Tips for success
For extra crispy chicken, make sure the griddle is very hot before adding the tacos. You can also use a cast iron press to get an even, deep sear. If you don't have a press, a heavy skillet works just as well—just be careful not to break the tortillas.
To keep the tacos from getting soggy, assemble them right before serving. If making for a crowd, keep the cooked tacos warm in a low oven and let everyone top their own. You can also serve the dressing on the side so guests can add as much as they like.
Variations
- Spicy Chipotle: Add 1-2 tablespoons of chopped chipotle peppers in adobo sauce to the chicken mixture before pressing. For extra heat, drizzle with hot sauce or add sliced jalapeños to the salad.
- Avocado Caesar: Add sliced or mashed avocado to the tacos before topping with the Caesar salad. You can also blend a ripe avocado into the dressing for extra creaminess.
- Grilled Chicken Version: Instead of ground chicken, use thinly sliced chicken breast or thighs, seasoned and grilled, then sliced and placed on the tortillas. Skip the smashing step and just toast the tortillas.
- Vegetarian Option: Replace the chicken with smashed black beans or a plant-based ground meat substitute. Press the mixture onto tortillas and cook as directed. Use a vegetarian Worcestershire sauce or omit it.
Storage and make-ahead
- Fridge
- Store leftover chicken and tortillas in an airtight container in the refrigerator for up to 3 days. Keep the salad and dressing separately.
- Freezer
- Freeze cooked chicken tacos (without salad) in a single layer in a freezer-safe bag for up to 2 months.
- Reheat
- Reheat leftover tacos in a skillet over medium heat for 2-3 minutes per side, or in a 350°F (175°C) oven for 5-7 minutes, until heated through and crispy.
Store leftover chicken tacos and salad separately in airtight containers in the refrigerator. The chicken and tortillas will keep for up to 3 days, and the dressed salad for up to 2 days.
Reheat the tacos in a skillet or oven to restore crispness, and refresh the salad with a little extra dressing if needed.
You can prepare the Caesar dressing up to 3 days ahead and store it in the refrigerator. The chicken can be seasoned and pressed onto tortillas a few hours in advance, but keep them refrigerated until ready to cook.
The romaine can be washed and shredded a day ahead, but toss with dressing just before serving.
Serving ideas
Serve these tacos immediately after assembling to enjoy the contrast of warm, crispy shells and cool, crisp salad.
They're perfect for a fun weeknight dinner or a casual gathering. Pair them with a side of black beans or a simple fruit salad for a complete meal.
For a more substantial meal, add a side of Mexican rice or grilled corn.
These tacos are also great for meal prep—cook the chicken and tortillas, then pack them separately with the salad and dressing. Assemble when ready to eat for a fresh, satisfying lunch.

Crispy Chicken Caesar Smash Tacos

Ingredients
- 2 lb ground chicken
- 1 tsp salt
- 1/2 tsp black pepper
- 8 mini flour tortillas
- 1/2 cup mayonnaise
- 1 tbsp Dijon mustard
- 2 cloves garlic, minced
- 2 tbsp lemon juice
- 2 tbsp olive oil
- 1 tsp Worcestershire sauce
- 4 cups shredded romaine lettuce
- 1/2 cup shaved parmesan cheese
Instructions
- In a large bowl, combine the ground chicken with salt and black pepper. Mix gently until just combined. Divide the mixture into 8 equal portions and roll each into a ball. Press each ball firmly onto a mini flour tortilla, spreading the chicken evenly to the edges.
- Place a large skillet or griddle over medium-high heat. Let it get hot for a few minutes until a drop of water sizzles immediately. No need to add oil, as the chicken will release some fat.
- Place the tortillas chicken-side down onto the hot griddle. Use a cast iron press or a heavy pan to press them down firmly. Cook for 3 minutes without moving, until the chicken is deeply caramelized and crispy at the edges.
- Carefully flip each taco so the tortilla side is down. Cook for 1-2 minutes until the tortilla is golden and crisp. The chicken should reach an internal temperature of 165°F (74°C). Transfer to a plate and keep warm.
- In a small bowl, whisk together the mayonnaise, Dijon mustard, minced garlic, lemon juice, olive oil, and Worcestershire sauce until smooth and creamy.
- In a large bowl, combine the shredded romaine lettuce with the Caesar dressing. Toss until the lettuce is evenly coated.
- Pile the dressed romaine onto each crispy chicken tortilla. Shower with shaved parmesan cheese. Serve immediately.
