Before you start

Before starting the preparation, preheat the oven to 425°F (218°C) and line a large, heavy-duty baking sheet with parchment paper or a silicone baking mat to prevent sticking.

Wash the zucchini thoroughly under cold running water and dry them completely with a clean kitchen towel; any excess moisture on the skin will prevent the breading from adhering properly.

Set up a dredging station with two shallow bowls: one containing the sliced zucchini rounds, and another containing the combined parmesan and breadcrumbs.

Ingredients at a glance (4)
  • 2 medium zucchini, sliced into 1/4-inch rounds
  • 1/2 cup panko breadcrumbs
  • 1/2 cup grated parmesan cheese
  • 1 tsp fresh thyme leaves

Instructions

Preparation and Dredging

  1. Slice Zucchini
Slice the zucchini into uniform 1/4-inch rounds, ensuring each piece is of equal thickness so they bake at the exact same rate in the oven.
Look for The zucchini slices should be evenly cut and uniform.
Tip Ensure the slices are of uniform thickness so they bake at the same rate.
  2. Dredge the Zucchini Slices
Press each zucchini round firmly into the parmesan and breadcrumb mixture, coating both sides completely and using the natural moisture of the fresh zucchini to help the dry mixture adhere.
Look for Each round should have a complete, thick layer of the breading mixture.
Tip Press firmly so the cheese and breadcrumbs stick to the cut surfaces of the zucchini.

The zucchini slices should be completely and evenly coated with the parmesan and breadcrumb mixture, with no bare spots visible. The breading should feel dry and adhere firmly to the damp slices, and the dredging station should be clean and organized before you begin transferring the coated rounds to the baking sheet.

High-Heat Baking

  1. Bake Until Crispy
Arrange the coated zucchini slices in a single layer on the prepared baking sheet, leaving space between each round, and bake at 425°F (218°C) for 15 to 20 minutes until the coating is bubbling and golden-brown.
Look for The coating must be bubbling and golden-brown with a firm texture.
Tip Do not crowd the pan, as this causes the zucchini to steam rather than crisp.

At the end of the baking cycle, the cheese should be bubbling and the breadcrumbs should have turned a deep, golden-brown color. The zucchini rounds will look slightly puffed, and the kitchen will be filled with the rich, nutty aroma of toasted parmesan cheese.

Garnish and Cool

  1. Garnish and Cool
Remove the baking sheet from the oven, immediately dust the hot zucchini rounds with fresh thyme leaves, and transfer them to a wire rack to cool for 2 minutes before serving.
Look for The thyme should release its aroma as it hits the hot cheese.
Tip Cooling on a wire rack prevents the bottoms from becoming soggy.

The finished zucchini crisps should be resting on a wire rack or serving plate, dusted with fresh thyme leaves. They should feel firm and rigid when lifted with tongs, indicating they have set properly during the brief cooling period, and they should emit a distinct, satisfying crunch when broken in half.

Common mistakes

One common mistake is slicing the zucchini too thick or too thin; slices should be exactly 1/4-inch thick to ensure they cook through at the same rate the coating crisps. Another frequent error is crowding the baking sheet, which traps steam between the slices and results in soggy, limp rounds instead of crispy chips.

Always space the rounds at least half an inch apart. Lastly, avoid using pre-grated parmesan from a shaker bottle, as it contains anti-caking agents that prevent the cheese from melting and criticising properly.

How to tell it’s done

The zucchini crisps are fully cooked and ready to enjoy when the exterior coating is deeply golden, bubbling, and completely dry to the touch. The zucchini inside should be tender when pierced with a toothpick but still hold its circular shape without collapsing or turning mushy.

Allow them to rest for two minutes on the baking sheet after removing them from the oven; this brief cooling period lets the melted cheese solidify into a rigid, crunchy shell.
