Tips for success
For the crispiest fish, make sure the oil is at the correct temperature before adding the fish. If the oil is too hot, the outside will brown too quickly and the inside may be undercooked.
If it's not hot enough, the fish will absorb oil and become greasy. Use a deep-fry thermometer for accuracy. Also, don't overmix the batter—lumps are fine, and overmixing can develop gluten, making the crust tough.
To keep the fish crispy while you fry the remaining batches, place the cooked fish on a wire rack set over a baking sheet in a low oven (200°F). This allows air to circulate around the fish, keeping the crust crisp.
If you stack the fish, it will steam and become soggy. Serve the tacos immediately after assembling, as the slaw and crema can soften the crispy fish over time.
Variations
- Spicy Mango Habanero Slaw: Add finely minced habanero pepper to the mango slaw for a fiery kick. Start with a teaspoon and add more to taste. The heat from the habanero pairs beautifully with the sweet mango and creamy chipotle crema.
- Grilled Fish Tacos: Skip the frying and grill the fish instead. Brush the fish strips with olive oil and season with chili powder, salt, and pepper. Grill over medium-high heat for 3-4 minutes per side, until cooked through. Serve with the same slaw and crema.
- Shrimp Baja Tacos: Substitute large shrimp for the fish. Peel and devein the shrimp, then coat in the same beer batter and fry for 2-3 minutes until golden and cooked through. The shrimp cook faster than fish, so watch them closely.
- Avocado Crema Variation: For a greener, creamier sauce, blend half an avocado with the sour cream, lime juice, and garlic. Omit the chipotle pepper for a milder flavor, or keep it for a smoky avocado crema. This adds extra richness and a beautiful color.
Storage and make-ahead
- Fridge
- Store leftover fish, slaw, crema, and tortillas separately in airtight containers in the refrigerator for up to 2 days.
- Freezer
- Fried fish can be frozen in a single layer on a baking sheet, then transferred to a freezer bag for up to 1 month. Reheat in a 375°F oven until hot and crisp.
- Reheat
- Reheat fried fish on a baking sheet in a 375°F oven for 5-7 minutes, or until heated through and crisp. Warm tortillas in a dry skillet or microwave.
Leftover fried fish can be stored in an airtight container in the refrigerator for up to 2 days. However, the batter will lose its crispness upon reheating. To reheat, place the fish on a baking sheet in a 375°F oven for 5-7 minutes, or until heated through and crisp.
The mango slaw and chipotle crema can be stored separately in the refrigerator for up to 3 days. The tortillas can be wrapped in foil and reheated in the oven or microwave.
The chipotle crema and mango slaw can be made up to 1 day in advance and stored in the refrigerator. The beer batter should be made just before frying, as the carbonation dissipates over time.
You can also prep the fish strips and keep them chilled until ready to coat and fry. Warm the tortillas just before serving. This makes the recipe perfect for entertaining, as you can have all the components ready and simply fry the fish at the last minute.
Serving ideas
Serve the tacos immediately after assembling, while the fish is still crispy and the tortillas are warm. Arrange them on a platter with lime wedges on the side for squeezing over the top. For a complete meal, serve with Mexican rice, black beans, or a simple side of grilled corn. The tacos are also great on their own as a satisfying dinner or lunch.
For a festive presentation, set up a taco bar with the fried fish, warm tortillas, mango slaw, chipotle crema, and extra lime wedges. Let everyone build their own tacos, customizing the amount of crema and slaw to their liking. This is a fun and interactive way to serve dinner to a group. Pair with a cold Mexican beer or a citrusy agua fresca to complete the beachside vibe.

Crispy Baja Fish Tacos with Chipotle Crema & Mango Slaw

Ingredients
- 1 lb firm white fish fillets (cod or mahi mahi), sliced into strips
- 1 cup all-purpose flour
- 1/2 cup cornstarch
- 1 tsp baking powder
- 1 tsp chili powder
- 1 cup cold Mexican beer (such as lager)
- Neutral oil for frying (such as canola or vegetable), to taste
- 8 warm corn tortillas
- 1/2 cup sour cream
- 1 chipotle pepper in adobo sauce
- 1 tbsp fresh lime juice
- 1 clove garlic, minced
- 2 cups shredded cabbage
- 1 cup diced ripe mango
Instructions
- In a blender or food processor, combine the sour cream, chipotle pepper, lime juice, and minced garlic. Blend until smooth and creamy. Transfer to a bowl and set aside. In a separate bowl, toss the shredded cabbage with the diced mango. Set aside.
- In a large bowl, whisk together the flour, cornstarch, baking powder, and chili powder. Pour in the cold beer and whisk until the batter is smooth and free of lumps. The batter should be thin enough to coat a spoon but thick enough to cling to the fish.
- Pour about 2 inches of neutral oil into a large heavy-bottomed pot. Heat over medium-high until a deep-fry thermometer registers 350°F (175°C). While the oil heats, pat the fish strips dry with paper towels.
- Dip each fish strip into the batter, allowing any excess to drip off. Carefully lower the coated fish into the hot oil. Fry in batches, without crowding, for about 4 minutes per batch, turning once, until golden amber and cooked through. The internal temperature of the fish should reach 145°F (63°C).
- Using tongs, transfer the fried fish strips to a paper-towel-lined plate to drain any excess oil. Season lightly with salt if desired. Keep warm while frying the remaining batches.
- Heat a dry skillet or griddle over medium-high heat. Warm the corn tortillas one at a time for about 30 seconds per side, until pliable and lightly charred in spots. Wrap in a clean kitchen towel to keep warm.
- Place a piece of fried fish on each warm tortilla. Top with a generous spoonful of the mango slaw. Drizzle the chipotle crema over the top in zigzag lines. Serve immediately with lime wedges if desired.
