Tips for success

To take these tacos to the next level, consider warming the taco shells with a light spray of cooking oil before placing them in the oven. This helps release the natural oils in the corn shells, making them taste fresher and preventing them from cracking too easily when you bite into them.

Additionally, keeping the seasoned beef and the queso covered until the exact moment of assembly ensures that everything remains piping hot and easy to assemble.

If you find that your cheese sauce is too thick to pour smoothly, stir in a tablespoon of milk at a time until it reaches your desired consistency.

Be careful not to add too much liquid at once, as a runny cheese sauce will quickly make the crispy taco shells soggy. Always stir the cheese sauce thoroughly right before pouring to distribute the tomatoes and chilies evenly.

Variations

  • Spicy Jalapeño Tacos: Add finely diced fresh jalapeños to the ground beef while browning, and use hot diced tomatoes with green chilies in the queso for an extra kick of heat.
  • Black Bean and Beef Tacos: Stir a drained can of black beans into the seasoned ground beef during the last minute of simmering to add texture and expand the filling.

Storage and make-ahead

Fridge
Store leftover beef and cheese sauce separately in airtight containers in the refrigerator for up to 3 days.
Freezer
The seasoned beef can be frozen in an airtight container for up to 3 months; freezing the cheese sauce is not recommended.
Reheat
Reheat beef in a skillet over medium heat. Reheat the cheese sauce on the stove over low heat, stirring and adding a splash of milk if needed.

Store any leftover seasoned ground beef and Rotel cheese sauce in separate airtight containers in the refrigerator. Do not store assembled tacos, as the shells will become soggy and lose their crispy texture.

Leftovers should be cooled to room temperature for no more than two hours before being placed in the refrigerator, where they will keep safely for up to three days. Keep the fresh toppings separate as well.

You can easily prepare the seasoned ground beef and the Rotel cheese sauce up to twenty-four hours in advance. Keep them in separate airtight containers in the refrigerator. When you are ready to serve, reheat the beef in a skillet, and warm the cheese sauce on the stove over low heat, stirring frequently. Warm the taco shells and assemble fresh just before serving.

Serving ideas

Present these loaded tacos on a large, vibrant platter lined up side-by-side to keep them upright and prevent the fillings from spilling out.

Serve them alongside a bowl of tortilla chips to scoop up any delicious cheese sauce or seasoned beef that falls out of the shells during eating. They make a fantastic centerpiece for a casual dinner party or game day gathering.

To complete the meal, offer additional toppings on the side so guests can customize their plates. Bowls of cool sour cream, sliced jalapeños, shredded lettuce, and fresh lime wedges complement the rich, warm cheese sauce beautifully. Pair these tacos with a side of Mexican rice or refried beans for a hearty and satisfying Tex-Mex feast.

Frequently asked questions

Can real cheddar cheese be used instead of processed cheese?
Real cheddar cheese can split or turn greasy when melted into a sauce. For a smooth, pourable queso, processed cheese is highly recommended, but you can stir in a handful of shredded cheddar at the very end for extra flavor.
How are the taco shells kept from breaking during assembly?
Warming the taco shells in the oven for a few minutes makes them more pliable and less prone to cracking. Always handle them gently and fill them carefully on a flat surface.
Can ground turkey be substituted for the ground beef?
Yes, lean ground turkey can be used as a direct substitute. Be sure to cook it to a safe internal temperature of 165°F (74°C) instead of 160°F (71°C).

Three crispy beef tacos loaded with seasoned meat and dripping with warm yellow Rotel cheese sauce on a plate.

Ingredients

  • 1 lb ground beef
  • 1 oz taco seasoning
  • 8 oz processed cheese cubes
  • 10 oz canned diced tomatoes with green chilies, undrained
  • 8 crispy taco shells
  • 1/2 cup diced fresh tomatoes
  • 1/4 cup chopped fresh cilantro

Instructions

  1. Place a large skillet over medium-high heat. Add the ground beef to the hot skillet, breaking it up into small pieces with a wooden spoon. Cook the beef, stirring occasionally, until it is fully browned and no pink remains, which should take about 5 to 7 minutes.
  2. Carefully drain any excess grease from the skillet. Reduce the heat to medium, then sprinkle the taco seasoning over the browned beef. Stir well to combine, and cook for 2 to 3 minutes until the seasoning is fragrant and evenly coats the meat. Ensure the ground beef reaches a safe internal temperature of 160°F (71°C) before removing it from the heat.
  3. In a medium saucepan over low heat, combine the processed cheese cubes and the undrained can of diced tomatoes with green chilies. Cook, stirring constantly, for 5 to 8 minutes until the cheese is completely melted, smooth, and well incorporated with the tomatoes and chilies.
  4. Arrange the crispy taco shells on a baking sheet. Place them in the preheated oven at 350°F (177°C) for 3 to 5 minutes until they are warm, fragrant, and extra crispy. Remove them carefully from the oven.
  5. Place the warmed taco shells on a serving platter. Divide the seasoned ground beef evenly among the shells. Pour a generous amount of the warm Rotel queso sauce over the beef in each taco.
  6. Sprinkle the fresh diced tomatoes and chopped fresh cilantro over the top of the cheese-smothered tacos. Serve immediately while the shells are crispy and the cheese sauce is warm and melting.
