Before you start

Before beginning, ensure all ingredients are measured and ready. If you are roasting your cauliflower from scratch, do so in advance and allow it to cool completely to room temperature.

Prepare a clean workspace with your food processor, a tray for the shaped croquettes, and a plate lined with paper towels for draining the finished bites. Having everything organized will allow for a smooth transition from pulsing the mixture to shaping and frying.

Ingredients at a glance (11)
  • 400 g roasted cauliflower florets
  • 200 g drained chickpeas
  • 1 bunch fresh parsley and cilantro
  • 3 cloves garlic
  • 1 tbsp toasted cumin
  • 1 tsp coriander
  • 40 g chickpea flour
  • 1/2 cup white and black sesame seeds
  • 2 cups sunflower oil
  • 1/4 cup lemon-garlic tahini
  • 1 tsp sumac

Instructions

Mixing the base

  1. Prepare the croquette base
Combine the roasted cauliflower, drained chickpeas, fresh parsley, fresh cilantro, garlic, toasted cumin, coriander, and chickpea flour in a food processor. Pulse the mixture until it is well combined but still retains some texture. Be careful not to over-process into a paste.
Look for The mixture should hold its shape when pressed together between your fingers.
Tip If the mixture feels too wet, add another tablespoon of chickpea flour to help bind the ingredients.

The mixture should look coarse and speckled with green from the fresh herbs. It should hold its shape firmly when you press a small amount together in your palm. If it feels too loose or sticky, pulse in a small amount of extra chickpea flour until the texture is ideal for shaping.

Shaping and coating

  1. Shape and coat the croquettes
Scoop portions of the mixture and shape them into 12 small cylinders with your hands. Roll each cylinder in the mix of white and black sesame seeds until they are evenly coated on all sides. Place the coated croquettes on a tray while you prepare the oil.
Look for The sesame seeds should form a uniform, dense crust around the entire surface of each cylinder.
Tip Press the seeds gently into the mixture to ensure they adhere well during the frying process.

Each croquette should be shaped into a uniform cylinder to ensure even cooking. The sesame seed coating must cover every part of the surface completely. Ensure there are no bald spots on the cylinders, as these areas will be more likely to absorb oil or break down during the frying stage.

Frying to perfection

  1. Fry until golden
Heat the sunflower oil in a heavy-bottomed pot to 370°F (188°C). Carefully drop the croquettes into the hot oil in batches. Fry for 3 minutes, turning as needed, until the sesame-studded exterior is a deep, crunchy mahogany color. Remove with a slotted spoon and drain on paper towels before serving with the lemon-garlic tahini and a dusting of sumac.
Look for The crust should be dark golden-brown and sound hollow when tapped lightly.
Tip Maintain the oil temperature consistently to ensure the croquettes crisp up without absorbing excess oil.

The oil should remain bubbling steadily around the croquettes. They are ready when they float to the surface and have reached a vibrant, dark golden-brown hue.

Once removed, they should be placed immediately on paper towels to absorb any excess oil, ensuring the crust remains perfectly crisp until the moment of service.

Common mistakes

The most common mistake is failing to remove enough moisture from the cauliflower before processing. If the mixture is too wet, the croquettes will fall apart in the oil.

Another error is overcrowding the pot during frying; this causes the oil temperature to drop rapidly, leading to greasy, soft croquettes rather than crispy ones. Always fry in small batches to ensure the oil stays at the target temperature of 370°F (188°C).

How to tell it’s done

The croquettes are done when they have achieved a deep mahogany color on the outside and sound hollow when tapped. Because all the primary ingredients are already cooked or safe to eat, the frying process is primarily focused on achieving the perfect crunchy texture and heating the interior through.

The sesame seeds should be toasted and aromatic, and the croquette should feel firm and solid when handled with a slotted spoon.
