Tips for success
For extra crisp bacon, you can spray the wrapped poppers lightly with cooking oil before air frying. This helps the bacon brown more evenly.
If you prefer a spicier kick, add a few dashes of your favorite hot sauce to the cream cheese mixture or serve with extra buffalo sauce for dipping.
To make these ahead of time, assemble the poppers and refrigerate them for up to a day before cooking.
When ready to serve, air fry them straight from the fridge, adding a couple of extra minutes to the cooking time. This makes them perfect for parties where you want to prep ahead and cook just before guests arrive.
Variations
- Extra Spicy: Add 1/2 teaspoon of cayenne pepper or a chopped fresh serrano to the filling, and use a hotter buffalo sauce. Leave some seeds in the jalapeños for an even bigger kick.
- Smoky Twist: Use smoked cheddar and add 1/2 teaspoon of smoked paprika to the filling. Smoked bacon adds another layer of smoky flavor. Serve with a smoky chipotle ranch dip.
- Cheesy Herb: Replace the cheddar with pepper jack and add 1 tablespoon of chopped fresh chives to the filling. Sprinkle with extra chopped green onions before serving.
- Low-Heat Version: Use mini sweet peppers instead of jalapeños for a milder, sweeter popper. Reduce the buffalo sauce to 1/4 cup and add an extra tablespoon of cream cheese.
Storage and make-ahead
- Fridge
- Store leftover poppers in an airtight container in the refrigerator for up to 3 days.
- Freezer
- Freeze uncooked assembled poppers in a single layer on a baking sheet, then transfer to a freezer bag for up to 2 months.
- Reheat
- Reheat refrigerated poppers in the air fryer at 350°F (175°C) for 3-5 minutes until hot and crispy.
Store any leftover poppers in an airtight container in the refrigerator for up to 3 days. They can be reheated in the air fryer at 350°F (175°C) for 3-5 minutes until hot and crispy. The bacon may lose some of its crunch upon reheating, but they'll still be delicious.
You can assemble the poppers up to 24 hours in advance and keep them covered in the refrigerator. When you're ready to cook, just pop them in the air fryer—no need to bring them to room temperature. Add 2-3 extra minutes to the cooking time if they're cold from the fridge.
Serving ideas
Serve these poppers hot out of the air fryer with a cooling buttermilk blue cheese dressing for dipping. The cool, tangy dressing perfectly complements the spicy, savory poppers.
Arrange them on a platter with extra dressing on the side and maybe some celery sticks for a classic buffalo wing vibe.
These poppers are perfect as a party appetizer, game-day snack, or even a fun dinner with a side salad.
They're best enjoyed fresh and hot, when the bacon is at its crispiest and the cheese is oozing. If you're serving a crowd, double the recipe and cook in batches to keep up with demand.

Crispy Bacon-Wrapped Buffalo Chicken Jalapeño Poppers

Ingredients
- 8 large fresh jalapeños, halved and seeded
- 200 g cooked shredded chicken
- 150 g cream cheese, softened
- 1/3 cup buffalo hot sauce
- 1 cup shredded sharp cheddar cheese
- 2 green onions, chopped
- 8-16 slices thin bacon
- 2 tbsp ranch seasoning powder
Instructions
- In a medium bowl, combine the cooked shredded chicken, softened cream cheese, buffalo hot sauce, shredded sharp cheddar cheese, chopped green onions, and ranch seasoning powder. Mix until the mixture is thick and uniform.
- Slice each jalapeño in half lengthwise. Use a spoon to scrape out the seeds and white veins, creating a clean boat for the filling.
- Mound each jalapeño half high with the buffalo chicken filling, pressing it gently to pack it in.
- Take a thin bacon slice and wrap it tightly around each stuffed jalapeño, spiraling it to cover the filling completely. Tuck the ends underneath the pepper and secure with a toothpick if needed.
- Preheat the air fryer to 400°F (200°C). Place the bacon-wrapped poppers in the air fryer basket in a single layer, leaving space between each. Cook for 15 minutes, until the bacon is ultra-crisp and the filling is bubbling.
- Remove the poppers from the air fryer and let them rest for 3 minutes. Serve hot with cool buttermilk blue cheese dressing for dipping.
