Before you start

Before starting, ensure the potatoes are boiled and cooled enough to handle. Poach the chicken breast in simmering water until cooked through, then shred it. Dice the bell peppers, green onions, and carrots.

Set up your breading station with three shallow dishes. Have a deep skillet or Dutch oven ready for frying, and line a plate with paper towels. Keep the chipotle dipping sauce refrigerated until serving.

Ingredients at a glance (11)
  • 4 large russet potatoes, boiled
  • 1 lb shredded poached chicken breast
  • 1/2 cup diced bell peppers
  • 1/4 cup sliced green onions
  • 1/2 cup diced boiled carrots
  • 1 cup shredded mozzarella cheese
  • 1 cup all-purpose flour
  • 2 large eggs, beaten
  • 2 cups seasoned breadcrumbs
  • 3 cups vegetable oil, for frying
  • 1 cup creamy chipotle dipping sauce

Instructions

Prepare the Filling

  1. Boil and Mash the Potatoes
Place the boiled russet potatoes in a large bowl and mash them well with a potato masher until smooth. Add the shredded poached chicken breast, diced bell peppers, sliced green onions, diced boiled carrots, and shredded mozzarella cheese. Mix everything together until evenly combined.
Look for The mixture should hold together when pressed but not be sticky.
Tip Make sure the potatoes are well-drained and dry before mashing to avoid a soggy mixture.
  2. Shape the Croquettes
Using your hands, shape the potato-chicken mixture into smooth oblong logs, about 3 inches long and 1 inch wide. Set them aside on a plate.
Look for The logs should be compact and uniform in size for even frying.
Tip Dampen your hands slightly to prevent the mixture from sticking.

The filling should be cohesive and easy to shape. It should hold together when pressed but not be overly sticky.

The vegetables should be evenly distributed, and the cheese should be visible throughout. If the mixture feels too wet, add a few extra breadcrumbs or let it chill for 15 minutes.

Bread the Croquettes

  1. Set Up the Breading Station
Place the all-purpose flour in a shallow dish, the beaten eggs in another shallow dish, and the seasoned breadcrumbs in a third dish.
Look for Have a clean plate ready for the breaded croquettes.
Tip Use one hand for wet ingredients and the other for dry to avoid clumping.
  2. Bread the Croquettes
Dredge each croquette in the flour, shaking off any excess. Dip it into the beaten eggs, allowing any excess to drip off, then roll it in the seasoned breadcrumbs until fully coated. Press gently to help the crumbs adhere.
Look for The coating should cover the entire surface evenly.
Tip For a thicker crust, repeat the egg and breadcrumb steps once more.

Each croquette should be evenly coated with flour, then egg, then breadcrumbs. The coating should adhere well without clumping. The logs should be uniform in size and shape. If any cracks appear, patch them with a bit of the mixture and re-coat.

Fry and Serve

  1. Heat the Oil
Pour the vegetable oil into a deep skillet or Dutch oven and heat over medium-high heat until it reaches 350°F (175°C). Use a kitchen thermometer to check the temperature.
Look for A small piece of bread dropped in should sizzle and turn golden in about 30 seconds.
Tip Maintain the oil temperature between 325°F and 350°F for even cooking.
  2. Fry the Croquettes
Carefully place a few croquettes into the hot oil, making sure not to overcrowd the pan. Fry for 3 to 4 minutes, turning occasionally, until golden brown and heated through. The internal temperature of the chicken should reach 165°F (74°C).
Look for The croquettes should be deep amber brown and crisp all over.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Fry in batches to keep the oil temperature steady.
  3. Drain and Serve
Use a slotted spoon to transfer the fried croquettes to a paper towel-lined plate to drain. Let them cool for a couple of minutes before serving with the creamy chipotle dipping sauce.
Look for The croquettes should be crisp and hold their shape when picked up.
Tip Serve immediately for the best crunch.

The croquettes should be golden brown and crisp. They should float in the oil and sizzle gently. The interior should be hot and the cheese melted. Serve them immediately with the chipotle dipping sauce for the best texture.

Common mistakes

One common mistake is not drying the potatoes well, which can make the mixture too wet and difficult to shape. Another is overcrowding the pan, which lowers the oil temperature and results in greasy croquettes.

Be sure to fry in small batches and maintain the oil temperature. Also, avoid overmixing the filling, as it can become pasty. Finally, do not skip the resting time after frying—it helps the crust set.

How to tell it’s done

The croquettes are done when they are golden brown and crispy on the outside, and the internal temperature of the chicken reaches 165°F (74°C). Insert an instant-read thermometer into the center of a croquette to check.

The exterior should be deep amber and sound crunchy when tapped. Let them rest for a minute before serving to allow the cheese to set slightly.

  • Poultry: 165°F (74°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
