Tips for success
For the crispiest result, use panko breadcrumbs instead of regular breadcrumbs. They are larger and flakier, creating a more textured crust. If you only have regular breadcrumbs, you can toast them lightly in a dry skillet before using to enhance their crunch. Also, make sure the börek are completely dry before baking; any excess moisture on the surface will steam and soften the crust.
To achieve an even golden color, rotate the baking sheet halfway through the baking time. If the börek are browning too quickly on the bottom, place the baking sheet on a higher rack.
Letting the börek rest for a few minutes after baking allows the cheese to set slightly, making them easier to handle and eat. Serve them warm for the best texture, as they lose their crispness as they cool.
Variations
- Spicy Lamb Börek: Replace the ground beef with ground lamb and add a teaspoon of ground cumin and a pinch of cayenne to the seasoning. The lamb's richness pairs beautifully with the melted cheese and crispy crust.
- Vegetarian Börek: Skip the meat and use a mixture of sautéed spinach, feta cheese, and a little garlic. This version is lighter but still satisfying, with the same golden breadcrumb coating.
- Herbed Cheese Börek: Mix the kaşar cheese with chopped fresh herbs like parsley, dill, or mint before filling. The herbs add a fresh, aromatic note that complements the savory beef and crunchy crust.
- Chicken Börek: Use ground chicken instead of beef, and season with the same spices plus a teaspoon of dried oregano. Ground chicken cooks quickly and stays moist, making a lighter but equally delicious filling.

Store leftover börek in an airtight container in the refrigerator for up to 3 days. To reheat, place them on a baking sheet in a 350°F (175°C) oven for 5-7 minutes, or until heated through and crisp again.
Avoid microwaving, as this will make the crust soggy. If you have a toaster oven, that works well too. Let them cool completely before storing to prevent condensation from softening the crust.
You can assemble the börek up to a day in advance. After coating with breadcrumbs, place them on a baking sheet and refrigerate, uncovered, for up to 24 hours.
Bake as directed, adding a couple of minutes to the baking time if starting from cold. You can also freeze the unbaked börek on a baking sheet until solid, then transfer to a freezer bag. Bake from frozen, adding 5-10 minutes to the baking time.
Serving ideas
Serve the börek warm as an appetizer or snack, with a side of plain yogurt or a simple tomato-cucumber salad. They also pair wonderfully with a fresh green salad dressed with lemon and olive oil.
For a heartier meal, serve them alongside a bowl of lentil soup or a meze platter with olives, pickles, and hummus. The crunchy exterior and savory filling make them a crowd-pleaser at any gathering.
These börek are best enjoyed fresh from the oven, when the crust is at its crispiest and the cheese is gloriously melted. Arrange them on a platter and let everyone snap them in half to reveal the cheesy pull. For a party, you can cut them into smaller pieces and serve with toothpicks. They also make a great lunchbox addition, though they are best reheated to restore their crunch.

Crispy Breaded Meat Börek: Golden, Crunchy, Cheesy

Ingredients
- 300 g ground beef
- 4 tbsp olive oil
- 1 tsp red pepper flakes
- 1 tsp black pepper
- 1 tsp salt
- 2 round yufka sheets, cut into 16 triangular wedges
- 1 cup shredded kaşar cheese
- 1 cup milk
- 1/2 cup oil
- 1 egg
- 2 cups breadcrumbs
Instructions
- Heat the olive oil in a skillet over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until browned and no longer pink. Season with red pepper flakes, black pepper, and salt. Remove from the heat and let cool on a plate.
- Place the two round yufka sheets on a clean work surface. Using a sharp knife, cut each sheet into 8 triangular wedges, yielding 16 wedges total. Keep the wedges covered with a damp towel to prevent drying.
- Place a spoonful of the seasoned beef and a sprinkle of shredded kaşar cheese at the wide base of each triangle. Roll tightly toward the point, tucking in the sides as you go to enclose the filling. Repeat with all wedges.
- In a shallow bowl, whisk together the milk, oil, and egg until well combined. Place the breadcrumbs in another shallow dish.
- Dip each rolled börek into the milk mixture, allowing any excess to drip off, then roll in the breadcrumbs until evenly coated. Place the coated börek on a plate.
- Preheat the oven to 350°F (175°C). Arrange the breaded börek on a parchment-lined baking sheet, leaving space between each. Bake for 25 minutes, until deeply golden brown and crunchy.
- Remove the börek from the oven and let them rest for a few minutes on the baking sheet. Serve warm, snapping one in half to enjoy the crackle and the melted cheese pull.
