Before you start

Before cooking, shred the chicken if not already done. Mince the chipotle peppers, measure the spices, and juice the limes. Have all ingredients ready.

Warm the tortillas just before assembling. Set out the griddle or skillet and a spatula. Prepare the lime crema by mixing the sour cream, lime zest, juice, and salt; refrigerate until serving.

Ingredients at a glance (13)
  • 2 cups shredded cooked chicken breast
  • 2 chipotle peppers in adobo, minced
  • 1/2 cup tomato sauce
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 2 tbsp fresh lime juice
  • 20 small corn tortillas (5-inch)
  • 1 1/2 cups shredded Monterey Jack cheese
  • 1/2 cup sour cream
  • 1 tsp lime zest
  • 1 tbsp fresh lime juice
  • 1/4 tsp kosher salt

Instructions

Simmer the Filling

  1. Make the Chipotle Chicken Filling
In a large skillet over medium heat, combine the shredded chicken, minced chipotle peppers, tomato sauce, cumin, garlic powder, onion powder, and 2 tablespoons lime juice. Stir well, then simmer for 5 to 7 minutes, stirring occasionally, until the mixture is thick and saucy, with most of the liquid absorbed. The chicken should be coated and rich, not wet. Remove from heat and set aside.
Look for The filling clings to the chicken and no liquid pools at the bottom.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If the mixture looks dry, add a splash of water or extra lime juice.
  2. Warm the Tortillas
Wrap the corn tortillas in a clean kitchen towel and microwave for 30 to 45 seconds, or until pliable. This makes them easier to fold without cracking. Keep them covered while you work.
Look for Tortillas are soft and bendable.
Tip If you don't have a microwave, warm them on a dry skillet for 10 seconds per side.

The chicken mixture should be thick and glossy, with no excess liquid. The spices will be fragrant, and the color will be deep red-brown. Taste a small spoonful to adjust salt or heat. The filling should hold its shape when stirred.

Fold and Griddle

  1. Assemble the Mini Tacos
Lay a warm tortilla on a flat surface. Spoon about 1 tablespoon of the chipotle chicken filling onto one half. Sprinkle with 1 to 2 teaspoons of shredded Monterey Jack cheese. Fold the other half over to form a half-moon, pressing gently.
Look for Tacos are neatly folded and filling stays inside.
Tip Don't overstuff—use just enough filling to keep the taco closed.
  2. Heat the Griddle
Place a griddle or large cast-iron skillet over medium-high heat. Let it get hot for 2 to 3 minutes. You can test by sprinkling a drop of water—it should sizzle immediately.
Look for The surface is hot enough to sear.
Tip A hot surface ensures a crispy, golden crust.
  3. Griddle the Tacos
Place the folded tacos on the hot griddle in a single layer, leaving space between them. Cook for 1 1/2 minutes, then press down gently with a spatula or taco press to flatten slightly. Flip and cook for another 1 1/2 minutes, until both sides are golden brown and blistered, and the cheese is melted and crispy at the edges.
Look for Tacos are golden, crispy, and the cheese forms a lacy edge.
Tip Do not overcrowd; cook in batches if needed.

The tacos should be neatly folded, with the cheese starting to melt and brown at the seams. The tortillas will be golden and blistered on the surface.

The kitchen will smell of toasted corn and melted cheese. Work in batches to avoid crowding.

Finish and Serve

  1. Make the Lime Crema
In a small bowl, stir together the sour cream, lime zest, 1 tablespoon lime juice, and kosher salt until smooth. Taste and adjust salt if needed.
Look for Crema is smooth and tangy.
Tip This can be made ahead and refrigerated.
  2. Serve and Dip
Arrange the crispy tacos on a board or platter. Serve immediately with the lime crema on the side for dipping, or drizzle the crema over the tacos if preferred.
Look for Tacos are still warm and crispy.
Tip For extra crunch, serve right away.

The tacos are crispy, golden, and hot. The crema is smooth and tangy. Arrange them on a board with the crema in a small bowl. Serve immediately so they stay crunchy. The contrast of hot, spicy taco and cool, creamy dip is the final reward.

Common mistakes

Overfilling the tacos can cause them to burst open during cooking. Keep the filling to about a tablespoon. Not warming the tortillas enough can make them crack.

If the griddle isn't hot enough, the tortillas will turn chewy instead of crispy. Pressing too hard can squeeze out the filling; use gentle, even pressure.

How to tell it’s done

The tacos are done when the tortillas are golden brown and blistered on both sides, and the cheese is fully melted and crispy at the edges.

The filling should be hot throughout. If using a thermometer, the chicken should reach 165°F (74°C). Serve immediately for the best crunch.

  • Poultry: 165°F (74°C) in the thickest part
