Tips for success
To get the beef extra crispy, you can increase the heat to high for the last minute of searing. But watch closely to avoid burning.
For a more authentic shawarma flavor, add a pinch of cinnamon or cardamom to the beef mixture. If you have a meat thermometer, use it to ensure the beef reaches 160°F (71°C) for food safety.
For the best texture, serve the wraps immediately after toasting. If you need to keep them warm, place them in a low oven (200°F) on a baking sheet for up to 15 minutes.
To reheat leftover wraps, toast them in a skillet or oven to restore crispiness—avoid microwaving, which makes them soggy.
Variations
- Chicken Shawarma: Replace ground beef with ground chicken or turkey. Adjust cooking time to ensure poultry reaches 165°F (74°C). The yogurt and spices work just as well with poultry.
- Spicy Harissa: Add 1-2 tablespoons of harissa paste to the garlic sauce for a spicy, smoky kick. You can also mix harissa into the beef mixture for extra heat.
- Veggie Loaded: Add sliced cucumbers, shredded lettuce, or pickled turnips for extra crunch and freshness. These additions complement the beef and garlic sauce beautifully.
- Cheesy Shawarma: Add a slice of melty cheese (like mozzarella or cheddar) to the wrap before toasting. The cheese will melt and become gooey, adding another layer of indulgence.

Serving ideas

These wraps are a complete meal on their own, but they're also great for sharing. Cut them into smaller pieces for appetizers or party platters. The combination of crispy beef, tangy pickles, and creamy garlic sauce is sure to please a crowd.

Crispy Beef Shawarma Wraps with Garlic Sauce

Ingredients
- 1 lb ground beef
- 1/4 cup plain yogurt
- 3 cloves garlic, minced
- 1 tsp ground allspice
- 1 tsp sumac
- 2 tbsp fresh parsley, chopped
- 1 tsp kosher salt
- 1/2 tsp black pepper
- 4 large pita breads
- 1/2 cup garlic sauce (toum)
- 2 tomatoes, sliced
- 1 red onion, thinly sliced and tossed with sumac
- 1/2 cup dill pickles, sliced
- 2 cups crispy french fries, cooked
Instructions
- In a bowl, combine the ground beef, yogurt, minced garlic, allspice, sumac, chopped parsley, salt, and black pepper. Mix with your hands until the mixture is uniform and cohesive. Place the seasoned beef between two large sheets of parchment paper. Use a rolling pin to roll the beef into a very thin, even sheet, about 1/8 inch thick.
- Heat a large skillet over medium-high heat. Carefully transfer the beef sheet (still on the parchment) to the skillet, then peel off the top parchment. Cook for 2-3 minutes per side until deeply browned and crispy at the edges. The beef should be cooked through and reach an internal temperature of 160°F (71°C). Transfer to a cutting board and let rest for 2 minutes.
- Using a sharp knife, slice the seared beef sheet into thin strips, about 1/2 inch wide. The strips should be crunchy on the outside and juicy inside. Set aside.
- Warm the pita breads in a dry skillet or in the oven until soft and pliable. Spread a generous layer of garlic sauce (toum) over each pita, leaving a small border at the edges.
- Evenly distribute the sliced beef over the sauce. Top with tomato slices, sumac onions, pickles, and a generous handful of crispy fries. The fillings should be piled in the center of the pita, leaving room to roll.
- Fold the bottom of the pita over the filling, then fold in the sides, and roll tightly into a thick cylinder. Press gently to seal.
- Heat a clean skillet over medium heat. Place the rolled wraps seam-side down in the skillet. Toast for 2-3 minutes per side, turning occasionally, until the pita is golden brown and shatteringly crisp on the outside. The filling should be hot and the cheese (if using) melted.
- Remove the toasted wraps from the skillet and let them cool for 1 minute. Slice each wrap diagonally in half to reveal the crispy beef and golden fries. Serve immediately with extra garlic sauce on the side.
