Before you start

Before you start, gather all the ingredients and set up your workspace. Place the chicken between plastic wrap and pound to even thickness. Set up three shallow dishes: one with the beaten egg, one with the panko, and one for the seasoned chicken if you like.

Have the romaine washed and shredded, the dressing measured, and the parmesan shaved. Soften the butter if needed. Heat a large skillet over medium heat while you bread the chicken. Having everything ready makes the cooking process smooth and quick.

Ingredients at a glance (11)
  • 2 boneless, skinless chicken breasts (about 6 oz each)
  • 1 tsp garlic powder
  • 1/2 tsp kosher salt
  • 1/4 tsp black pepper
  • 1 large egg
  • 1 cup seasoned panko breadcrumbs
  • 2 cups shredded romaine lettuce
  • 1/4 cup Caesar dressing
  • 1/4 cup shaved parmesan cheese
  • 2 brioche buns, split
  • 2 tbsp unsalted butter, softened

Instructions

Prepare the Chicken

  1. Pound and Season the Chicken
Place one chicken breast between two sheets of plastic wrap. Pound with a meat mallet or rolling pin to an even 1/2-inch thickness. Repeat with the second breast. Season both sides with garlic powder, salt, and black pepper.
Look for The chicken is uniformly thin and evenly seasoned.
Tip Pounding to an even thickness ensures quick, even cooking.
  2. Set Up the Breading Station
Crack the egg into a shallow dish and beat with a fork. Place the panko breadcrumbs in a second shallow dish. Working with one piece at a time, dip the chicken into the egg, letting any excess drip off, then press firmly into the panko to coat both sides.
Look for The chicken is fully coated with an even layer of panko.
Tip Press the panko gently so it adheres without clumping.

At the end of this phase, the chicken breasts are pounded to an even 1/2-inch thickness and seasoned on both sides. The egg wash is beaten, and the panko is in a shallow dish.

The breading station is ready, and the chicken is coated with a thin, even layer of panko. The cutlets should look dry and crumbly, not wet or clumpy.

Cook the Cutlets and Toast the Buns

  1. Cook the Chicken Cutlets
Heat a large skillet over medium heat and add a thin layer of oil. When the oil shimmers, add the breaded chicken cutlets. Cook for 3-4 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C). Transfer to a plate.
Look for The crust is deep golden and crispy; the chicken is cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Use tongs to turn gently, keeping the crust intact.
  2. Toast the Brioche Buns
Spread the cut sides of the brioche buns with softened butter. Place them buttered-side down in the same skillet over medium heat. Toast for 1-2 minutes, until golden and fragrant. Remove from the skillet.
Look for The buns are golden and crisp on the cut sides.
Tip Wipe the skillet if needed to avoid burning bits.

The chicken cutlets are golden brown and crispy, with an internal temperature of 165°F (74°C). The brioche buns are toasted to a light golden color, with the butter melted and fragrant. The kitchen smells like toasted bread and sizzling chicken. The cutlets are resting on a plate, and the buns are ready for assembly.

Assemble and Serve

  1. Toss the Caesar Romaine
In a medium bowl, combine the shredded romaine, Caesar dressing, and half of the shaved parmesan. Toss until the lettuce is evenly coated.
Look for The romaine is lightly coated, not soggy.
Tip Add dressing gradually to avoid overdressing.
  2. Assemble the Sandwiches
Place a crispy chicken cutlet on the bottom half of each toasted brioche bun. Top with the Caesar-dressed romaine and the remaining shaved parmesan. Cap with the top bun and press gently.
Look for The sandwich is tall, colorful, and ready to bite.
Tip Press lightly so the filling stays inside.
  3. Serve Immediately
Cut the sandwiches in half if desired and serve right away while the chicken is still crispy and the buns are warm.
Look for The cutlet stays crunchy; the dressing is creamy.
    Tip Serve with extra napkins!

The romaine is tossed with Caesar dressing and parmesan, evenly coated. The sandwiches are assembled: chicken on the bottom bun, topped with the dressed romaine and extra parmesan, then closed with the top bun. They are pressed gently and cut in half if desired. The cutlets are still crispy, and the buns are warm.

Common mistakes

One common mistake is using chicken breasts that are too thick, which leads to undercooked centers or burnt crust. Always pound to an even thickness. Another is overcrowding the skillet; this lowers the oil temperature and makes the crust soggy.

Cook the cutlets in a single layer, in batches if necessary. Overdressing the romaine can make the sandwich messy and soggy; start with less dressing and add more if needed. Finally, don’t skip toasting the buns – it adds necessary texture and flavor.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) on an instant-read thermometer inserted into the thickest part. The crust should be deep golden brown and crispy, and the juices should run clear.

Because the cutlets are thin, they cook quickly, so check them after 3 minutes per side. The brioche buns are done when they are golden and toasted on the cut sides. The romaine should be lightly coated, not dripping with dressing.

  • Poultry: 165°F (74°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
