Tips for success
For the crispiest result, serve the börek immediately after baking. The crust will soften as they sit, so if making ahead, reheat in a hot oven for a few minutes to restore crunch.
Use a light hand when coating with breadcrumbs—too much can make the crust heavy.
If you prefer a spicier filling, add extra red pepper flakes or a pinch of cayenne. For a milder version, omit the red pepper flakes entirely.
The rolls can be made smaller for bite-size appetizers—just adjust the baking time slightly and watch for golden color.
Variations
- Cheese and Herb: Replace the ground beef with a mixture of feta and spinach for a vegetarian version. Add chopped fresh dill or parsley to the filling for extra flavor.
- Spicy Chicken: Use ground chicken instead of beef and add a teaspoon of cumin and a pinch of cayenne to the filling. Cook the chicken thoroughly to 165°F (74°C).
- Mushroom and Walnut: Sauté finely chopped mushrooms with garlic and onion, then mix with toasted walnuts and a little cheese. This makes a hearty meatless filling.
- Lamb and Mint: Swap the beef for ground lamb and add chopped fresh mint and a pinch of cinnamon to the filling. This pairs well with a yogurt dipping sauce.

Serving ideas
Serve the börek warm as an appetizer with a side of plain yogurt or a simple tomato-cucumber salad. They also make a great party finger food—place them on a platter with toothpicks for easy grabbing.
For a main meal, pair the rolls with a fresh green salad and some crusty bread.
The crispy exterior and savory filling are satisfying on their own, but a dollop of thick yogurt adds a cool contrast. These rolls are best enjoyed fresh from the oven.

Crispy Breaded Meat Börek Rolls

Ingredients
- 300 g ground beef
- 4 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp red pepper flakes
- 2 large round yufka pastry sheets
- 1 cup shredded kaşar cheese
- 1 cup milk
- 1/2 cup vegetable oil
- 1 egg
- 1 1/2 cups crunchy breadcrumbs (galeta unu)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5–7 minutes. Season with salt, black pepper, and red pepper flakes. Transfer the beef to a plate and let cool completely.
- Lay the yufka sheets on a clean work surface. Using a sharp knife, cut each sheet into 8 uniform triangular wedges, like slicing a pizza. You will have 16 triangles total.
- Place a spoonful of the cooled beef and a pinch of shredded kaşar cheese at the wide base of each triangle. Roll each triangle tightly toward the point, forming a thick cylinder. Press the ends gently to seal.
- In a wide bowl, whisk together the milk, vegetable oil, and egg until well combined and smooth.
- Dip each rolled börek into the milk-egg wash, turning to coat all sides. Then dredge thoroughly in the crunchy breadcrumbs, pressing gently so the crumbs adhere. Place on a parchment-lined baking sheet.
- Heat the oven to 350°F (180°C). Bake the börek for 25 minutes, until deeply golden and crisp.
- Remove the börek from the oven and let rest for 5 minutes. Serve warm, whole or snapped in half to show the crispy crust and melted cheese.
