iron griddle or skillet and heat it well before adding the tacos.
Don't move the tacos too early—let them develop a golden crust before flipping. If making a large batch, keep the cooked tacos warm in a low oven (200°F) while you finish the rest.
The lime crema can be made up to two days ahead. If the crema thickens in the fridge, stir in a teaspoon of water or lime juice to loosen it. For extra heat, add a pinch of cayenne or a dash of hot sauce to the crema.
Variations
- Spicy Black Bean: Replace the chicken with 2 cups of cooked black beans, mashed slightly. Use the same chipotle-tomato sauce and skip the cheese for a dairy-free version. Griddle as directed.
- Mild Chicken: For a milder version, use only one chipotle pepper and omit the adobo sauce. Add a teaspoon of smoked paprika for extra smokiness without the heat.
- Cheese Lover's: Add a second type of cheese, such as shredded cheddar or pepper jack, for extra flavor and melt. Use 2 tablespoons of cheese per taco instead of 1 1/2.
- Crispy Fish: Swap the chicken for cooked, flaked white fish (like cod or tilapia). Use the same chipotle sauce but reduce the simmer time to 3 minutes. Serve with a cilantro-lime crema.
Storage and make-ahead
- Fridge
- Store cooked tacos in an airtight container in the fridge for up to 3 days. Keep crema separate. Reheat in a skillet or toaster oven to crisp up.
- Freezer
- Freeze cooked tacos in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months. Reheat from frozen in a 375°F oven for 10 minutes.
- Reheat
- Reheat tacos in a dry skillet over medium heat for 2-3 minutes per side, or in a toaster oven at 350°F for 5 minutes, until hot and crispy.
Store leftover tacos and crema separately in airtight containers. Tacos will keep in the refrigerator for up to 3 days. Reheat in a skillet or toaster oven to restore crispness. The crema can be refrigerated for up to 5 days.
The chicken filling can be made up to 2 days ahead and refrigerated. Assemble the tacos just before cooking.
The lime crema can also be prepared in advance. Cooked tacos are best eaten fresh, but they can be reheated in a skillet for a few minutes.
Serving ideas
Serve the mini tacos as a main dish with rice and beans, or as an appetizer for a party.
They're great with a side of Mexican street corn or a simple green salad. The lime crema is essential for dipping—add extra lime zest on top for a pop of color.
For a casual gathering, set up a taco bar with the crispy tacos, crema, and optional toppings like chopped cilantro or diced onion—though the video keeps it simple.
These tacos are satisfying on their own, but the crema adds a cooling, tangy finish that balances the smoky heat.

Crispy Chipotle Chicken Mini Tacos: 20 Easy Bites

Ingredients
- 2 cups shredded cooked chicken breast
- 2 chipotle peppers in adobo, minced
- 1/2 cup tomato sauce
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp fresh lime juice
- 20 small corn tortillas (5-inch)
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1 tsp lime zest
- 1 tbsp fresh lime juice
- 1/4 tsp kosher salt
Instructions
- In a large skillet over medium heat, combine the shredded chicken, minced chipotle peppers, tomato sauce, cumin, garlic powder, onion powder, and 2 tablespoons lime juice. Stir well, then simmer for 5 to 7 minutes, stirring occasionally, until the mixture is thick and saucy, with most of the liquid absorbed. The chicken should be coated and rich, not wet. Remove from heat and set aside.
- Wrap the corn tortillas in a clean kitchen towel and microwave for 30 to 45 seconds, or until pliable. This makes them easier to fold without cracking. Keep them covered while you work.
- Lay a warm tortilla on a flat surface. Spoon about 1 tablespoon of the chipotle chicken filling onto one half. Sprinkle with 1 to 2 teaspoons of shredded Monterey Jack cheese. Fold the other half over to form a half-moon, pressing gently.
- Place a griddle or large cast-iron skillet over medium-high heat. Let it get hot for 2 to 3 minutes. You can test by sprinkling a drop of water—it should sizzle immediately.
- Place the folded tacos on the hot griddle in a single layer, leaving space between them. Cook for 1 1/2 minutes, then press down gently with a spatula or taco press to flatten slightly. Flip and cook for another 1 1/2 minutes, until both sides are golden brown and blistered, and the cheese is melted and crispy at the edges.
- In a small bowl, stir together the sour cream, lime zest, 1 tablespoon lime juice, and kosher salt until smooth. Taste and adjust salt if needed.
- Arrange the crispy tacos on a board or platter. Serve immediately with the lime crema on the side for dipping, or drizzle the crema over the tacos if preferred.
