Tips for success
For the crispiest chicken, make sure the oil is hot before adding the cutlets—test by dropping a breadcrumb into the pan; it should sizzle immediately.
Use a neutral oil with a high smoke point, like canola or vegetable. After frying, place the cutlets on a wire rack set over a baking sheet to keep them crisp while you toast the bread.
If you prefer a spicier kick, add a pinch of red pepper flakes to the garlic butter or a drizzle of hot sauce on the chicken before adding the cheese.
For a more indulgent sandwich, add a few extra slices of provolone or a sprinkle of grated parmesan on top before closing the sandwich. The key is to balance the richness with the peppery arugula.
Variations
- Spicy Chicken Alfredo: Add a teaspoon of hot sauce to the egg wash or sprinkle the chicken with cayenne before coating. Use pepper jack cheese instead of provolone for an extra kick.
- Chicken Parmesan Style: Swap the Alfredo sauce for marinara, use mozzarella instead of provolone, and add a sprinkle of grated parmesan on top. Omit the arugula or replace with fresh basil.
- Gluten-Free Version: Use gluten-free panko breadcrumbs and serve on gluten-free ciabatta or a sturdy gluten-free bread. Ensure the Alfredo sauce is gluten-free as well.
- Veggie Alfredo Sandwich: Replace the chicken with thick slices of grilled eggplant or portobello mushrooms, breaded and fried in the same panko mixture. Follow the same assembly steps.
Storage and make-ahead
- Fridge
- Store leftover chicken cutlets in an airtight container in the fridge for up to 3 days.
- Freezer
- Freeze cooked chicken cutlets in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat leftover cutlets in a toaster oven or skillet at 350°F for 5-7 minutes to restore crispiness. Avoid microwaving, as it makes the coating soggy.
Store leftover sandwich components separately: chicken cutlets, bread, and sauce in airtight containers in the refrigerator. The cutlets will keep for up to 3 days, and the sauce for up to 5 days. Reheat the chicken in a toaster oven or skillet to restore crispiness.
You can pound and bread the chicken cutlets up to a day in advance, keeping them covered in the refrigerator. The garlic butter can also be made ahead and stored in the fridge. When ready to serve, simply cook the chicken and toast the bread as directed.
Serving ideas
Serve the sandwich immediately after slicing, while the cheese is still molten and the chicken is at its crispiest.
Pair it with a simple side salad, roasted potatoes, or a bowl of tomato soup for a complete meal. For a lighter option, serve with a crunchy slaw or pickles to cut through the richness.
This sandwich is substantial enough to be a meal on its own, but it also works well as a hearty appetizer if you cut it into smaller pieces.
For a game-day spread, slice it into wedges and serve with extra Alfredo sauce for dipping. The contrast of textures and flavors makes it a crowd-pleaser.

Crispy Chicken Alfredo Sandwich with Garlic Ciabatta

Ingredients
- 1 lb boneless, skinless chicken breasts
- 1 tsp dried Italian herbs
- 1 tsp garlic powder
- 1 tsp salt
- 2 large eggs
- 1 1/2 cups panko breadcrumbs
- 1 loaf ciabatta bread (about 12 oz)
- 4 tbsp unsalted butter, softened
- 2 cloves garlic, minced
- 1 cup Alfredo sauce (store-bought or homemade)
- 6 slices provolone cheese
- 1 cup fresh baby arugula
Instructions
- Place the chicken breasts between two sheets of plastic wrap and pound to an even 1/2-inch thickness. Season both sides with Italian herbs, garlic powder, and salt. Set up a dredging station with beaten eggs in one shallow bowl and panko in another.
- Dip each pounded chicken breast into the beaten eggs, letting any excess drip off, then press firmly into the panko breadcrumbs until fully coated. Shake off any loose crumbs and set the coated cutlets on a plate.
- Heat a large skillet over medium-high heat with a thin layer of oil. Add the breaded chicken cutlets and cook for 3-4 minutes per side until golden brown and cooked through. The internal temperature should reach 165°F (74°C). Transfer to a wire rack to keep crispy.
- In a small bowl, mix the softened butter with the minced garlic. Slice the ciabatta loaf in half horizontally. Spread the garlic butter on the cut sides. Place the bread cut-side down in a hot skillet or under a broiler until golden and toasted.
- Spread a generous layer of Alfredo sauce on the bottom half of the toasted ciabatta. Place the crispy chicken cutlets on top, then layer the provolone cheese slices. Add the fresh arugula over the cheese and close the sandwich with the top half of the bread.
- Place the assembled sandwich back in the skillet or a panini press. Press down gently and toast for 2-3 minutes per side, until the bread is extra crispy and the cheese is melted and bubbly.
- Remove the sandwich from the heat and let it rest for a minute. Slice in half with a sharp knife and serve immediately while the cheese is molten and the chicken is crispy.
