Before you start

Before beginning, ensure the oven is preheated to 375°F (190°C) to allow for even baking. Prepare the baking sheet by lining it with aluminum foil, which simplifies cleanup and helps the rolls slide off easily.

Have all ingredients measured and ready, especially the cheese and browned beef, to streamline the assembly process once the dough is unrolled.

Ingredients at a glance (3)
  • 1 can refrigerated crescent roll dough, store-bought or made ahead
  • 1 lb ground beef
  • 1 cup shredded cheddar cheese

Instructions

Beef Preparation

  1. Prepare the Beef Filling
Heat a skillet over medium-high heat. Add the ground beef and cook, breaking it apart with a spoon until thoroughly browned and reaching an internal temperature of at least 160°F (71°C). Drain any excess fat completely and set aside to cool slightly before assembling the rolls.
Look for The beef is fully browned and no longer pink.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Ensure the meat is not too greasy, as excess fat can make the dough soggy.

The ground beef should be fully browned. The texture should be loose and crumbly, and any excess liquid or fat must be drained to prevent the pastry from becoming soggy. The mixture should be warm or at room temperature before being added to the dough.

Assembly

  1. Assemble the Crescent Rolls
Preheat the oven to 375°F (190°C). Unroll the crescent roll dough and separate it into triangles along the perforations. Place a spoonful of the cooked ground beef and a sprinkle of shredded cheddar cheese onto the wide end of each triangle. Roll up the dough starting from the wide end toward the pointed tip to create the classic crescent shape.
Look for The rolls are tightly sealed to prevent the cheese from leaking.
Tip Press the edges of the dough gently to secure the filling inside.

The crescent dough triangles should be laid out flat with a consistent amount of beef and cheese in the center of each.

Each roll should be tightly wrapped from the base to the tip, ensuring the filling is completely encased within the dough layers to prevent leakage during the baking phase.

Baking

  1. Bake the Rolls
Place the assembled rolls on a baking sheet lined with aluminum foil. Bake for 12 to 15 minutes or until the pastry turns deep golden brown and the cheese is visibly bubbling on the edges. Remove from the oven and let them rest for 5 minutes before serving warm.
Look for The rolls turn a deep golden brown and the cheese is melted.
Tip Keep an eye on the oven to avoid burning the tips of the crescents.

The rolls should be positioned on the baking sheet with enough space between them to allow for expansion. As they bake, the pastry will puff up and turn a rich golden brown. The cheese should be melted and bubbling, signaling that the rolls are ready to be removed from the oven.

Common mistakes

Avoid overstuffing the crescent rolls, as this can cause them to burst and leak cheese during the baking process. Ensure the edges are properly sealed; otherwise, the filling may spill out onto the baking sheet.

Finally, do not overcrowd the baking pan, as this prevents the hot air from circulating and can result in soft, doughy bottoms instead of the desired crispy texture.

How to tell it’s done

The rolls are finished when the pastry has achieved a deep, uniform golden-brown color and the internal temperature of the beef filling has reached 160°F (71°C).

The cheese should be visibly bubbling and melted, and the dough should feel firm and crisp to the touch, indicating that the layers have cooked through properly.

  • Ground meat: 160°F (71°C) in the thickest part
