Tips for success
For extra crispy croquettes, double-coat them by repeating the egg and breadcrumb steps. This creates a thicker crust that stays crunchy longer.
Use panko breadcrumbs for an even crunchier texture. When shaping, keep your hands slightly damp to prevent sticking. If the mixture is too soft, refrigerate it for 20 minutes before shaping.
Maintain the oil temperature between 325°F and 350°F. Use a thermometer to monitor it and adjust the heat as needed.
Fry in small batches to avoid lowering the temperature. After frying, drain on paper towels to remove excess oil. Serve with extra chipotle sauce for dipping.
Variations
- Spicy Chorizo Croquettes: Replace the chicken with cooked and crumbled fresh chorizo. Omit the bell peppers and add a diced jalapeño for extra heat. The smoky, spicy flavor pairs well with the creamy chipotle dip.
- Cheesy Bacon Croquettes: Add 1/2 cup crumbled cooked bacon to the filling along with the chicken. Substitute the mozzarella with sharp cheddar for a richer, smokier taste. Serve with ranch dressing instead of chipotle sauce.
- Vegetable Croquettes: Omit the chicken and increase the vegetables to 1 cup each of diced bell peppers, carrots, and green onions. Add 1 cup of frozen peas. The binding will rely more on the potatoes, but the texture remains satisfying.
- Herbed Croquettes: Add 2 tablespoons of chopped fresh parsley and 1 tablespoon of chopped fresh dill to the filling. Use plain breadcrumbs and season them with garlic powder and paprika. The herbs brighten the flavor and complement the chipotle dip.

To reheat, place them on a baking sheet and warm in a 375°F (190°C) oven for 8-10 minutes, until crispy and heated through. Avoid microwaving, as it makes the coating soggy.
You can prepare the croquettes up to the breading step and refrigerate them for up to 24 hours before frying. Cover them loosely with plastic wrap.
Bring them to room temperature for 15 minutes before frying. Alternatively, freeze the breaded croquettes on a baking sheet until solid, then transfer to a freezer bag.
Serving ideas
Serve the croquettes hot with the creamy chipotle dipping sauce on the side. They also pair well with a fresh green salad or coleslaw. For a game day spread, arrange them on a platter with other finger foods like wings and sliders.
These croquettes are best enjoyed immediately after frying. If you have leftovers, reheat them in the oven to restore their crunch. The chipotle sauce can be stored in the refrigerator for up to a week.

Crispy Chicken Potato Croquettes with Chipotle Dipping Sauce

Ingredients
- 4 large russet potatoes, boiled
- 1 lb shredded poached chicken breast
- 1/2 cup diced bell peppers
- 1/4 cup sliced green onions
- 1/2 cup diced boiled carrots
- 1 cup shredded mozzarella cheese
- 1 cup all-purpose flour
- 2 large eggs, beaten
- 2 cups seasoned breadcrumbs
- 3 cups vegetable oil, for frying
- 1 cup creamy chipotle dipping sauce
Instructions
- Place the boiled russet potatoes in a large bowl and mash them well with a potato masher until smooth. Add the shredded poached chicken breast, diced bell peppers, sliced green onions, diced boiled carrots, and shredded mozzarella cheese. Mix everything together until evenly combined.
- Using your hands, shape the potato-chicken mixture into smooth oblong logs, about 3 inches long and 1 inch wide. Set them aside on a plate.
- Place the all-purpose flour in a shallow dish, the beaten eggs in another shallow dish, and the seasoned breadcrumbs in a third dish.
- Dredge each croquette in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off, then roll it in the seasoned breadcrumbs until fully coated. Press gently to help the crumbs adhere.
- Pour the vegetable oil into a deep skillet or Dutch oven and heat over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer to check the temperature.
- Carefully place a few croquettes into the hot oil, making sure not to overcrowd the pan. Fry for 3 to 4 minutes, turning occasionally, until golden brown and heated through. The internal temperature of the chicken should reach 165°F (74°C).
- Use a slotted spoon to transfer the fried croquettes to a paper towel-lined plate to drain. Let them cool for a couple of minutes before serving with the creamy chipotle dipping sauce.
