Before you start

Before you start, make sure the cream cheese is softened to room temperature for easy mixing. Cook and shred the chicken if you're not using leftovers. Preheat your air fryer to 400°F (200°C) so it's ready when you are.

Line a baking sheet with foil or parchment paper to hold the assembled poppers before cooking. Have all your ingredients measured and within reach, and set out a plate for the finished poppers. This recipe comes together quickly, so a little prep goes a long way.

Ingredients at a glance (8)
  • 8 large fresh jalapeños, halved and seeded
  • 200 g cooked shredded chicken
  • 150 g cream cheese, softened
  • 1/3 cup buffalo hot sauce
  • 1 cup shredded sharp cheddar cheese
  • 2 green onions, chopped
  • 8-16 slices thin bacon
  • 2 tbsp ranch seasoning powder

Instructions

Mix the Filling

  1. Prepare the Filling
In a medium bowl, combine the cooked shredded chicken, softened cream cheese, buffalo hot sauce, shredded sharp cheddar cheese, chopped green onions, and ranch seasoning powder. Mix until the mixture is thick and uniform.
Look for The filling should be well combined, creamy, and slightly chunky from the chicken.
Tip Make sure the cream cheese is truly softened to avoid lumps.
  2. Halve and Seed the Jalapeños
Slice each jalapeño in half lengthwise. Use a spoon to scrape out the seeds and white veins, creating a clean boat for the filling.
Look for The jalapeño halves should be clean and dry inside.
Tip Wear gloves when handling jalapeños to avoid burning your skin.

The filling should be thick, creamy, and well combined, with no streaks of cream cheese. It should hold its shape when scooped and have a rich, spicy aroma from the buffalo sauce and ranch seasoning. The jalapeños are prepped and ready, and the bacon is laid out for wrapping.

Stuff and Wrap

  1. Stuff the Jalapeño Halves
Mound each jalapeño half high with the buffalo chicken filling, pressing it gently to pack it in.
Look for Each half should be generously filled, with the filling slightly domed above the pepper.
Tip Don't overfill; leave a little room for the bacon wrap.
  2. Wrap with Bacon
Take a thin bacon slice and wrap it tightly around each stuffed jalapeño, spiraling it to cover the filling completely. Tuck the ends underneath the pepper and secure with a toothpick if needed.
Look for The bacon should cover the entire pepper and filling, with no gaps.
Tip Use thin bacon so it crisps up faster and doesn't overpower the pepper.

Each jalapeño half should be generously filled, with the filling mounded slightly above the pepper. The bacon should be wrapped tightly, covering the entire surface, with the ends tucked underneath. Toothpicks can be used to secure the ends, but they should be removed before serving.

Air Fry to Crispy

  1. Air Fry the Poppers
Preheat the air fryer to 400°F (200°C). Place the bacon-wrapped poppers in the air fryer basket in a single layer, leaving space between each. Cook for 15 minutes, until the bacon is ultra-crisp and the filling is bubbling.
Look for The bacon should be deeply golden and crisp, and the cheese filling should be visibly bubbling.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip If your air fryer is small, cook in batches to avoid overcrowding.
  2. Rest and Serve
Remove the poppers from the air fryer and let them rest for 3 minutes. Serve hot with cool buttermilk blue cheese dressing for dipping.
Look for The poppers should be slightly cooled but still warm and juicy inside.
Safe temperature 165°F (74°C) internal temperature (poultry)
Tip The rest helps the filling set slightly, making them easier to handle.

The poppers should be golden brown and the bacon should be visibly crisp, with some areas slightly darker for extra flavor.

The cheese should be bubbling and the kitchen filled with the irresistible smell of sizzling bacon and spicy buffalo. Let them rest for a few minutes before serving.

Common mistakes

One common mistake is overfilling the jalapeños, which makes it hard to wrap the bacon and can cause the filling to spill out during cooking. Another is using thick bacon, which may not crisp up fully in the air fryer.

Avoid overcrowding the air fryer basket—cook in batches if needed to ensure even browning. Finally, don't skip the resting time after cooking; it allows the filling to set slightly and prevents burns from molten cheese.

How to tell it’s done

The poppers are done when the bacon is deeply golden brown and crispy all over, and the cheese filling is visibly bubbling at the edges. The internal temperature of the chicken filling should reach 165°F (74°C) to ensure it's fully heated through.

If you're unsure, insert an instant-read thermometer into the center of a popper to check. The bacon should crackle when you press it, and the jalapeño should be tender but still hold its shape.
