Tips for success
For the crispiest tacos, use a cast-iron skillet or a well-seasoned comal. These retain heat well and create a good sear. If you do not have a taco press, a heavy skillet works just as well; just press down gently and evenly.
Make sure the skillet is hot before adding the tacos—a drop of water should sizzle immediately. Do not flip the tacos too early; wait until the first side is deeply golden and the cheese has melted and started to crisp. This ensures the taco holds together when you flip it.
To keep the filling from making the tortillas soggy, make sure it is thick and not overly saucy. If it seems too wet, cook it a little longer to evaporate excess liquid. When assembling, do not overfill the tacos; about 1 1/2 tablespoons of filling is perfect for a 5-inch tortilla.
Press the tacos gently to seal them, but do not press so hard that the filling oozes out. If you are making a large batch, keep the cooked tacos warm in a single layer on a baking sheet in a 200°F oven, but they are best eaten immediately.
Variations
- Spicy Chorizo Version: Replace the chicken with cooked, crumbled chorizo sausage. Omit the chipotle peppers and reduce the tomato sauce to 1/4 cup. The chorizo is already spicy and flavorful, so you may only need a pinch of cumin and garlic powder. Proceed with the recipe as written.
- Veggie Black Bean Filling: For a vegetarian option, substitute the chicken with a mixture of black beans and corn. Sauté with the chipotle, tomato sauce, and spices until thick. Use a dairy-free cheese alternative if needed, and serve with a dairy-free crema made from coconut yogurt.
- BBQ Chicken Mini Tacos: Swap the chipotle peppers and tomato sauce for 1/2 cup of your favorite barbecue sauce. Add a teaspoon of smoked paprika for extra depth. The filling will be sweet and smoky, and you can use cheddar cheese instead of Monterey Jack. Serve with a ranch or blue cheese dip.
- Breakfast Tacos: Use the same crispy taco method but fill with scrambled eggs, cooked chorizo or bacon, and shredded cheese. Serve with a salsa verde or avocado crema instead of lime crema. These make a delicious brunch or breakfast-for-dinner option.

Store leftover tacos and crema separately in airtight containers in the refrigerator. The tacos will lose their crispness but can be refreshed in a dry skillet over medium heat for a couple of minutes per side. The crema will keep for up to 3 days. If you have leftover chicken filling, it can be stored in the refrigerator for up to 4 days and used in other dishes like quesadillas or salads.
The chicken filling can be made up to 2 days ahead and stored in the refrigerator. The lime crema can also be prepared in advance and kept chilled. When ready to serve, reheat the filling in a skillet over medium heat, then assemble and griddle the tacos fresh. This makes the recipe even quicker on the day you plan to serve it.
Serving ideas
Serve these mini tacos as a fun appetizer for parties or game day gatherings. Arrange them on a large platter with the lime crema in the center for dipping. They also work well as a main course alongside Mexican rice, refried beans, or a simple salad.

Crispy Chipotle Chicken Mini Tacos: Make 20 Fast

Ingredients
- 2 cups shredded cooked chicken breast
- 2 chipotle peppers in adobo, minced
- 1/2 cup tomato sauce
- 1 tsp ground cumin
- 1 tsp garlic powder
- 1 tsp onion powder
- 2 tbsp fresh lime juice
- 20 corn tortillas (5-inch)
- 1 1/2 cups shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1 tbsp fresh lime juice
- 1 tsp minced chipotle pepper in adobo
- Salt to taste
Instructions
- In a large skillet over medium heat, combine the shredded cooked chicken, minced chipotle peppers in adobo, tomato sauce, ground cumin, garlic powder, onion powder, and fresh lime juice. Stir to coat the chicken evenly with the sauce. Cook, stirring occasionally, until the mixture is thick and saucy and most of the liquid has evaporated, about 5 to 7 minutes. The chicken should be well coated and glossy. Remove from heat and set aside.
- In a small bowl, stir together the sour cream, fresh lime juice, minced chipotle pepper, and salt to taste. Mix until smooth and well combined. Adjust the seasoning with more lime juice or salt if desired. Set aside in the refrigerator until ready to serve.
- Warm the corn tortillas briefly in a dry skillet or on a comal over medium heat until pliable, about 15 seconds per side. Place about 1 1/2 tablespoons of the chipotle chicken filling on one half of each tortilla, then top with about 1 tablespoon of shredded Monterey Jack cheese. Fold the other half over to form a half-moon shape, pressing gently to seal.
- Heat a large skillet or comal over medium-high heat. Place the folded tacos in the skillet in a single layer, working in batches if needed. Use a metal taco press or a heavy skillet to press down on the tacos gently. Cook for 1 1/2 to 2 minutes per side, until the tortillas are golden brown and crispy and the cheese is melted and forms a browned perimeter. Flip once and cook the other side until equally crispy.
- Transfer the crispy mini tacos to a serving board or platter. Serve immediately with the lime crema on the side for dipping. The tacos are best enjoyed hot, when they are at their crunchiest.
