Before you start

Before beginning, gather all ingredients and ensure the ground beef is at room temperature for about 20 minutes before cooking. Preheat the oven to 375°F (190°C) and prepare the muffin tin by lightly greasing it if necessary to prevent sticking. Have a knife and cutting board ready for dicing the pickles.

Ensure that the bacon is already cooked and crumbled to speed up the final assembly process. Organize the workspace so that the skillet and muffin tin are accessible, allowing for a seamless transition between preparing the beef and filling the tortilla cups.

Ingredients at a glance (5)
  • 6 large flour tortillas, cut into rounds
  • 1 lb ground beef
  • 1 1/2 cups shredded cheddar cheese
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup diced pickles

Instructions

Baking the shells

  1. Prepare the tortilla cups
Preheat the oven to 375°F (190°C). Cut the flour tortillas into smaller circles using a round cutter or glass. Press the tortilla circles into the cups of a muffin tin to create small shell shapes. Bake for 8 minutes until lightly golden and firm.
Look for Tortillas are golden and hold their shape.
Tip Ensure the tortillas are pressed firmly into the muffin tin wells.

The tortilla shells should be golden brown and stiff to the touch. They must hold their shape when removed from the muffin tin. If they appear soft or pale, continue baking for an additional minute or two, as a firm base is crucial for holding the heavy, savory filling without collapsing or becoming soggy during the final melting stage.

Preparing the meat

  1. Cook the ground beef
In a skillet over medium-high heat, cook the ground beef until it is fully browned and no longer pink. Ensure the beef reaches an internal temperature of 160°F (71°C) to be safe. Drain excess grease from the skillet before assembling the cups.
Look for Beef is browned and reaches the safe internal temperature.
Safe temperature 160°F (71°C) internal temperature (ground meat)
Tip Break the beef into small crumbles as it cooks for even distribution.

The ground beef should be cooked through, showing a deep brown color and a crumbly texture. Ensure all moisture has evaporated and the fat is drained away. The beef should be aromatic and well-seasoned. If the beef looks grey or has excess liquid, continue cooking until the liquid evaporates, as this ensures the beef remains flavorful and the cups stay crisp.

Final assembly

  1. Assemble and melt
Fill each baked tortilla cup with the cooked ground beef. Top generously with shredded cheddar cheese and bacon crumbles. Place the muffin tin back into the oven for 5 minutes until the cheese is bubbling and melted. Remove from the oven, garnish with diced pickles, and serve warm.
Look for Cheese is melted and bubbling.
Tip Add the pickles after baking to maintain their crunch.

The cheese should be completely melted and bubbling across the surface of each cup. The bacon crumbles should be well-incorporated into the melted cheese, and the entire cup should feel warm and look inviting.

Ensure the cups are stable on the tray before adding the finishing touch of diced pickles, which should look fresh and vibrant against the melted cheddar.

Common mistakes

A common mistake is overcrowding the muffin tin with too large tortilla circles, which can lead to soggy edges that do not crisp properly. Ensure the circles are sized correctly for the wells.

Another error is failing to drain the ground beef thoroughly after browning; excess grease will pool at the bottom of the tortilla cups, making them greasy instead of crispy. Finally, avoid adding the pickles before baking, as the heat will cause them to lose their fresh crunch and change their flavor profile significantly.

How to tell it’s done

The ground beef is fully cooked when it reaches an internal temperature of 160°F (71°C), which is the standard safety requirement for ground meat. Visually, the beef should be uniformly browned with no pink remaining.

Once assembled with cheese and bacon, the cups are finished when the cheese is completely melted, bubbling, and slightly golden on top. The tortilla edges should appear crisp and golden brown, indicating they are ready to be removed from the oven for serving.
