Before you start

Before you start, make sure the chicken breasts are pounded to an even thickness. Set up your breading station with three shallow dishes: one for the beaten eggs, one for the panko mixture, and one for the raw chicken.

Have a large skillet ready with the olive oil heating over medium-high. Cook the pasta ahead of time if you want it fully cool; otherwise, rinse it under cold water after draining.

Measure out all dressing ingredients so you can whisk them together quickly.

Ingredients at a glance (17)
  • 1 1/2 lb boneless, skinless chicken breasts
  • 2 large eggs
  • 1 1/2 cups panko breadcrumbs
  • 1 tsp garlic powder
  • 1/2 cup grated parmesan cheese
  • 1/2 cup olive oil
  • 1/2 cup mayonnaise
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, grated
  • 2 tbsp fresh lemon juice
  • 1/4 cup grated parmesan cheese
  • 1/2 tsp black pepper
  • 12 oz bowtie (farfalle) pasta
  • 2 hearts romaine lettuce, chopped
  • 1 cup cherry tomatoes, halved
  • 1/2 cup shaved parmesan cheese

Instructions

Prep and Fry the Chicken

  1. Pound and Bread the Chicken
Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Set up a breading station: one dish with the beaten eggs, and another with the panko, garlic powder, and 1/2 cup grated parmesan mixed together. Dip each chicken breast in the egg, letting the excess drip off, then press firmly into the panko mixture until evenly coated.
Look for The chicken is evenly coated and the breading adheres well.
Tip Pounding to an even thickness ensures quick, even cooking.
  2. Fry the Chicken Until Crispy
Heat the olive oil in a large skillet over medium-high heat. When the oil shimmers, add the breaded chicken in a single layer (work in batches if needed). Cook for 3-4 minutes per side, until golden brown and the internal temperature reaches 165°F (74°C). Transfer to a paper towel-lined plate and let rest for a few minutes before slicing.
Look for The crust is deeply golden and the chicken is cooked through.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip Don't overcrowd the pan—crispiness depends on good contact with the oil.
  3. Make the Caesar Dressing
In a small bowl, whisk together the mayonnaise, Dijon mustard, Worcestershire sauce, grated garlic, lemon juice, 1/4 cup grated parmesan, and black pepper. Whisk until smooth and creamy. Set aside in the refrigerator while you prepare the pasta and vegetables.
Look for The dressing is thick, velvety, and well combined.
Tip Taste and adjust the lemon or pepper to your liking.

At the end of this phase, the chicken breasts are pounded thin, breaded, and fried until golden brown and cooked through. The crust should be shatteringly crisp, and the interior juicy. The dressing is whisked and chilling in the fridge.

Cook the Pasta and Slice the Chicken

  1. Cook the Pasta
Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package directions until al dente, usually 10-12 minutes. Drain and rinse briefly under cold water to stop the cooking and cool the pasta quickly. Set aside.
Look for The pasta is tender but still has a slight bite.
Tip Rinsing stops cooking and keeps the pasta from sticking.
  2. Slice the Chicken
Once the chicken has rested, slice it into thin strips. The crust should be very crispy and the interior juicy. Set aside.
Look for The slices show a crisp golden crust and moist interior.
Tip Slice just before assembling to keep the crunch.

The pasta is cooked al dente and cooled, and the chicken has rested and been sliced into strips. The kitchen smells of garlic and toasted breadcrumbs. The chicken slices show a crisp golden crust.

Toss and Serve

  1. Assemble the Salad
In a large bowl, combine the cooled pasta, chopped romaine, cherry tomatoes, sliced chicken, and shaved parmesan. Drizzle the Caesar dressing over the top and toss gently with tongs until everything is evenly coated.
Look for The dressing coats every piece without drowning the salad.
Tip Add the dressing gradually—you may not need all of it.
  2. Serve Immediately
Transfer the salad to serving plates or a large platter. Finish with an extra sprinkle of shaved parmesan and a few cracks of black pepper if desired. Serve right away so the chicken stays crispy.
Look for The salad looks vibrant with golden chicken, green lettuce, and red tomatoes.
Tip For the crispiest texture, serve immediately after tossing.

The salad is assembled in a large bowl with the pasta, romaine, tomatoes, chicken, and parmesan, then tossed with the creamy dressing. It looks vibrant and inviting, with every ingredient coated and the chicken still crunchy.

Common mistakes

One common mistake is overcrowding the pan when frying the chicken, which lowers the oil temperature and makes the crust soggy. Fry in batches if needed. Another is adding the dressing too early, which wilts the romaine and softens the chicken crust.

Toss the salad right before serving. Also, be careful not to overcook the pasta—mushy pasta ruins the texture. Finally, don’t skip resting the chicken after frying; it keeps the juices in and makes slicing easier.

How to tell it’s done

The chicken is done when it reaches an internal temperature of 165°F (74°C) and the crust is deeply golden and crispy. The pasta should be al dente—tender but still firm to the bite.

The salad is ready when everything is evenly coated with the dressing and the romaine is crisp and fresh. Taste and adjust the seasoning with salt, pepper, or extra lemon before serving.

  • Poultry: 165°F (74°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
