Tips for success
For the crispiest wraps, make sure the fries are fully cooked and hot before adding them. Cold fries will make the wrap soggy.
Also, don't skip toasting the assembled wrap—this step is crucial for creating that crunchy exterior that contrasts with the creamy interior. If you have a cast-iron skillet, use it for the best heat retention and browning.
When rolling the wraps, tuck the sides in firmly and roll from the bottom, keeping the filling compact. If the tortilla tears, it's okay—just toast it seam-side down and it will hold together.
For a fun variation, try adding shredded lettuce or a squeeze of lime juice before rolling. The garlic sauce can be thinned with a little water or buttermilk if you prefer a drizzling consistency.
Variations
- Spicy Harissa Version: Add 1–2 tablespoons of harissa paste to the marinade for an extra kick. Replace the hot sauce in the garlic sauce with harissa to tie the flavors together.
- Crispy Chicken Shawarma Bowl: Skip the tortillas and serve the chicken, fries, sumac onions, and pickles over a bed of rice or salad, drizzled with garlic sauce.
- Vegetarian Shawarma Wrap: Swap the chicken for roasted cauliflower florets tossed in the same spice mixture. Increase the cooking time slightly and ensure the cauliflower is tender and charred.
- Cheesy Shawarma Wrap: Add a slice of melty cheese, such as mozzarella or provolone, before folding the wrap. The cheese will melt during toasting, adding a gooey texture.
Storage and make-ahead

Store leftover wraps (without extra sauce) in an airtight container in the refrigerator for up to 3 days. To reheat, place in a dry skillet over medium heat for 2–3 minutes per side, or until hot and crisp. The garlic sauce can be stored separately in the refrigerator for up to a week.
The chicken can be marinated up to 24 hours in advance, and the sumac onions and garlic sauce can be prepared a day ahead.
Cooked chicken can be refrigerated for up to 3 days and reheated before assembling. The wraps are best assembled fresh, but you can prep all the components ahead to make dinner quick.
Serving ideas
These wraps are a complete meal on their own, but they pair wonderfully with a simple side salad or a bowl of soup.
For a heartier spread, serve with extra pickles, olives, and a bowl of hummus. The garlic sauce is the perfect dipping companion, so be sure to set out a generous portion.
For a fun presentation, cut each wrap in half on the diagonal and arrange on a platter with a small bowl of garlic sauce in the center. Garnish with fresh parsley or a sprinkle of sumac. These wraps are also great for parties—just slice them into smaller pieces and serve as appetizers.

Crispy Chicken Shawarma Wrap with Garlic Sauce

Ingredients
- 2 lb boneless skinless chicken thighs
- 1/2 cup mayonnaise
- 4 cloves garlic, minced
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp ground turmeric
- 1/2 tsp chili powder
- 2 tbsp fresh lemon juice
- 2 tbsp clarified butter
- 1 red onion, thinly sliced
- 1 tsp sumac
- 1/4 cup fresh parsley, chopped
- 1/2 cup mayonnaise
- 1/4 cup sour cream
- 2 tbsp buttermilk
- 1 tbsp ketchup
- 1 tsp hot sauce
- 1/2 tsp garlic powder
- 4 large flour tortillas or flatbreads
- 2 cups seasoned french fries, cooked
- 1/2 cup dill pickles, sliced
- 2 tomatoes, sliced
Instructions
- In a large bowl, combine the mayonnaise, minced garlic, olive oil, smoked paprika, garlic powder, cumin, coriander, turmeric, chili powder, and lemon juice. Add the chicken thighs and toss to coat thoroughly. Cover the bowl and refrigerate for at least 1 hour.
- In a small bowl, combine the sliced red onion, sumac, and chopped parsley. Add a squeeze of lemon juice (about 1 tablespoon) and toss to combine. Set aside.
- In a small bowl, whisk together the mayonnaise, sour cream, buttermilk, ketchup, hot sauce, and garlic powder until smooth. Cover and refrigerate until ready to use.
- Heat a large skillet over medium-high heat and add the clarified butter. When the butter is shimmering, add the marinated chicken thighs in a single layer. Cook for 5–7 minutes per side, until deeply charred and cooked through. The internal temperature should reach 165°F (74°C). Transfer to a cutting board and let rest for 5 minutes before slicing.
- Using a sharp knife, slice the rested chicken into thin strips against the grain. Set aside.
- Lay a tortilla on a clean surface. Spread a generous layer of garlic sauce down the center. Top with a handful of sliced chicken, sumac onions, seasoned fries, pickles, and tomato slices.
- Fold the sides of the tortilla over the filling, then roll from the bottom up, tucking the filling in as you go. The wrap should be snug and secure.
- Heat a clean skillet over medium heat. Place the wraps seam-side down and cook for 2–3 minutes per side, until golden brown and crispy. Press gently with a spatula to ensure even browning.
- Cut each wrap in half and serve immediately with extra garlic sauce on the side for dipping.
