Before you start

Heat the oven to 350°F (180°C) and line a baking sheet with parchment paper. Have all ingredients measured and ready. If using yufka, keep it covered with a damp towel to prevent drying.

Cook and cool the beef filling before starting the assembly. Whisk the milk-egg wash just before dipping to ensure it's well combined.

Ingredients at a glance (11)
  • 300 g ground beef
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp red pepper flakes
  • 2 large round yufka pastry sheets
  • 1 cup shredded kaşar cheese
  • 1 cup milk
  • 1/2 cup vegetable oil
  • 1 egg
  • 1 1/2 cups crunchy breadcrumbs (galeta unu)

Instructions

Prepare the Filling and Rolls

  1. Brown the Beef Filling
Heat the olive oil in a large skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and cooked through, about 5–7 minutes. Season with salt, black pepper, and red pepper flakes. Transfer the beef to a plate and let cool completely.
Look for The beef is browned and crumbly, and the spices are fragrant.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Cool the beef before assembling to prevent the pastry from getting soggy.
  2. Cut the Yufka into Wedges
Lay the yufka sheets on a clean work surface. Using a sharp knife, cut each sheet into 8 uniform triangular wedges, like slicing a pizza. You will have 16 triangles total.
Look for The wedges are even and intact, without tears.
Tip Keep the yufka covered with a damp towel to prevent drying.
  3. Fill and Shape the Börek
Place a spoonful of the cooled beef and a pinch of shredded kaşar cheese at the wide base of each triangle. Roll each triangle tightly toward the point, forming a thick cylinder. Press the ends gently to seal.
Look for The rolls are tight and the filling is enclosed.
Tip Don't overfill—about 1 tablespoon of filling per roll works best.

The beef should be browned and fragrant, with no pink remaining. The yufka triangles should be intact and the rolls tightly shaped with filling sealed inside. The kitchen smells of toasted spices and beef.

Coat and Bake

  1. Make the Milk-Egg Wash
In a wide bowl, whisk together the milk, vegetable oil, and egg until well combined and smooth.
Look for The wash is pale yellow and uniform.
Tip Use a wide bowl so the rolls can be dipped easily.
  2. Dip and Coat the Rolls
Dip each rolled börek into the milk-egg wash, turning to coat all sides. Then dredge thoroughly in the crunchy breadcrumbs, pressing gently so the crumbs adhere. Place on a parchment-lined baking sheet.
Look for Each roll is evenly coated with breadcrumbs.
Tip Coat just before baking to keep the crust crisp.
  3. Bake the Börek
Heat the oven to 350°F (180°C). Bake the börek for 25 minutes, until deeply golden and crisp.
Look for The crust is golden brown and the rolls look crunchy.
Tip Rotate the baking sheet halfway through for even browning.

Each roll is evenly coated with breadcrumbs and arranged on the baking sheet.

The oven is heated, and the rolls bake until golden, filling the kitchen with a warm, toasty aroma. The crust looks crunchy and deep brown.

Finish and Serve

  1. Rest and Serve
Remove the börek from the oven and let rest for 5 minutes. Serve warm, whole or snapped in half to show the crispy crust and melted cheese.
Look for The cheese is melted and the rolls are hot.
Tip Resting helps the filling set slightly for easier handling.

The börek are out of the oven, resting on the sheet. The crust is crackling, and the cheese is melted inside. They are ready to be snapped in half and served warm.

Common mistakes

Overfilling the triangles can cause the rolls to burst open during baking. Keep the filling to about a tablespoon per roll. If the yufka dries out, it becomes brittle and tears easily; cover with a damp towel.

Skipping the cooling step for the beef can make the pastry soggy. Press the breadcrumbs on firmly, or they will fall off during baking.

How to tell it’s done

The börek are done when they are deeply golden brown and the crust feels crisp and firm to the touch. A gentle squeeze should produce a crackle.

If you have a thermometer, the internal temperature of the beef filling should reach 160°F (71°C) to ensure it's fully cooked. Let the rolls rest for 5 minutes before serving to allow the cheese to set slightly.

  • Ground meat: 160°F (71°C) in the thickest part
  • Egg dishes: 160°F (71°C) in the thickest part
