Tips for success
For the crispiest chicken, make sure the oil is hot before adding the cutlets. Test by dropping a pinch of panko into the oil; if it sizzles immediately, it’s ready.
Don’t move the chicken too soon – let it cook undisturbed for at least 3 minutes so the crust sets. Use tongs to flip gently to avoid breaking the coating.
If you’re making a double batch, keep the cooked cutlets warm on a baking sheet in a 200°F (93°C) oven while you cook the rest.
This also helps keep the crust crisp. For extra flavor, brush the toasted buns with a little garlic butter instead of plain butter.
Variations
- Spicy Kick: Add 1/2 teaspoon of cayenne pepper or a few dashes of hot sauce to the egg wash before breading. You can also spread a little sriracha mayo on the toasted buns for extra heat.
- Grilled Chicken: Skip the breading and instead grill the chicken breasts after seasoning. Brush with olive oil and grill over medium-high heat for 4-5 minutes per side, until cooked through. Assemble the sandwich with the same Caesar romaine and parmesan.
- Bacon Caesar: Add 2 slices of crispy cooked bacon to each sandwich. The smoky, salty flavor pairs beautifully with the Caesar dressing and adds an extra layer of crunch.
- Wrap-Style: Instead of brioche buns, serve the crispy chicken and Caesar romaine wrapped in a large flour tortilla or lettuce wrap. This makes a portable, lower-carb version.
Storage and make-ahead
- Fridge
- Store leftover chicken, romaine, and buns separately in airtight containers in the refrigerator for up to 2 days.
- Freezer
- Freeze cooked chicken cutlets in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat chicken cutlets in a toaster oven or skillet over medium heat for 3-4 minutes per side, until hot and crisp. Avoid microwave to keep the crust crunchy.
Store leftover chicken cutlets and romaine separately in airtight containers in the refrigerator for up to 2 days. The buns can be stored at room temperature in a sealed bag or container.
Reheat the cutlets in a toaster oven or skillet to restore crispness, and refresh the romaine with a little extra dressing if needed.
The chicken can be breaded up to 4 hours ahead and kept in the refrigerator. The romaine can be washed and shredded a day ahead, and the dressing can be measured. Assemble the sandwiches just before serving to keep the bread from getting soggy.
Serving ideas
Serve the sandwiches immediately after assembly, while the chicken is still hot and crispy.
The contrast between the warm, crunchy cutlet and the cold, creamy romaine is best experienced right away. Cut the sandwiches in half for easier handling, and serve with extra napkins.
These sandwiches pair well with a simple side of potato chips, a green salad, or roasted vegetables. For a more indulgent meal, serve with fries or onion rings. The Caesar dressing can also be used as a dip for the sandwich if you like extra flavor.

Crispy Chicken Caesar Sandwich on Buttered Brioche

Ingredients
- 2 boneless, skinless chicken breasts (about 6 oz each)
- 1 tsp garlic powder
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
- 1 large egg
- 1 cup seasoned panko breadcrumbs
- 2 cups shredded romaine lettuce
- 1/4 cup Caesar dressing
- 1/4 cup shaved parmesan cheese
- 2 brioche buns, split
- 2 tbsp unsalted butter, softened
Instructions
- Place one chicken breast between two sheets of plastic wrap. Pound with a meat mallet or rolling pin to an even 1/2-inch thickness. Repeat with the second breast. Season both sides with garlic powder, salt, and black pepper.
- Crack the egg into a shallow dish and beat with a fork. Place the panko breadcrumbs in a second shallow dish. Working with one piece at a time, dip the chicken into the egg, letting any excess drip off, then press firmly into the panko to coat both sides.
- Heat a large skillet over medium heat and add a thin layer of oil. When the oil shimmers, add the breaded chicken cutlets. Cook for 3-4 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C). Transfer to a plate.
- Spread the cut sides of the brioche buns with softened butter. Place them buttered-side down in the same skillet over medium heat. Toast for 1-2 minutes, until golden and fragrant. Remove from the skillet.
- In a medium bowl, combine the shredded romaine, Caesar dressing, and half of the shaved parmesan. Toss until the lettuce is evenly coated.
- Place a crispy chicken cutlet on the bottom half of each toasted brioche bun. Top with the Caesar-dressed romaine and the remaining shaved parmesan. Cap with the top bun and press gently.
- Cut the sandwiches in half if desired and serve right away while the chicken is still crispy and the buns are warm.
